This giant sandwich is not for the faint of heart. It is the pinnacle of sandwich creation and will impart knowledge and skills you can use in future kitchen pursuits. Bay leaves and thyme leave you braver and a little more psychic than you were before.
MAGICKAL INGREDIENTS: BAY LEAVES, THYME, OREGANO, GARLIC, ONION, BLACK PEPPER, JALAPEÑO
GIANT ROAST PORK SANDWICHES MAIN ————  SERVES 3 TO 4
Don’t skip this recipe. If you have to, you can make half of it and assemble one sandwich instead of two. But please don’t skip it. It’s decadent. It’s juicy. It’s…dare we say…ONE OF THE GREATEST SANDWICHES OF ALL TIME!!!
The recipe makes about 2 cups more pork than you’ll need, but it freezes well, and you can use it for tacos, in ragu for pasta, as a filling for dumplings, or you can eat it plain with a spoon.
The mayonnaise measurements make the perfect amount to assemble this sandwich, with no leftovers, but, like the sandwich it’s used in, this mayo is one of the GREATEST MAYOS OF ALL TIME (G.M.O.A.T.), so consider doubling or tripling it so you have some for a rainy day. It’ll last up to a month in your fridge.
PULLED PORK 3 pound boneless pork butt Kosher salt and freshly ground black pepper 1 head garlic, halved horizontally 2 medium yellow onions, roughly chopped 8 sprigs fresh oregano 12 sprigs fresh thyme 4 bay leaves 4 cups chicken broth, store-bought or homemade
G.M.O.A.T. (MAYONNAISE) 1 cup mayonnaise 6 garlic cloves, minced ½ cup finely chopped pepperoncini or pickled jalapeños 2 tablespoons pepperoncini or pickled jalapeño juice
SANDWICHES 3 tablespoons canola or peanut oil 6 medium shallots, cut into ¼-inch-thick rounds Kosher salt 2 French bread loaves (14 inches long) 10 ounces P’tit Basque or Gruyère cheese, rind removed and thinly sliced
1. Preheat the oven to 300°F.
2. MAKE THE PULLED PORK: Season the pork all over with salt and pepper. Place the pork in a 9 × 13-inch roasting pan and add the garlic, onions, oregano, thyme, bay leaves, and chicken broth. Transfer to the oven and cook, basting occasionally, until browned, about 4 hours. Cover with foil and cook until tender and falling apart, 2 to 3 hours longer.
3. MEANWHILE, MAKE THE G.M.O.A.T. (MAYONNAISE): In a small bowl, combine the mayonnaise, garlic, pepperoncini, and pepperoncini juice. Cover and refrigerate to chill.
4. FOR THE SANDWICHES: In a large skillet, heat the oil over high heat until the oil shimmers. Working in 2 or 3 batches (do not overcrowd the pan), add the shallots in a single layer. Cook without stirring until very dark brown, about 4 minutes per batch. Remove the shallots from the skillet, season them with salt, and let cool.
5. Remove the pork from the oven. Leave the oven on and increase the oven temperature to 350°F.
6. Let the pork cool slightly. Discard the herb sprigs and bay leaves and squeeze the garlic out of the skin into the pan. Use a potato masher or the back of a spoon to mash the garlic and onions into a chunky paste in the liquid. Using two forks, shred the pork, combine with the juices, and season with salt and pepper to taste.
7. Split each baguette in half lengthwise and scoop out a little bit of the bread to make room for all the toppings.
8. To assemble the sandwiches, lay two double layers of foil on a flat work surface. Place the bottom half of each baguette on a piece of foil and spread ¼ cup of the G.M.O.A.T. on each piece. Dividing evenly, layer the cheese on top of the mayonnaise. Add a healthy layer of pulled pork to each loaf, then top with the shallots. Spread ¼ cup mayonnaise on each of the remaining baguette halves and place atop the bottom halves. Press down to flatten. Wrap each sandwich in the foil, place on a sheet pan, and bake until the cheese has melted, about 15 minutes.
9. Cut each sandwich into thirds or halves to serve.

A Kingaroy and South Burnett food and wine adventure
Pack an overnight bag and jump in the car. It’s time to head off for a weekend road trip to Kingaroy and the South Burnett to check out the food and wine scene this region has to offer.
A burgeoning locavore movement means produce is often local, organic and super fresh. And you’ll find a few surprises too!
Here are 8 foodie stops to add to your itinerary.
STOP 1
Kai Lounge – Moore
One-and-a-half hours drive from Brisbane, the tiny town of Moore seems an unlikely spot to find excellent coffee, but the lime-green Kai Lounge is your must-stop caffeination station. A bicycle with succulent-laden wheels greets you at the entrance and sets the tone for the eclectic retro vibe inside, but it’s the coffee that’s the attraction here.
Ex-Melbournite Ally brought her extensive hospitality experience to Moore ten years ago, after months of looking for the prefect spot to open her unique business. She exclusively serves Yowie coffee beans from neighbouring Kilcoy, freshly roasted every week, and homemade cakes and slices, just like mum used to make.
While you’re there: A stay at Montrose on Moore B&B just up the road means you can see Kai Lounge by night when it transforms into a funky, dimly lit bar with live music on the deck most weekends.
STOP 2
Blackbutt Bakery
Pull up at the busy Blackbutt Bakery for one of their famous pies. If the Big Mack Pie doesn’t grab you – two all-beef patties, special sauce, cheese, onions, pickles in a sesame seed pie – try a Roo Ragu (kangaroo fillet in shiraz gravy), Jack’s Ribs (pork spare ribs in a Jack Daniel’s-infused sauce) or a more traditional lamb and rosemary pie.
These guys are masters of new flavour combos so check out the dessert cabinet before you head off. Old favourites sit side by side with goodies like decadent cappuccino and French Vanilla Golden Gaytime slice!
While you’re there: Wander through the Roy Emerson Museum, a slice of Australian sporting history celebrating the tennis legend.
STOP 3
The Maidenwell Trading Post
Take the turn-off at Yarraman and head up to Maidenwell. The Trading Post is home to The Sauce Man offering a range of 230 products from fruit cordials, jams and preserves to off-the-scale chilli sauces.
Try their bacon jam – a surprise hit made especially for Kingaroy’s bacon festival in August – with soft cheese on a cracker, or maybe their caramel banana jam on toast for brekkie. And pick up some creamy black garlic before you go.
While you’re there: Coomba Falls waterhole is a short drive from Maidenwell and is a pretty spot for a picnic and photos.
STOP 4
Shackleton’s Whisky Bar
There’s a reward at the end of the winding, tree-lined road to Dandabah at the Bunya Mountains. Sure, you can get a great coffee and a meal up here, but Shackleton’s Whisky Bar is the place to be, especially in cooler months.
Order a tasting board from the 116 whiskies available and cosy up in front of the indoor or outdoor fireplaces.
While you’re there: For a DIY digital detox, turn off the tech, go walking in this sub-tropical rainforest and stay overnight in one of the cute cottages set amongst bunya pines and friendly wallabies.
STOP 5
Kingsley Grove Estate
Heading toward Kingaroy, pop into Kingsley Grove for Queensland-style wines and wood-fired pizza. The growing trend for Queensland wineries to produce wine best suited to the climate and conditions of the region is seeing a surge in Mediterranean styles, often lighter and younger wines. Think tempranillo, sangiovese, verdelho or viognier – classic Italian and French styles.
Just don’t leave without trying their wine ice-cream, made in partnership with Brisbane’s Lick! Ice Cream with flavours like Fat Fox Port with Dark Chocolate or Verdelho and Lemon Sorbet.
While you’re there: Caravanners can camp onsite among the vines or stay down the road at the beautiful heritage-listed Taabinga Station homestay.
STOP 6
The Peanut Van, Kingaroy
Peanuts have been grown around Kingaroy for over 100 years, its fertile red volcanic soil perfect for the crop, which was first planted by Chinese settlers for their own use.
Celebrating its 50th birthday in 2019, the iconic Peanut Van is offering 12 new flavours this year. Taste-test them along with old favourites like honey ginger, maple bacon or angry taco.
We think they should come with a warning: Danger! Addictive products for sale. Don’t say you weren’t warned.
While you’re there: Grab a map from the Visitor Information Centre and head to Mt Wooroolin lookout for some amazing views or borrow a bike and cycle the rail trail.
STOP 7
Prendergast’s Irish Tavern
Local produce and hearty Irish dishes feature on the menu at this tavern, part of the rustic Dusty Hill Winery village in the Moffatdale area.
Their homemade bacon-topped pork and apple sausages with mash and gravy will set you up for an afternoon tipple with friends on the verandah, watching ducks waddle across the lawns to a serene pond.
While you’re there: Designate a driver (scissors, paper, rock anyone?) and follow the compact Moffatdale wine trail for tastings and rolling views.
STOP 8
The Goomeri Bakery
This pretty little town boasts its very own French patisserie-style bakery, after their baker spent three months in France learning the tips and tricks of the perfect pastries and bread. Popular choices are flaky, buttery croissants and the chocolate pear danish. You can buy fresh sour dough loaves and pies and savoury slices as well.
On weekends it’s a popular spot for cyclists and day-trippers, so get there early to find a seat in the outdoor courtyard next to the shop.
While You’re there: Kinbombi Falls are a 10-minute drive from Goomeri and easily accessible. Natural rock pools are surrounded by steep stone walls – great for a dip in the summer months.

The Festival’s 10th Edition Presents An All-Star Food & Drink Lineup
Featuring An Array Of Hometown Culinary Favorites, Local And International Brews, And Platinum Menus Curated By Some Of The City’s Most Prestigious Chefs
Boston Calling, headlined by Twenty-One Pilots (Friday), Tame Impala (Saturday), and Travis Scott (Sunday), delivers a food & drink lineup that is sure to please even the foodiest of festival goers. With a variety of fare ranging from award-winning barbecue to a raw bar sourced directly from the Atlantic, the festival rolls out a stellar collection of new culinary treats from legendary chefs, and brings back fan favorites. This year’s menu has something for everyone, including a wide assortment of craft beers and wines on hand to toast to Boston Calling’s 10th edition. Boston Calling takes place Memorial Day Weekend, May 24-26, 2019, at the Harvard Athletic Complex in Allston (65 North Harvard Street, Boston). Friday night features legendary two-time James Beard Award winning chef Jody Adams of Trade, Porto, and Saloniki. Adams will welcome guests with a Greek, Saloniki menu including a brilliant Meze Boardcomprised of crispy pita chips and house made dips, olives, sheeps milk feta and veggies before hosting a Souvlaki Sandwich Bar, complete with an assortment of grilled skewered meats includingchicken, pork, and lamb. Yet another James Beard Award winner, Jamie Bissonnette, chef and partner of Toro, Coppa and Little Donkey, will host Saturday’s Platinum menu. He will offer aFoie Bratwurst with Japanese flavors, a Lamb, Bacon, and Lettuce wrap station, Fried Chicken Sandos and the sensational Impossible Burger. Sunday nights menu closes the festival with a classic northeastern seafood spread from an icon within New England cooking: Jeremy Sewall, chef and partner of of Island Creek Oyster Bar and Row 34. Sewall’s seafood expertise will be represented with a selection of Maine Lobster Tacos, Crispy Oyster Sliders, a Smoked Salmon Plate complete with pickles and grilled bread, and a Roasted Chicken with Rigatoni and Basil Pesto. Just as Boston Calling has curated a vast assortment of culinary choices for its 10th edition, it has also sourced an equally standout selection of beers and wines in both General Admission and Platinum. Hometown brewing favorites Samuel Adams will be returning again this year with an assortment of flavors, including three staple summer brews, Summer Ale, Sam ‘76 and Boston Lager. Returning to Boston Calling from across the Atlantic is Copenhagen’s acclaimed Mikkeller Brewing with a wide array of signature craft brews on tap including Staff Magician NE Pale Aleand Mikkeller Chill Pils Yuzu Pilsner. Barefoot Wines will also be featured with an assortment of wines such as the Barefoot Summer Red Spritzer and the classic Barefoot Pinot Grigio. My kids will be at least 25% candy for the rest of the week, as the season demands. If it doesn’t come individually wrapped, if the first, second, or third ingredient isn’t chocolate, a food dye, or high fructose corn syrup, if it doesn’t have a marketing tie-in with Spongebob or Legos, they’re not eating it. Which means, since they’ve now definitely left the room, we get this cake all for us. You’re welcome, because we’re not going to share it anyway.
This whole fall — save a brief but devoted two weeks of apple pie studies — I have craved chocolate almost nonstop, and I don’t mean at perfunctory square of 72% and calling it a day. I mean, chocolate éclairs and chocolate brownies and molten chocolate cakes and chocolate pot de cremes and so when I spied this riff on a black forest cake in Julia Turshen’s new cookbook, Now & Again, I really couldn’t think about anything else until I made it.
We’ve talked about Julia Turshen before. This avocado-cucumber salad remains my favorite thing I’ve spied on the side of a plate on Instagram, ever; these merguez patties are still a weeknight favorite. I’ve always loved the way she assembles meals for friends and family. She so naturally answers the forever question, but what should I serve with it?, that when I learned her new book was built around collections of recipe that both work together but also new recipes to make with their leftovers, I couldn’t wait to dig in. The menus are fun and delightfully unpredictable — Red-Checked Tablecloth Late Saturday Lunch but also a No-Stress Thanksgiving — but my favorite, the one I’d like to believe was written just for me, the girl who loved going to steakhouses when she was a vegetarian because the sides are so good, is the Steak House Dinner for Vegetarians. Maple syrup old fashioned! Wedge salad! Stuffed mushrooms! Charred broccoli! Baked potatoes with horseradish and cheddar! And as a finale: this cake.
Let’s be absolutely clear: this is not a traditional black forest cake. A black forest cake (the German Schwarzwälder Kirschtorte), is a chocolate layer cake sandwiched with whipped cream and boozy cherries, finished with shaved chocolate and more cherries. It’s fancy. It’s complex. We’ll make one… one day. But this is for today, with everything good about the layer cake, abbreviated: a fudgy-centered, puffy-edged flourless chocolate cake that sinks in the center after it bakes. This space perfectly allows for a raft of barely sweetened whipped cream. And then, instead of imagining for a moment that anyone wishes to chase down sour cherries in October, she recommends using storebought cherry preserves and adding kirsh. I found several online; this was my favorite (it reminded me of Luxardo cocktail cherries) but there are plenty of other great ones out there. Honestly, the cake doesn’t “need” it — it works without the cherry sauce — but it’s so good, I do. Grownups need candy too.

This recipe is adapted from the flourless chocolate cake in the Buvette cookbook, a project Turshen worked on. However, in the Buvette, the recipe has more butter and sugar; in Turshen’s book, it has less. When I tested it, my happy place was in the middle — too little sugar and the cake was dry, too much and the sweetness of the preserves overwhelm — and that’s what I’ve shared below. The kirsh in the cherries both loosens them and gives them a little kick. If you don’t have it, try light rum. If you don’t use either, try a tablespoon each of lemon juice and water.

12 tablespoons (170 grams or 6 ounces) unsalted butter, cubed
12 ounces semi- or bittersweet chocolate chips (2 cups), or chopped chocolate
6 large eggs, separated
1/2 teaspoon fresh lemon juice, distilled white vinegar, or apple cider vinegar
3/4 cup (150 grams) granulated sugar, divided
1/2 teaspoon kosher salt
To finish
3/4 cup heavy cream
2 teaspoons granulated sugar, or more to taste
2 teaspoons vanilla extract
1/2 cup sour or regular cherry preserves
2 tablespoons kirsch (sour cherry brandy, optional)
Make the cake: Heat butter and chocolate together until about 75% melted in the microwave or over the lowest heat in a saucepan. Remove from heat and stir until it’s finished melting and is smooth. Let it cool while you prepare the rest of the cake.
Heat your oven to 350°F (175°C). Coat the bottom and sides of a 9-inch round cake pan with nonstick cooking spray and line the bottom with a circle of parchment paper. Set it aside.
Place egg whites in the bowl a stand mixer fitted with a whisk attachment, in a large bowl and use a handheld electric mixer, or use a large whisk and a lot of elbow grease. Beat on medium-high speed until they’re foamy, then slowly pour in the lemon juice and half the sugar, continuing to beat until the egg whites are billowy and almost glossy and hold a soft peak. This is important: try not to overbeat them until they’re stiff and tight foam-looking; it leads to more dry cakes. Set the egg whites aside (if you only have one stand mixer bowl, scrape them into a separate bowl so you can use it again).
Place the egg yolks, remaining sugar, and salt into an empty bowl and beat on medium speed until thick and pale yellow, about 1 to 2 minutes. With the mixer running, slowly pour in the chocolate-butter mixture, and mix well. Use a rubber spatula to fold one-third of the beaten egg whites into the chocolate cake batter to lighten in. Fold half the remaining egg whites in carefully, then the second half. Turshen says to fold them into the batter by “cutting your spatula downward through the middle of the bowl, scraping it along the bottom of the bowl, and then pulling the mixture back up… folding them with the batter.”
Transfer batter to prepared cake pan and smooth the surface. Bake until the center is puffed up, and just barely firm/dry to the touch, and a toothpick inserted into the center comes out with just a few dry crumbs clinging to it, about 35 to 40 minutes. Try not to overbake it (the chocolate at the edges will smell toasty) or that cake can taste dry at the edges. Place the cake on a wire rack to cool completely; it will sink in the center.
To finish: Once cake is completely cool, beat the cream, sugar, and vanilla together until medium peaks form (I overbeat mine, whoops). In a small bowl, combine combine the preserves and kirsh.
Use a knife to loose then edges of the cake from the pan and invert it onto your rack. Peel off parchment paper, then invert it back onto a serving plate. Spoon the whipped cream into the center and then the preserves mixture on top. Cut into wedges and serve.
Do ahead: Leftovers keep covered in the fridge for 3 days, however, if the cherry-cream appearance doesn’t look great after a couple hours, although this has no effect on taste. To avoid this, you can just put the cherries on as you’re serving the cake in slices.

Gelupo are delivering all over - you just need to reserve a weekend delivery spot - and the minimum order is two half-litre tubs. Which, frankly, will be the least of your problems once you look at that ricotta sour cherry, and the rest of the menu.

How does a pistachio rose and raspberry cake sound right about now? We’re guessing pretty good. L’Eto Caffe makes some of the best cakes in London and they’re delivering everything from an old fashioned chocolate cake to their saffron dulce de leche. Be warned that their full cakes are quite pricey but entirely worth it. If you’re after something a little more affordable, you’ll find fresh pastries, meringue specials, and cupcakes on their website too.

We’ve probably spent more of our life in a beer garden than we spent attending university lectures. And you know what? We regret nothing. If you’re looking to turn your garden, sofa, or bathroom (hey, we don’t judge) into your new beer garden for the day then it’s time for a big order from Crate Brewery website. Twelve-pack encouraged.
