Healthy Carrot Cake Muffins with Cream Cheese Glaze
Healthy muffins! That taste like carrot cake! Oh, I think this might just be a dream come true.
Truth be told, carrot cake gets me every single time. I fell in love with it a few years ago and my craving for cake has quadrupled since then. I can’t get over the spices, flavor, and that thick-n-creamy cream cheese frosting that pairs so wonderfully with the cake. I’m not sure it gets better.
But wait, it does. Because now you can officially have carrot cake for breakfast in muffin form. I know, it’s probably not quite the same, but my goodness does it crush a carrot cake craving like no other.
Ingredients in carrot cake muffins
Not only are these carrot cake muffins delicious, but they’re also made with healthy ingredients compared to a regular slice of carrot cake. Naturally sweetened, whole grains and includes both fruits and veggies, making them the perfect brunch treat or snack for both kids & adults. Here’s what you need:
White whole wheat flour or whole wheat pastry flour: white whole wheat flour has the same nutritional benefits as whole wheat flour, but much lighter in flavor and texture. You can usually find it at your local grocer. If you can’t, try looking for whole wheat pastry flour. To make them gluten free you can try using chickpea flour or an all purpose gluten free flour. I have not tested it, but think it should work well!
Pure maple syrup: I prefer maple syrup to honey after reading this interesting article comparing the two.
Unsweetened applesauce: I love baking with applesauce because it naturally sweetens the recipes and provides moisture to give these muffins a nice texture without having to use as much oil. Even though I use a few tablespoons of healthy oil in this recipe, most of the healthy fats come from walnuts or pecans.
Unsweetened almond milk: feel free to use any milk you’d like! I love using vanilla almond milk or coconut milk for a little extra flavor in the muffins.
Eggs: you’ll just need one to help these carrot cake muffins stay together. I haven’t tried using a flax egg, but I suspect it will work well. Let me know if you try it in the comments!
Shredded carrots: you’ll need to shred about 2-3 medium carrots, but make sure to measure 1 cup full total. If you’re feeling like you want more, you can use 1 1/2 cups.
Cozy spices: cinnamon & nutmeg add a cozy flavor to these healthy carrot cake muffins and gives them that carrot cake flavor goodness.
Optional add-ins: Try adding shredded coconut, raisins or pineapple to these muffins. Everyone prefers their carrot cake differently, so feel free to add them or enjoy the muffins as-is.
For the glaze: cream cheese, powdered sugar, vanilla and a splash of almond milk.
What makes these carrot cake muffins healthy?
Traditional muffin recipes can be packed with oil or butter and lots of refined sugars. To make these carrot cake muffins healthier I used applesauce and just a bit of olive oil for moisture plus pure maple syrup for a natural sweetness. That’s right, these muffins aren’t baked with any refined sugars!
Obviously I didn’t include the cream cheese glaze as ‘healthy’, but it’s really quite delicious on top of the muffins. Plus it’s only a tiny amount. If you want though, you could leave off and enjoy them as is. You can also use my paleo powdered sugar recipe to keep these completely refined sugar-free!
How to store carrot cake muffins
In the fridge: store these carrot cake muffins on the counter in an airtight container for a day, then transfer them to the fridge for up to 4-5 days. The muffins really do get better after sitting in an airtight container for a day; they sweeten up a bit and get super soft. Served with a big glass of almond milk!
Freezer-friendly carrot cake muffins: Feel free to freeze these babies for later! Allow them to cool completely after baking, then place them in an airtight container or reusable bag and freeze for up to 3 months. When you’re ready to eat them, you can microwave them for 45 seconds-1 minute or until warm. I suggest freezing them without the the glaze and simply adding the glaze when you’re ready to enjoy them.

Healthy Carrot Cake Muffins with Cream Cheese Glaze

Healthy carrot cake muffins packed with carrots, coconut, raisins and nuts. These deliciously moist carrot cake muffins are naturally sweetened with pure maple syrup and applesauce. Top them with a light cream cheese glaze for a delicious snack or healthy treat!
Dry ingredients
1 1/2 cups whole wheat pastry flour or white whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
Wet ingredients
1 cup finely shredded carrots (about 2-3 carrots)
1/2 cup pure maple syrup
1 tablespoon olive oil
1/3 cup natural unsweetened applesauce
1 egg
1 teaspoon vanilla extract
1/2 cup almond milk
Optional add-ins
1/2 cup unsweetened shredded coconut flakes (optional and not included in nutrition info)
1/2 cup raisins (optional and not included in nutrition info)
For the glaze
4 oz reduced fat cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1-2 tablespoons almond milk
Preheat oven to 350 degrees F. Line 12-cup muffin pan with liners and spray the inside with nonstick cooking spray to prevent batter from sticking to the liners. You can also omit the liners and generously spray the muffin pan with nonstick cooking spray.
Next add flour, baking soda, cinnamon, nutmeg and salt to a medium bowl; stir to combine and then set aside.
In a separate large bowl, add carrots, maple syrup, olive oil, applesauce, egg and vanilla. Whisk to combine wet ingredients then slowly stir in almond milk and flour mixture until just combined. 
Fold in coconut flakes and raisins if you’d like. Divide batter evenly between muffins cups or liners. Bake for 18-20 minutes or until toothpick inserted into the middle comes out clean. Allow to cool for 10 minutes in pan then transfer muffins to a wire rack to finish cooling.
Once muffins are completely cool, you can make the cream cheese glaze: Place cream cheese in medium microwave safe bowl and microwave on high for 20-30 seconds or until cream cheese is somewhat warm and a little runny. Stir gently and add in powdered sugar, vanilla extract and a few tablespoons of milk; stir again until glaze reaches desired consistency; not too runny and not overly thick. 
Dip each muffin top into cream cheese glaze then place back on wire rack. Sprinkle with coconut flakes if desired. Makes 12 muffins. Store these carrot cake muffins on the counter in an airtight container for a day, then transfer them to the fridge for up to 4-5 days. The muffins really do get better after sitting in an airtight container for a day; they sweeten up a bit and get super soft.
To make vegan: replace the egg with a flax egg by combining 1 tablespoon flaxseed meal and 3 tablespoons of water. Leave off cream cheese frosting and instead sprinkle tops with cinnamon and coarse sugar.
To make gluten free: try using chickpea flour or an all purpose gluten free flour. I have not tried this option, but am quite certain it would work.
Notes about nutrition: The nutrition information provided includes everything except raisins and shredded coconut. If you add both, your muffins will be around 200 calories of good nutrition.

Pumpkin Banana Bread
It happened. Two weeks ago. I became the teeniest, tiniest bit excited about fall. I’m not ready to bust out the boots and don my flannel, but I’m ready to dabble in pumpkin. Pumpkin Banana Bread, specifically.
I’m normally a hold-onto-summer-kick-and-screaming kind of girl.
Thus, while I’m not ready to launch into full-on pumpkin bread baking mode with all-in autumn recipes like Healthy Pumpkin Bread, Pumpkin Chocolate Chip Bread, and Paleo Pumpkin Bread, I’m feeling a little flirty.
We’ve had some cooler mornings and earlier sunsets, and all of the back to school sales remind me that fall has nearly arrived. After avoiding its glances for the last few weeks, I finally fell for the can of pumpkin that’s been winking at me from our pantry shelf.
Had I known how delicious this Pumpkin Banana Bread would turn out to be, I would have cracked the can sooner!
If you’re ready to dabble too, this healthy Pumpkin Banana Bread is the ideal way to begin. It’s not completely committal, but it hints at the plaid shirts, boots, and pumpkin spice lattes (and pumpkin spice everything else) to come.
Healthy Pumpkin Banana Bread — The Best of Both Worlds
Considering my laundry list of healthy pumpkin bread recipes is rivaled only by my collection of healthy banana bread recipes (ahem, classic Healthy Banana Bread, Paleo Banana Bread, Cream Cheese Banana Bread…), it was only a matter of time before the two got together to create a tasty Pumpkin Banana Bread baby.
This Pumpkin Banana Bread is lightly sweet but not overly so, and the majority of the sweetness comes from the natural sugars in the banana itself.
This Pumpkin Banana Bread recipe also receives mega marks in the texture department. Both pumpkin and banana are fabulous at keeping baked goods moist and tender, so with the two joining forces, this is one of the most melt-in-your-mouth bread recipes you’ll ever bake.
As written, this healthy Pumpkin Banana Bread is 100% whole wheat but doesn’t taste it at all thanks to white whole wheat flour, which is mild and tastes like regular white all-purpose flour in this recipe.
If you’d like Pumpkin Banana Bread gluten free, you can use the same amount of a 1:1 gluten free baking blend like this one. To make the Pumpkin Banana Bread vegan is trickier. Because this bread is already so moist, I fear using flax eggs in place the regular eggs is risky. I’d suggest scratching your pumpkin itch with these Vegan Pumpkin Muffins instead.
I haven’t yet tried this recipe as Pumpkin Banana Bread muffins, but I think that would work nicely and have a suggested baking time in the recipe below.

1/2 cup pecan halves or walnut halves (optional; you can also swap other mix-ins of choice such as golden raisins, cranberries, or chocolate chips)
1 cup mashed banana, the riper the better (about 2 large bananas)
4 tablespoons unsalted butter, at room temperature
1/4 cup coconut sugar or light brown sugar
2 tablespoons nonfat plain Greek yogurt
1/3 cup honey
2 large eggs, at room temperature
1 cup pure pumpkin puree (NOT pumpkin pie filling)
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice (or 1 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and a pinch of ground cloves)
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/2 cups white whole wheat flour
Directions:
Preheat the oven to 350 degrees F. If using nuts for the mix-ins, spread them onto a single layer on an ungreased baking sheet. Bake until toasted and fragrant, about 8 to 12 minutes depending upon the size of the nuts. Do not walk away during the last few minutes of baking (this is when nuts love to burn). Immediately transfer to a cutting board. Let cool a few minutes, then roughly chop. Lightly coat an 8 1/2 x 4 1/2-inch loaf pan with nonstick spray.
In a small bowl, mash the bananas measure them out to ensure that you have 1 cup. In the bowl of a standing mixer fitted with the paddle attachment or a mixing bowl, beat together the butter and coconut sugar until smooth and combined. Beat in the measured banana, Greek yogurt, honey, eggs, pumpkin (feel free to reuse the measuring cup you used for the banana to measure the pumpkin), and vanilla. Sprinkle the pumpkin pie spice, baking soda, baking powder, and salt over the top. Sprinkle the flour over the top, then with a rubber spatula or wooden spoon, stir by hand, just until the flour disappears. Fold in the pecans or another mix-ins.
Scrape the batter into the prepared pan and let rest uncovered at room temperature for 15 minutes (Don’t skip this step! Resting helps the flour absorb the wet ingredients and will give you a better texture and flavor).
Bake the bread for 55 minutes to 1 hour 10 minutes, or until a toothpick inserted in the center comes out clean. Another quick check is to see if the bread reaches 190 to 200 F degrees F on an instant read thermometer. The bread may Place the pan on a wire rack and let cool completely, then wrap the bread tightly in plastic and refrigerate for at least 1 hour, or even better, overnight (I know this step sounds odd but it works and makes the bread taste incredible).
This bread recipe works well when doubled! For the pumpkin, use the full (15-ounce) can. It will be a scant 1 cup of pumpkin per loaf, but the recipe will turn out fine.
Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months. I like to cut the cooled bread into slices, then wrap and freeze them individually and pull them out as I need/want/CRAVE them.
To bake as muffins (not yet tested but based on my best judgment): Line a muffin pan with paper liners or lightly coat with baking spray. Fill the muffin cups 3/4 or so of the way to the top. Bake at 375 degrees F for 22 to 27 minutes, until a toothpick inserted in the center of a muffin comes out clean.

Dutch Baby

Recipe:
Ingredients
⅔ cup of milk
3 large eggs
½ cup all purpose flour (packed)
¼ tsp vanilla extract
¼ tsp salt
3 tbsp clarified butter (can be substituted with vegetable oil)
1 tbsp cinnamon (approximately)
¼ tsp nutmeg (approximately)
  (Out of the Oven)
Instructions
Clarified butter
If you cannot buy this from a store, you will need to clarify your own butter.
First, cut about 5 tablespoons of butter up into a thick bottomed saucepan.
Melt the butter on low heat. This should take a little while.
Separate milk solids (white foam) on top of the clarified butter.
Let the butter cool to allow about 5 minutes. Then skim off any more solids and pour the clarified butter into a separate dish.
  NOTE: The milk solids can be kept and served on the Dutch Baby, but also go good on other food, especially popcorn.
  Dutch Baby
It is a good idea to stage your utensils before starting. You’ll need 1
8-10 inch cast iron skillet, either a blender or a simple protein
shaker, oven mitts, and measuring utensils.
First, preheat the oven to 425ºF
Blend milk, flour, eggs, vanilla, salt, cinnamon, and nutmeg until batter is smooth. If using the protein shaker, be sure to add milk before flour and that all of the flour has been incorporated.
Melt clarified butter into cast iron skillet on high heat until just bubbling.
Pour batter into center of skillet. Be careful for splattering butter.
Let cook on stove top for 20-30 seconds, then quickly transfer to oven.
Bake at 425ºF for 20- 25 minutes on the middle rack. Check after 20 minutes as cook time may vary
Once sufficiently risen (3-4 inches depending on skillet) and golden brown, remove and serve.
Eat quickly as the dish cools easily. Often served with some fresh lemon juice, powdered sugar, butter, or maple syrup
  NOTE: Be sure that pictures are taken immediately after removing from oven. Also, season to taste. Amounts of spices are suggestions and experimenting with berries is encouraged. Basically, treat this as a glorified pancake both in altering and serving.

     There are a lot of reasons for people to bake. Some people only will if they have to, others bake because they love it. I bake to eat. That means I’m not really concerned with presentation will absolutely avoid unnecessary messes. When I look for recipe I’m checking the time it takes to make before anything else. Don’t get me wrong, I do enjoy baking and I love when something turns out looking professional, but that’s not what I’m doing it for. I like to eat, and if I want something, nine out of ten times, I have to make it myself.
     Being as inexperienced as I am, most of my recipes come from YouTube videos where I can see step-by-step what to do. I found out about Dutch Babies from a channel called FoodWishes. I decided to go ahead and try to make one after a little research into clarified butter (which I had never even heard of previously). After getting right and having to share with my family, making Dutch Babies became a regular thing for weekend breakfasts.
     This recipe is one of the simplest, yet impressive looking dishes I’ve ever made. It take a few common ingredients, and about 10 minutes to prepare before you bake it. To make the cleanup easy on myself, I just use a protein shaker instead of a blender to mix the batter. The simplicity is my favorite part about Dutch Babies, well aside from the name. The look on people’s face when you tell them you ate a Dutch Baby for breakfast really is priceless.
     Speaking of the name, you may be wondering as to why an overly fluffy pancake is called a Dutch Baby. Although it’s perfectly reasonable to think there is some connection to the German penchant for creating gruesome fables for children, this is actually an American dish. Based on a German dish, the Dutch Baby was actually created by a restaurant owner in Washington that claimed a trademark in 1942. The owner’s daughter is actually credited with naming the dish.
     As I said, this is just a dish. When you’re eating with four people, Dutch Babies go fast. It’s always a good idea to have a few thing you can pair it with. The great thing about being a breakfast food, is that there are so many sides to serve with this dish. There’s always thick cut, hickory smoked bacon, or breakfast sausages (I prefer links), but it never hurts to experiment a little. Personally, I find a small assortment of fruits and berries does the trick. Whatever you may have on the side, I suggest staying away from eggs. The Dutch Baby already has three eggs in it and in the center you can really tell from how dense it is.

     So let’s talk a little about actually making this Franken-cake. First; the clarified butter. This is kind of extra to be honest, and just vegetable oil will do the trick, but clarified butter is the best thing to use. I clarified my own the night before, but you can buy this stuff at a much higher quality than what I made. Basically what happens is boiling separates the oils, salts, and fat solids in the butter. Then you just strain off the liquid oil to use. It takes time, can be messy, but definitely makes the process feel more authentic.

Second thing; mixing the batter. Like I said earlier, I just use a protein shaker. It’s fast, easy to clean, and perfect when you’re trying to be quiet cooking in the morning. If you try this recipe, please don’t make it harder than it has to be.
Now my favorite part every time is pouring the batter and watching this thing rise. You may want to make sure you use the middle rack, I’ve had it hit the top of the oven before! Something to keep in mind when heating the clarified butter is to coat the sides of the skillet and not to pour until it begins to bubble a little bit. Once you pour, wait thirty seconds to a minute and stick it in the oven to bake

What I do: I’m a full-time real estate project manager and part-time freelance writer. I’m also mom to 16-month-old Savannah, and I’m a marathon and ultramarathon runner. I’m the founder and co-leader of the Pennypack Trail Runners, which meets every Saturday.
What role healthy living plays in my life: Running and maintaining a healthy lifestyle has helped me gain clarity and sanity in some of the hardest times of my life. After my youngest brother died in 2008, I suffered from depression. I climbed out of the darkness when I found running, and have since turned to running and other forms of exercise to relieve stress, to help me work through difficult decisions, to build up my confidence, and to reach others in a positive way. For me, exercising (almost) daily has huge mental benefits, and the physical benefits are a nice side effect too. Now I work out because I know that it makes me a better mother, wife, and employee, on top of making me physically fit. I’m currently training for the NYC Marathon (my first postpartum 26.2) and this is my peak week! I’m hoping to break four hours for the first time and set a big personal record in NYC.
Health memberships: Run coaching services by Lift Run Perform ($125/month) and Crunch Fitness ($25/month). I have frozen my Orangetheory membership until after the marathon.
Monday

5:30 a.m. — Wake-up begrudgingly after a terrible night’s sleep. I can’t even blame my 16-month-old for a bad night’s sleep, since she slept soundly through the night.
5:45 a.m. — Drink a small cup of Starbucks coffee with a little cream and sugar and eat half a banana while listening to calm music and browsing social media. I try to eat something before every morning run or workout because I tend to get nauseous if I work out on an empty stomach.
6:15 a.m. — Run four easy miles on my basement treadmill while watching The Bold Type.
7:30 a.m. — After I shower and get ready for the day, I blend up a smoothie containing whole milk, two scoops of Orgain Vanilla Bean Protein Powder, half a banana, cinnamon, nutmeg, and ice. Kinda tastes like pumpkin spice without the pumpkin.

7:35 a.m. — I jump in the car and head to work in New Jersey with ALL the beverages: my smoothie, water bottle, and a travel mug of coffee. My commute can be anywhere from 35 minutes to an hour, depending on the traffic.
9:30 a.m. — I’m sitting at the construction site where I currently work full-time as a contractor. Sometimes my smoothie is enough for breakfast, but lately it’s not cutting it with all the miles I’m running. I head to the cafe and order two scrambled eggs ($1.68).
11:45 a.m. — Lunchtime! Head to the cafe and throw together a “kitchen sink” salad with spinach, arugula, carrots, onion, chickpeas, mushrooms, parmesan, quinoa, almonds, and grilled chicken. Grab a raspberry-lime seltzer and eat outside in the courtyard with a friend ($9.52).
1 p.m. — Feeling the effects of my poor night’s sleep, so I refill my 40-ounce water bottle and grab another small coffee (free at client site).
4 p.m. — Peanut butter chocolate chip Larabar saves the day before I hit an afternoon slump.
5:30 p.m. — On my way home from work, I stop at the grocery store to pick up a few things for dinner and the house ($40.83).
5:45 p.m. — Get home and finally see Savannah for the first time of the day! I play with her a little bit, feed her dinner and she’s in bed by 7:30 p.m.

8 p.m. — My husband Josh is also the chef of our family (#blessed). He cooks “egg roll guts” stir-fry for dinner, which my cousin recommended. It is delicious, filling, and healthy. It contains cabbage, carrots, ground pork, onions, ginger, peanuts with rice. I have a glass of Douro wine with dinner.
9 p.m. — While doing the dishes, I warm up fresh apple crisp that Josh made on Saturday night with our CSA apples. We have it with a little Häagen-Dazs Vanilla Bean ice cream. Treat yo’self!
9:30 p.m. — Watch some TV and stretch/foam roll before bed
10:30 p.m. — Prep my coffee for tomorrow and head up to bed, ready to do it all again tomorrow!

Tuesday

6:45 p.m. — Wake up after snoozing past all of my running alarms. I had another night of restless sleep, so I decide to sleep in and take a well-deserved rest day. I ran 28 miles within the last three days and I can tell my body really needs it.
8 a.m. — I sip a travel mug of coffee on the way into work.
9:30 a.m. — I drink a Siggi’s Vanilla Drinkable Yogurt.
11:00 a.m. — After leading our weekly meeting, I chow down on last night’s leftover stir-fry with a lemon LaCroix from home.
11:45 a.m. — I hop in the car and cross the bridge to my office in Center City. I don’t usually work from the office since I’m at a client construction site full-time, but today I have a couple of commitments in the office.
12 p.m.  — I park and head in.
2 p.m.  — Catch up with a work friend over cold brews at Peddler Coffee (treated by my friend).
2:30 p.m. — Shoot a couple of video blogs for work.
3:30 p.m. — Starving, I eat a Banana Chocolate Chip Larabar during a meeting.
5:30 p.m. — I pick up our CSA fruit and veggie share at a local synagogue and head home.
5:45 p.m. — I get home, feed Savannah dinner and watch some TV with her before bed.

7:15 p.m. — Cook dinner with a glass of Douro. Tonight I’m trying to use ingredients we already have so I make an avocado pasta with fresh tomatoes from our garden.
8 p.m. — Eat dinner while watching DVR’d SNL. For dessert I eat five Oreo Thins, which are a staple in my household these days.
10 p.m. — Prep coffee for tomorrow and head to bed.

5:45 a.m. — Wake up and get dressed to run. I’m staying home with Savannah today since she’s sick and can’t go to daycare, but I still want to get in a run before she wakes up.
6 a.m. — Eat half a banana and drink a cup of coffee while browsing social media.
6:30 a.m. — Run six easy miles on the treadmill while watching The Bold Type.
7:30 a.m. — Hop off the treadmill as Josh is getting ready to leave and kiss him goodbye. I shower and make the same smoothie as Monday for recovery.
8:45 a.m. — Cook breakfast for me and Savannah — four scrambled eggs and we split a toasted English muffin with butter.
9 a.m. — Pour myself coffee number two for the day.
10:30 a.m. — Head out for a walk with Savannah and our dog, Whiskey. We get about three quarters of a mile out and Savannah starts getting cranky, so I play the Moana soundtrack on my phone and we turn around to head back.
11:30 a.m. — Put Savannah down for a nap. I throw in some laundry and then lay down myself for a bit. I’m going to have a late night at work and want to get some extra rest.
12:30 p.m. — Savannah wakes up and we have lunch. I reheat some of last night’s avocado pasta for her, and I eat the last of our egg roll stir-fry (I LOVED this dish!).

2:15 p.m. — I put on a movie for Savannah so I can get a little housework done. I throw in more laundry, do all the dishes, straighten up, and make a batch of Kodiak Blueberry Lemon Protein muffins. When they’re done, I split a muffin with Savannah.
4 p.m. — Get changed and drive to work. We’ve got contractors showing up at 5 p.m. tonight.
6 p.m. — I eat an apple and a handful of almonds. Not sure what time I’ll be having dinner tonight so I brought a bunch of snacks.
7 p.m. — I make myself an Earl Grey tea with a little cream and sugar in the break room. Contemplate leaving to go get some dinner.
8:30 p.m. — I run out to Panera during break and inhale a You Pick Two: Cuban sandwich and Autumn Squash soup, with a seltzer and bag of chips ($13.19).
10:30 p.m. — Still at work. Eat an Almond Butter Chocolate Chip Larabar for dessert.
11:30 p.m. — Listen to a Wine & Crime podcast on my drive home. It’s my new fave.
12:15 a.m. — Get home and pass out from exhaustion.

7:45 a.m. — Wake up, finally a good night’s sleep this week! I’m going into work a little late today. I help Josh get Savannah ready for daycare and head upstairs to shower.
9 a.m. — Head to work with travel mug of coffee and a protein muffin for the road.
10:45 a.m. — Drink a Siggi’s Vanilla Drinkable Yogurt
11:30 a.m. — Meet a new co-worker for lunch in the cafe. I have a “kitchen sink” salad again and a raspberry lime seltzer ($7.44).
1:30 p.m. — After walking around the campus and jobsite for the last hour, I need a little boost so I drink a La Colombe Vanilla Draft Latte I purchased at the cafe ($3.73).
3 p.m. — Contractors are gone for the day, so I snap some jobsite photos and then head upstairs to do some work.
3:35 p.m. — Hungry again so I snack on some almonds and an apple.
5:45 p.m. — After sitting in tons of traffic on the way home, I stop at the grocery store to pick up milk, eggs, and a few other staples ($36.04).
6 p.m. — Get home. Play with Savannah and feed her dinner.
7:15 p.m. — I put on running clothes while Josh puts Savannah to bed.

7:30 p.m. — Run this week’s speed workout on the basement treadmill (yes, again!) because it’s violently thunderstorming outside. Tonight’s workout isn’t too bad: four miles to warm up at easy pace, 5 x 45 seconds at 7:34, with two minute recovery jogs, then cool down to eight miles.
9 p.m. — I shower really quick and run downstairs to watch the Eagles game and chow down on some of my favorite pizza that Josh picked up from Vincent’s. This one has prosciutto, arugula, fresh parm, and balsamic reduction. I pair two slices with a bottle of Pumking, my favorite fall beer, and a lemon LaCroix.

10:30 p.m. — Say I’m going to bed but it’s so fun watching the Eagles crush the Giants.
11:30 p.m. — Clean up the kitchen and finally head to bed with an Eagles win. Gonna regret staying up this late in the AM.

5:30 a.m. — Wake up after snoozing a few times. Get dressed and head downstairs.
5:45 a.m. — Drink a small coffee and huge glass of water, and eat a blueberry protein muffin.
6:15 a.m. — Put on all my reflective and light-up running gear and head outside for an easy six-mile run. During my run, I narrowly miss stepping on a dead raccoon and almost vomit on the spot.
7:15 a.m. — Shower and get ready for work. Prep a smoothie (same ingredients as others this week), travel coffee mug, and huge water bottle for work.
9 a.m. — At work, I’m still starving! I head to the cafe and order a mushroom, onion, and cheese omelet (treated to breakfast by one of our contractors).  I eat it with ketchup because I am a child.
12:45 p.m. — Head to the cafe for lunch. My client gives away free soup on Fridays so I get a small Kombucha Squash soup and a small Veggie Chili. They are both perfect for this amazing fall weather! Raspberry-Lime seltzer to drink ($1.70).
2:45 p.m. — Really feeling the effects of the late-night Eagles game. Make a cup of coffee in the break room and prep for a conference call.
4 p.m.  — Snack on a peanut butter chocolate chip Larabar before heading out for the day.
5:15 p.m. — Get home and hang out with Savannah for a while outside, then head upstairs to get ready for dinner with Josh and some of my work friends and their husbands.
6:15 p.m. — Drive to the Elkins Park train station and catch the Regional Rail downtown.

7 p.m. — Arrive at Spice Finch in Rittenhouse Square, which was recently recommended by a friend. Since Josh and I arrived early due to our train schedule, we order some pre-dinner drinks. I get the “Rest in Pete’s” which has vodka and prosecco and Josh orders a rye cocktail ($28.60).
7:30 p.m. — Our friends arrive and we head to our table. We have a long, tapas-style dinner with several small plates and one large plate for the table. I drink two glasses of Tempranillo ($120).
11:30 p.m. — Take the train back home and head straight to bed. We’re getting up early to walk the Race for Hope in the morning, a fundraiser to end brain cancer.
