Swipe to see some very detailed and informative packaging 🤍 My experience - the mouth feel was thick and dense with a very slow melt. A dry start, but once it began to melt, a creamy element emerged, along with the slow development of flavours. Initially I was met by notes of dense cacao, brown toast, and earthy mushroom. These gave way to dark semi-sweet honey and a prominent raisin note. Notes of orange blossom joined these and led to a dense, chocolaty, honey, floral, raisin finish. A very recent addition to my stash, arrived last week or so from lovely Iris&Bob @solkiki_chocolatemaker as a gift 🎁 Thank you so much! Did you know that they paint all the packaging designs themselves?! Isn't this one beautiful as well? Gorgeous! 😍 And the chocolate inside? Expect nothing less than ultra-premium deliciousness (although, honestly, isn't it mind-boggling that real good craft chocolate needs to use extreme superlatives to try and differentiate themselves from all those 'premium, excellence, finest' industrial bulk stuff that's out there? 😒) Cocoa beans from a very young farm, only about 6 years old, so these are probably the earliest harvests. From a region that's also called Cloud Forest, Costa Esmeraldas in Ecuador. Dreamy, huh? ☁️🏔️🌥️ The cacao was recognized as part of the World Top 50 by the Cocoa of Excellence program in 2019! 🏆 64% vegan dark-milk (with coconut). Subtle aromas, creamy melt. The coconut is almost not there, tastes more like a lower percentage dark chocolate. #Repost @distinguishedbeans with @get_repost ・・・ 🍫❤️ this week for Red: the Brazil Catongo 70% bar from @elbuencacao has a striking color - much lighter than other bars of the same percentage (shown in the first photo next to Maya Mountain Belize 70%), and with a distinctly reddish hue. This results from the unique characteristics of Catongo cacao, a variety of forastero which, due to a genetic mutation, lacks some of the chemical compounds that typically contribute darker color, bitterness, and astringency. It has a delicate, mild flavor that makes it highly sought after. El Buen Cacao features a rotating selection of origins and I don’t see this bar available right now (check out their other bars though!). So, if you are curious to try Catongo, look for the bar made by @gallettechocolates It is bean-to-bar in Brazil! . Side note - I got these four El Buen Cacao bars from @cococlectic - a monthly bean-to-bar chocolate subscription service.
