I stopped at @koonthaikitchen for lunch today since it’s close to the hospital; they have a great lunch special (I got the panang curry); but the star was really the chicken satay appetizer. 𝙂𝙞𝙛𝙩𝙚𝙙 🇹🇭 I had wanted to try out @rosasthaicafe for a while after seeing everyone’s photos because it looked great, and I was not disappointed! I really enjoyed the food here. There’s a great selection of small plates which are then followed up by an even bigger selection of curries and noodles. With the small plates we went for the crispy prawns, which are served with a sweet chilli sauce, the honey marinated pork skewers, which comes with a BEAUTIFUL tamarind sauce, the sticky tamarind chicken wings, which had a perfectly crispy skin, and the champion chicken with sriracha sauce. For the curries we had the beef panang, which is a red paste curry and has a thicker consistency, and the chicken massaman, which was DELICIOUS, and definitely the best dish of the night. Their cocktails are really good too! You have to get Rosas Boozy Thai Iced Tea, and also Thai & Stop Me, which is close to a Mai Thai. Panang Curry - Keep reading for recipe.

Serves: 5-6. Time: 30 minutes.

Ingredients: 

1 lb of pork, thinly sliced. I used a cut of pork chop that has a bit of fat for extra deliciousness :)

1 container of firm tofu, sliced into ½ inch thick rectangles.

1 green pepper, thinly sliced.

4 oz panang curry paste. I used a small can of Maesri’s panang curry paste.

2 tablespoons vegetable oil.

2 13.5 oz cans of coconut milk.

3 tablespoons fish sauce.

2 tablespoons brown sugar.

2 tablespoons mushroom seasoning. I used Po Lo Ku All Natural Mushroom Seasoning.

Large handful of Thai basil.

1 lime - zest and juice.

2 Thai chili peppers, sliced.

Directions: 

Air fry the tofu at 350F for 15 mins or slightly fry on the stovetop. The goal is to get the outside a bit crunchy/firmer so it’s harder to break up when you toss it into the curry. 

As you’re waiting on the tofu, you can start on the curry paste and pork. In a large pan or wok, heat up oil and panang curry paste, and stir. Once thoroughly heated, toss in the pork to brown (~2-3 minutes). 

Stir in the coconut milk, fish sauce, brown sugar, mushroom seasoning, and bring to a boil. 

Reduce to a simmer and toss in the Thai basil, green peppers, tofu, and Thai chili peppers. Simmer and stir occasionally. As it’s simmering, add in the lime zest and lime juice. Simmer for about 5 minutes. 

Serve with rice!
