#Repost @distinguishedbeans with @get_repost ・・・ 🍫❤️ this week for Red: the Brazil Catongo 70% bar from @elbuencacao has a striking color - much lighter than other bars of the same percentage (shown in the first photo next to Maya Mountain Belize 70%), and with a distinctly reddish hue. This results from the unique characteristics of Catongo cacao, a variety of forastero which, due to a genetic mutation, lacks some of the chemical compounds that typically contribute darker color, bitterness, and astringency. It has a delicate, mild flavor that makes it highly sought after. El Buen Cacao features a rotating selection of origins and I don’t see this bar available right now (check out their other bars though!). So, if you are curious to try Catongo, look for the bar made by @gallettechocolates It is bean-to-bar in Brazil! . Posted @withregram • @schokomanie ...Und eine weitere von Solkiki 🙂 Die dunkle mit 60% Palo-Blanco-Kakao und einem Hauch Kokosmilch. Sehr feiner Kakao, und feines Ergebnis. Die Kokosnuss macht auch hier die Schokolade eher sahniger, direkten Kokos-Geschmack gibt es nicht so sehr. Wäre die Schokolade nicht auch fruchtig, würde sie schon fast als ein halbes Nougat durchgehen - mit ihrer mittleren Schokoladigkeit und Sahnigkeit, und überall gleichmäßigem, leicht butterigem Nussgeschmack - teils haselnussig, teils etwas öliger. Das Fruchtige passt sehr gut, es ist ein rundes Trockenfruchtaroma, was teils klarer wird und fast schon beerig. Und zum Abschmecken ein bisschen kräuterige Würze 🙂 Bei den ersten Bissen hätte ich fast gedacht, hier wäre Whisky drin - das Butterige und Würzige in Kombination mit dem Süßlichen hat mich sehr daran erinnert. All 18 bars we tried were quite good, some showcasing the classic tangy red fruit flavors and others presenting a more mellow, nutty profile. . We narrowed it down to nine favorites, and then with difficulty, to four top picks: Dick Taylor, Desbarres, El Buen Cacao, and Dandelion. A few notes on each below full tasting notes for all Madagascar bars can be found on the website. . Desbarres Ambanja 72% is intensely tangy with lots of sweet fresh fruit flavor: raspberry and fresh orange juice. A slight butteriness and just a slight lingering earthy note. The flavor is intense and clean and beautifully exemplifies the tangy, fruit-forward flavors of Malagasy cacao. If we had to pick a single winner it would be this one. . El Buen Cacao Sambirano 70% had classic Madagascar flavors: bright acidity, Meyer lemon, dried cherries, plus a lovely buttery richness and a creamy tanginess that reminded me of cacao pulp or cherimoya. A wonderful mix of creamy and tangy flavors (we got to try this bar courtesy of @cococlectic and even meet the makers in an online tasting!) . Dandelion Ambanja 2016 Harvest 70% was bursting with flavor and pleasant tartness. Tangy red fruit, creamy lactic/yogurt flavors, and nice complexity and depth from botanical notes of olive, licorice, and a hint or tannins. Lovely thick texture. . Dick Taylor Sambirano 72% we tried twice. Both times, plenty of tanginess – red fruit and citrus – but also a nice deeper profile: caramel, molasses, a little bit of earthy tannins, plus an absolutely stunning texture, silky smooth and fudgy. . I love the selection of bars this month: Sambirano Valley Madagascar 70%, Catongo Brazil 70%, Maya Mountain Belize 70%, and Tabasco Mexico 100%. These celebrated origins are some of my favorites and showcase a great variety of genetic and geographic diversity. Included with the bars are helpful instructions for how to taste chocolate with a great list of chocolate tasting terms. There are also a few tasting notes given for each bar - I like that Cococlectic offers a general suggestion of the flavor to guide your tasting, but doesn't say exactly what you should taste, since it will be different for everyone.
