Smoked Haddock + Spinach Gratin 😍 As a fish fanatic I am always trying out new recipes and this one is an absolute winner in my eyes so delicious and comforting. You have to try it. Smoked haddock combined with spinach, cheese and Greek yoghurt is just unreal! 👉🏻Place spinach in a colander and pour over hot water until wilted. Squeeze out excess water. Then season with salt and pepper. Add a squeeze of lemon, Greek yoghurt, basil and cheese. Put mixture into a buttered oven dish. Fry red onion, courgette and tomatoes in rosemary and garlic for a few minutes and pour on top of the spinach. Lay the smoked haddock on top. Then mix some more Greek yoghurt with cheese and parsley and pour onto your fish then season. Bake for 30 minutes and serve.
