So what is the difference between Kaldereta, Afritada, Mechado, and Menudo? First, what is usually the same?
4 basic ingredients connect the four stews: tomatoes and/or tomato sauce, potatoes, carrots, and bell peppers. Though potatoes and tomato sauce are the most common denominators.
Also, the four dishes have Spanish colonial influence, from the names, ingredients, to the methods of cooking. Mechado has roots in the “mecha” or “wick” of fat used to make tough beef succulent, though the method is used less and less nowadays. Menudo might be from the Spanish word for tiny, but the dish brought over due to colonization might have been a Mexican Menudo.
There are also many other tomato-based dishes such as Pochero, Escabeche, and even Filipino Spaghetti. These stews are so rich in flavor, even vegetable or vegan recipes abound.
And though the debates continue, it means that cooks and chefs are making their own renditions. Together we make these uniquely Filipino stews better and better… and always best for the times, for friends, family, and festivity.

My mom was often called “Doña”, maybe because she was the “Manang” of the family, living her best life abroad.
It was nice to dine at the latest Filipino restaurant opened by London’s own Maginhawa Group: Donia Restaurant.

i do not hate carrots i just wont eat them if there’s something else. the last time i willingly ate some was when i was visiting home and i forgot to buy potatoes for the kaldereta my mother was making, so she just put a fuck ton of carrots there and sent me back with a massive container of carrot-only kaldereta

[Last Twilight] What pisses me off was that episodes 10 and 11 were salvageable— the opportunity was staring showrunners in their FACE
Sure, the conclusion of episode ten was rushed, but that, in my opinion could have been saved by a in-depth dive into the weaknesses of that episode in episode 11.
As much as I hate to see Day grieve the loss of his eyesight all over again, the failed eye surgery could have been a trigger for the mom to 👏get 👏her👏act👏together. With Day being blind with no guaranteed solution, she will have to face the following:
1. There is no going back to the past that she is grieving and she can only now move forward
2. She needs to accept the facts if she wants her family to stay together (address her prejudice against Night— bro that beef stew was just beef stew. No serving of kaldereta can be a stand-in for actual commitment. Give me concrete, long-term action!)
Instead of focusing on the plot where Mhok and Day go to Songkhla, the more logical and thematically sound approach would be to address the loose ends in episode ten, and then gradually introduce Mhok’s struggle with separating caretaker and boyfriend towards the end of the episode. With this pacing, viewers can better understand why things happened as they happened and wouldn’t feel like they’re left hanging and confused after episode 10. Maybe Last Twilight could have been better paced with either one more episode or cutting down on unnecessary interactions and actually addressing the plot.
Last Twilight was bold, introducing plot points that go beyond Mhok and Day’s romance, but this boldness should have a follow-through or else it will just fall together into one incoherent pile.

Menudo was a Puerto Rican boy band which had hit songs in the country, including "I'm going back to the Philippines." They share a name with a hit dish, Menudo, which is made with pork liver cut into small pieces, and cuts of pork meat in tomato sauce.
The name Menudo might have come from the Spanish word for tiny: diminuto. But the dish might have roots in a traditional Mexican soup called Menudo that uses tripe and dried maize.
Like other tomato-based Filipino stews, many Menudo recipes include potatoes, carrots, and bell peppers, which gives it a common vegetable base with Kaldereta, Afritada, Mechado, and Pochero.
Unlike Menudo the band, Menudo the dish doesn’t contain Ricky Martin (who was part of Menudo in the 80’s when he was a teenager).
