מפריחים מחדש את כרמי ההרים הנטושים של קפריסין לפני כמה שנים, חזה ג'ורג' קסיאנוס, כתב של cyprus-mail, שתגיע תחייה מחודשת של כרמים הפונים צפונה. מאז, כמה יקבים אכן עושים זאת. הם מחיים מחדש את מורשת הכרם ונוטעים גפנים חדשות. אזור היין המוגן גאוגרפית של ניקוסיה הוא הפנינה הסמויה של יינות קפריסין. בלבו של עמק מרתשא Marathasa valley, סמוך לכפר קאלופניוטיס Kalopanayiotis, היקב המקומי סוף סוף פתוח לקהל הרחב ומשגשג. חלומו של ג'ון פפדורי הפך למציאות. מנכד של סוחר יין לילד שרסק ענבים, ועד ליזם יקב שזכה בפרס אדריכלי, הוא וצוותו ממוקדים כעת בייצור יין קפריסאי איכותי. אהבתו למרתשא בולטת בכל לבנה של היקב. זו האהבה שמילאה אותו בהשראה לשתול מחדש כרמים נטושים סביב כפר ילדותו קאלופניוטיס. נדמה כעת שהעמק סוער שוב עם חזרת החיים לקהילות. הכרמים המקיפים את היקב גדלים בגובה רב של עד 1,125 מטרים, נשתלים על מדרונות סלעיים תלולים בין צמחיית הרים מקומית-ייחודית ועצים. העמק נקרא בעבר "מיריאנתוסה", שמשמעו; "ריבוי פרחים". מגוון הצמחיה, הגובה הרב והתערובת של חרסית, אבן גיר וקרקע וולקנית- ארוגים בגפנים ולאחר מכן- גם ביין. הזן המקומי-הייחודי, 'שיניסטרי' Xynisteri הוא הענב השולט, והמתאים ביותר לאקלים המקומי. הזן הלבן הילידי הנוסף הוא ה'פרומרה' Promara הנשכח, עבה-קליפה ובשרי, שמייצר יינות הטובים מאד ליישון, אך מהווה רק 1% מהכרמים. היקב גם מייצר סוביניון בלאן ואת היווניים מוסקופילרו ואסירטיקו. בקטגוריית האדומים, 'סירה' הוא הזן הבינלאומי העיקרי בכמויות גדולות. הופקה גם כמות קטנה ראשונית של הזן הילידי המבטיח 'יאנודי'. יש גם 'זינפנדל', 'גרנאש' ו'מטארו' בכמויות קטנות יותר - עם הבטחה לטעימות מרגשות בעתיד. היקב משלב טכנולוגיה מודרנית בשילוב אנושי המונהג ע"י ויקטורס פינופולוס, שייצר יינות ברחבי העולם וטועם את יינות מרתשא ללא הרף. כחלק מהפרויקט החדש, הוא גם מבקר בחלקות הכרם לאורך היום על מנת להבין כיצד הגפנים מגיבות לתנאים משתנים. לאחר סיור ביקב המרשים, מבקרים יכולים ליהנות מטעימה מקצועית, או מסיור 4X4 בכרמים. במסעדה ניתן ליהנות מארוחות צהריים המלוות ביינות מרתשא. The small Vyzakia dam overflowed on Monday, becoming the third dam in the Nicosia district and the ninth islandwide to fill after one of the wettest winters in recent memory.

All three dams in the Nicosia district — Vyzakia, Xyliatos and Kalopanayiotis are now full.
