i learned many things in the zoom cooking class i just took! including:

in ethiopian cuisine, you cook the onions first with no oil and only add the oil later

most meals in ethiopia are vegan

some people can make three things at the same time and i am not one of those people

if the teacher offers to mail you the spices ahead of time but you figure you’ll be able to find them somewhere and don’t need her to mail them to you: you’re wrong

injera is fermented!

#it was actually pretty fun! but there are SO many dishes to wash now oh my god #and i didn't even make the injera #cooking #food #my posts #i also learned that the flavor i associate most strongly with ethiopian food is from a spice blend called berbere! #(luckily i was able to get berbere. and i already had turmeric. but there were some spices that i couldn't get :( ) #in ethiopia people make their own berbere once a year. they buy like 40 pounds of chilies and just go to town on 'em #this is all assuming i heard everything correctly. my audio setup was not ideal for this #but oh god i'm gonna be washing these dishes for the next week. did you know: some people have dishwashers?? #and don't have to deal with this handwashing nonsense???? #sounds fake but it's a real thing
