Vignarola is a typical spring Roman recipes, here’s my take with a steamed “Vignarolo Dumpling” - part of the spring collection of @ottimomassimo “virtual menus” 😉 It’s a gluten free + plant based basket enclosing a mix of typical spring veggies (artichokes, fava beans, green peas...). A bit challenging to make but in the end very satisfying 😋 you just keep munching it one after another one... They are so good, in all modesty 😉 • “It is more fun to talk with someone who doesn't use long, difficult words but rather short, easy words like "What about lunch?” 🔅A. A. Milne, Winnie-the-Pooh 🔅 “È più divertente parlare con qualcuno che non usa parole lunghe e difficili, ma che piuttosto usa parole corte e semplici, come “Cosa c’è per pranzo?” • “Ravioletto Vignarolo” al vapore, un mio stuzzicante omaggio alla cucina romana, parte della “collezione primavera” dei menù virtuali di @ottimomassimo“. È un cestino senza glutine + a base vegetale che racchiude un mix di verdure tipiche di primavera (carciofi, fave, piselli ...). Un po’ impegnativo da realizzare ma alla fine molto soddisfacente 😋 continui a mangiarne uno dopo l'altro...
