China Poblano is one of my favorite restaurants in The Cosmopolitan because it’s chill with really good food and drinks. It’s also a José Andrés spot, and unlike his other restaurants this is the only location, so I was excited to give it a try.
I kept it simple with an Oaxacan Old Fashioned, which blew my tiny mind, and then I got some chips and salsa (the leftovers I took back to the room so M could try them) and a lovely bowl of chicken dan dan noodles, which felt totally reasonable at $15.88 even though it’s not a huge portion. (Vegas totally distorts your sense of proportion on these things when you’re there.) 
This is such a chill place to hang out to get some lunch or dinner at The Cosmo, and it’s cool because if you sit at one of the bars, you can either watch them making the Chinese dishes or the Mexican dishes, which is pretty neat! I always think back to Top Chef season 11 when Shirley Chung who was working here at the time, and now I understand how she did so well not only in this season, but then a few years later when she had her own restaurant.

Will, breathing heavily, drops the awkwardly-shaped brown bag on the doorstep. It thumps down with a crinkle.
He knocks on the door. A long enough amount of time passes that Will has to consider the possibility that the man isn’t at home despite the lights in the windows when the door opens. Dr. Hannibal Lecter is backlit in the doorway, wearing an apron and wiping his hands on a dish towel. He blinks at Will in surprise.
“Will.”
Will lifts the bag. “Human torso,” he says.
Hannibal pauses.
“I may have been distracted submitting the order,” he says. “I meant pig belly.”
“So you don’t want it?”
“That’s not what I said.”
Hannibal steps aside, gesturing Will into his house. Will shakes his head.
“I’m just here to deliver the—”
“You’re in time for dinner,” Hannibal interrupts blithely, and before Will knows it he’s in Hannibal’s house and Hannibal is closing the door behind him.
“Mapo tofu,” Hannibal says as he leads Will down the hallway to the kitchen, “a classic dish from the Sichuan province of China, known for its tingly-numbing style of spice. Braised oxtail and fried tofu with spicy fragrant Sichuan sauce, scallions, and teardrop peppers.”
Will barely has time to process the ornate, flowery wallpaper and the actual oil paintings hanging up before Hannibal is taking the bag of torso from him and shoving dishes into his hands and going, “Can you set the table, please, Will?”
Will looks down at the plates and does so.
Will feels the warm weight of Hannibal’s regard for the entire meal, heavy enough that he’s shifting uncomfortably in his seat by the end.
“Um.” He clears his throat and stands, gathers his dishes. “Thank you for dinner, Dr. Lecter.”
Hannibal says, “Will you stay?” so softly and earnestly that all the air leaves Will’s lungs.
He drops back into his seat.
“Dr. Lecter.”
“Have you ever prepared human torso? I can show you.” Still that same soft, seductive tone. “The meat is sweet and unlike anything else.”
Will swallows, hovering. “I…”
“Consider it a thank you for the delivery.” Warm, coaxing. “It couldn’t have been easy.”
It wasn’t. Under the table, Will picks at the blood under his fingernails.
“Fine,” he says.

@chinapoblano does a Tuesday and Wednesday takeout special where 5 carnitas tacos for $25. They are filled up with meat and tortillas were fluffy. It was a bit oily but the onions and cilantro helped cut the fattiness. The Mexican Hat Dance (or Jarabe Tapatio), which is Mexico's National Dance, is a courtship dance that originated from the state of Jalisco. During the dance a man tosses his sombrero on the floor in front of a woman. If she accepted him, she danced on the hat's wide brim. The dance is performed during fiestas and celebrations such as Carnival.  
The woman would wear this colorful outfit called China Poblana!  The colors--green, red and white--represent the colors of the Mexican flag. If you look closely at the sequin design, you can see Mexico's national symbol: an eagle standing on a cactus with a snake in its talons.

April 2022 • We ate lunch at China Poblano in Las Vegas at the MGM Grand. We sampled two flights of tequila that were delicious and surprisingly smooth! Not pictured, my partner ate the huevos rancheros which came on tostadas and I ate the 18 monk noodles that had mushrooms and celery amongst other veggies that came with some thick ass noodles.

I am overwhelmed by the urge to Learn about chilli peppers of all kinds like, there’s cayenne powder. paprika powder. Indian chilli powder. gochugaru. crushed red pepper. And you’re telling me there’s more variety of peppers???
Apparently knowing the scientific classification of peppers don’t help much, bc they’re basically all C. annuums. Bell pepper, cayenne, jalapeño, poblano, they’re all a cultivar of the C. annuum species. Some spicier ones such as habanero and tabasco fall under C. chinense (a misnomer in the same vein as Columbus calling native Americans Indians, apparently. The peppers came to China thru the Portuguese but it has become so widespread and widely used that the scientists thought it was native to China!) and C. frutescens
Some peppers
Bell peppers 0 SHU (from Szeged! Only one in the genus that does not produce capsaicin)
Banana peppers 0-50 SHU
Shishito peppers 50-200 SHU
Anaheim peppers 500–2,500 SHU. (U can make Chile relleno with this)
Poblano peppers 1,000–2,000 SHU (When harvested early and dried, it is referred to as an ancho, When fully mature and dried, it is referred to as a mulato)
Korean green peppers 1,500 SHU
Jalapeño peppers 2,500–8,000 SHU (A smoke-dried ripe jalapeño is referred to as a chipotle)
Cheongyang peppers 10,000 SHU (result of hybridizing local Jejudo chilli with Thai chilli)
Serrano peppers 10,000–23,000 SHU
Indian green chili (hari mirch = green chili, literally. Refers to different kinds of green chilis) most common is Jwala chili, clocking around 20,000–30,000 SHU
Cayenne peppers 30,000–50,000 SHU (transported by the Portuguese to China and India!)
Thai peppers 50,000–100,000 SHU
Habanero peppers 100,000–350,000 SHU (Disseminated to China over 500 years ago by Spanish and Portuguese explorers)
Spices
Paprika (Édes): made from bell pepper varieties! Not spicy at all, mostly for garnish, or if ur Hungarian putting cupfuls of it in your chicken to make csirke paprikas. I remember my Hungarian teacher telling me about Csípős and Erős and I think the latter is the spiciest? I think there’s also Félédes which means half-sweet. But the mystery remains as to what blends of peppers are used for the other types of Hungarian paprika
Paprika (Spanish): bro apparently these are smokier bc they’re smoke dried alongside tobacco leaves…. From La Vera peppers. Similarly to Hungarian paprika, we got dulce, agridulce, and picante. It is said that dulce and édes paprika can be interchangeable, but if you’re making a paella you might want to use the Spanish variety for the smokiness and if you’re making Hungarian gulyas then you’d use the Hungarian paprika. Essentially, just use the powder made for that country, which. I think is true of all these peppers in the list I guess lol
Cayenne: made from cayenne peppers, duh.
Gochugaru: different types based on how fine the powder is. Coarse gochugaru is mostly for making kimchis, any spicy dishes that would benefit from having visible pepper flakes. Fine gochugaru is for making gochujang or any salted/pickled seafood. Fine powder def imparts more flavor so if ur making tteokbokki u don’t have to put gochujang if u use fine gochugaru
Chili powder (Indian): made from a blend of peppers including round peppers and long peppers and Kashmiri peppers. The Kashmiri red peppers are bred specifically for the color and isn’t too hot. Some say you can substitute kashimiri chili powder with gochugaru tho I would love to taste test to see how similar they are
crushed red pepper (or red pepper flakes): typically made from three or four different chilies like Cayenne, bell, and ancho peppers. these are manufactured usually in India and China apparently!
Then what is the chili powder I get when I walk into an American grocery store. What’s in the Tex Mex chilli powder? What is it!!!! What pepper is it made of! Or is this pursuit of tracking down the exact cultivar futile since they’re all just ‘a blend of about 97 different peppers’
I will stop here for now but my enquiry might continue…… might fuck around and learn about the spice trade altogether I guess
