someone with ocd here: the "obsessions" erika has that you listed aren't what ocd obsessions are..?? obsessions are intrusive, unwanted thoughts...
OCD includes obsessive thoughts and compulsive behavior! The intrusive thoughts, however, do fall under obsessive thoughts.

Why you like Erika?
Oh man, where do I even begin? Under read more because this sort of ended up becoming a character analysis
From what we observe in Umineko, Erika is the type of character who always pursues what she wants. Although she often pursues her objectives relentlessly, the point is that she’s always pushing herself to achieve more. However she is no perfect angel, she’s incredibly fractured, which is what makes her such an interesting and, at times, a relatable character.
One thing I've noticed is that she suffers from multiple personality disorders. I suffer from a few of the disorders I've diagnosed her with so maybe that's one of the main reasons I like her? Though, thankfully, I'm not as extreme as she is.
Obsessive Compulsive Disorder
Usually compulsive disorder relates to actions, numbers or objects etc etc.
In Erika's case, she has multiple obsessions. Chopsticks, duct tape, finding the 'truth'...but the most unhealthy one is regarding Bernkastel.
Despite how emotionally/physically abusive, degrading and untrustworthy Bernkastel is towards her, Erika's main motivation for almost every one of her actions is to impress and please her. She does whatever she asks all for the sake of pleasing her and earning her "affection". One can argue that she's only doing so to not be cast away to Oblivion, but the fact that she’s still around her even after the events of episode 8 (and her small jealousy towards Lambda) points otherwise.
Histrionic Disorder
All the classic signs of histrionic personality disorder. Erika's actions and words are often inappropriately and uncalled for completely and has a habit of making every situation about her. The narrative even shows this, pointing out each time Erika demanded for the Ushiromiya to listen to her opinion and theories.
Antisocial
Erika also has the basic trademarks of antisocial disorder; disregard for human life, inability to understand other's emotions and no sense of regret for wrongdoings. She is continually unapologetic and unsympathetic.
You have to remember, Erika was only featured in 3 of the 8 Umineko VN's and yet we have so much information and tidbits about her that leaves us wanting more. Where did her obsession with chopsticks come from? How was her life before the events in Umineko? Did Bernkastel change her appearance to look like her? And, if so, how did she look before? etc. She’s a personification of human extremes; drawing us into our deepest lows and highest highs. Furthermore she's a good example that female characters do not have to be perfect pictures or strength or virtue to be great, her wavering conscience and impulsive whims are part of what makes her so human. Though, to be honest, that can be regarding all the female characters in Umineko.
Erika is the perfect mix of Sherlock Holmes, Harley Quinn, and Regina George. I hope Ryukishi one day includes her in another of his works.
