I actually really love this moment. You see, normally when Hannibal is threatened somehow or exposed, he simply erases that obstacle. We see him go for the scalpel when Jack Crawford first visits him. Its a subtle defense he keeps close at hand.

However, he realizes, as he touches the scalpel, that he cannot do that with Will. It's a quiet moment where he makes the decision to risk himself rather than lose Will.

hilarious that hannibal's first thought when arguing with will is "i should just stab him..."
