the funniest dynamc between my boyfriend and i is the chef/baker divide runs so deep. experimentally my boyfriend is a genius with figuring out what flavor profiles will not just taste good together but also will be enjoyed by the specific audience he is cooking for. a recipe is not a guidebook so much as a suggestion and he will frankenstein ideas together to get exactly what he wants to happen. he also didnt know that sugar will not work properly if you dont mix it with the wet ingredients in banana bread and when i asked 'why didnt you do it in the order of the recipe' he said 'i didnt really think it mattered'. autistically i exploded his head in my mind

#my greatest superpower is knowing when to not follow a recipe #if you ask for my cooking recipes they don’t exist #they’re recipes online that I’ve changed every single step to #I still reference even though I use none of the original recipe #meanwhile I only had half the sugar I needed for the coffee cake I just made #I almost cried when I had to improvise a baking solution

Genuinely, I don’t know how else to get the word out, but I feel like if your home-cooked dinners don’t taste right, you're missing either paprika, sugar, butter, or chicken bouillon.

#also #if your sambar doesn’t taste right #did you actually use the spices called for? or did you skip asafoetida because it’s hard to find #and surely it’s not *that* important #if you’re trying to recreate flavors from cultures you’re not super familiar with #actually pay attention to what’s called for #people don’t generally add specialized and hard to find flavors because it’s fun #they’re hard to find for us too!! #they’re just also absolutely essential to getting the thing to taste right

#I’ve been using Firefox for over a year now #occasionally something refuses to run right on it #usually do to pop up blockers or ad blockers #or some other add on im using to make my internet experience better #and then I have to open that thing in chrome #and sometimes I notice my computer is running slower than usual #and without fail every single time I realize chrome is running in the background #I close chrome and my computer gets noticeably faster #like this isn’t a tiny measurable only if you’re looking at the raw numbers difference #its immediate and easily noticeable to the average user #switch to Firefox—it’s easy!! #it takes 5 minutes!! and it’ll save you that in load time within the day.
