I'm considering letting my lil rattos paint for enrichment, but I'm worried I'll do it wrong and endanger them. What's your setup process? Just little bloops of paint on a canvas for them to shove around? Or is it in a dish or something and they stick their foot in and paint that way?

Like you said really, a couple bloops on the canvas and i guide them around with a wet treat that they enjoy. I’d recommend setting up a little area for them though because my rat crumpet has a habit of trailing paint everywhere before i can wipe her feet. I’d also recommend trying it with your most relaxed rat first. If you’re worried about the rats trying to eat paint or that they may not enjoy having paint on their feet then you could cover the canvas with some plastic and let them walk over that instead - just make sure you use non-toxic paint and have paper towels to hand cause rats can be messy lol.
