Tasting of Spanish Rioja wines
The Guild of Food Writers arranged a wine tasting of three bottles of pink Rosé, usually associated with sweetness and summer. Each participant was sent a bottle from a different region south of Bilbao in Spain. We were given a knowledgable 'tour' of the vineyards by Sarah Jane Evans, and discussed what foods went well with the three bottles she had chosen from her initial tasting of 50 different Rioja Rosé.
The first one named XF Sierra Cantabria - an award winning wine - had a lot of character and apparently went well with what others were eating: spicy sausage and garlic clams. My choice of food - just for two of us - was a Spanish omelette (fried onions and potatoes), a plate of nibbles and for after the tasting, Gazpacho with cucumber and chopped peppers.

These are not cheap wines. All of them are over £20 a bottle with the second one, Primer Rosé Marques de Murrieta, almost double that price. Tasters were impressed with what they called Majestic labelling, with the bottle itself displaying a crown motif on the glass, certainly suitable for a real Marquis. The wine had a blue tinge and marked acidity. The blurb described tastes of ‘red apples, redcurrants, orange peel over a spice base of thyme, pastry and violets.’ This rosé was definitely stronger and very perfumed. Sarah Jane voted it immensely drinkable ‘a super lovely freshness, just ideal on a hot day.’ This one had an unusual stopper, called Vinolok - a marketing device to do without a cork.
The third wine was called Lalomba, coming from a glinting winery where the Rioja is stored in big concrete tanks. Storing wine in oak was usual, but this new classy, squeaky clean approach has proved successful. The wine itself was strong, interesting and had hints of strawberry, quite a lot of alcohol and a fresh taste.
What was our conclusion? All of us food writers, many of us not knowledgable about wine, enjoyed exploring Rosé and learned what depth of flavour these wines can have.

SCREWCAP (DOP CU FILET) sau clasicul DOP DE PLUTA?
Prin articolul următor aș dori să vă ofer mai multe informații despre vinurile îmbuteliate care folosesc SCREWCAP sau DOP DE PLUTĂ. Ieri am primit câteva întrebari de la cel mai bun prieten al meu, care spune așa: De ce screwcap si nu clasicul dop de pluta ? Este adevarat ca dopul de pluta se foloseste pentru vinurile de calitate superioara (premium, super-premium) iar screwcap-ul pentru vinurile de calitate medie, mai ieftine ?
Cred că este cel mai dezbătut și controversat subiect al industriei viticole, atât în România cât și la nivel internațional. Am avut ocazia să degust nenumărate vinuri cu screw cap, premium, de consum, din țări de renume ca Franța, Germania, Italia cât și din Lumea Nouă (Australia, Noua Zeelandă, Africa de Sud, Chile, S.U.A.) Screw-cap-ul a fost răspunsul la problemele generate de pluta naturală, respectiv clasicul defect de DOP (TCA) cât și faptul că este o sursă epuizabilă și limitată de materie primă (se obține doar din coaja recoltată a stejarului de plută – Quercus suber) Odată cu globalizarea, abordarea cramelor a fost catre nou, de aici și o serie de alternative: Screw-cap, Vinolok (dopul de sticlă), DIAM (dopul care nu este afectat de TCA), Nomacorc (dop sintetic) etc. Fiecare sistem de închidere a sticlei de vin prezintă avantaje cât și dezavantaje. Ramâne la latitudinea producătorului ce metodă folosește din punct de vedere estetic dar și eficient.
Ce Este SCREW-CAP-Ul?
Este o capsulă de metal care se înșurubează pe filetul sticlei cu o prelungire metalică pe gât pentru a imita clasicul capișon. Un strat de plastic, plută, cauciuc sau alt material moale este folosit ca tampon pentru a etanșa sticla. Spre deosebire de dopul de plută care are o lungă istorie în domeniul viticol, screw-cap-ul a fost folosit relativ recent, prima oara în anul 1964. Dar în urma cercetărilor și inovării, a reușit să câștige rapid popularitate dar și cotă de piată. Principalul avantaj al SCREW-CAP-ului este LIPSA DEFECTULUI DE DOP (TCA – Trichloroanisol, compus chimic ce poate contamina pluta, prin afectarea gustului și mirosului vinului îmbuteliat, într-un mod iremediabil – clasicul “bușonat”). Prin lipsa transferului de oxigen, vinul își păstrează mult mai bine PROSPEȚIMEA și FRUCTUOZITATEA, screw-cap-ul fiind ideal pentru vinurile tinere albe, roze și roșii cu tanini moi. S-a dovedit că acest sistem este mult mai eficient și pentru maturarea in sticlă a vinurilor roșii de renume, imitând condițiile de păstrare ale unui beci foarte rece. Mai putem enumera: desfacerea sticlei de vin cu USURINȚĂ - doar prin răsucirea dopului, nefiind necesare accesorii și costuri suplimentare (bineînțeles pierdem zgomotul produs la extragerea dopului de plută); păstrarea prospețimii vinului pentru o mai lungă perioadă de timp după deschidere; este reciclabil și cu un cost mediu. Unul din principalele dezavantaje ale Screw-cap-ului este asocierea cu vinul “ieftin” (probabil din cauza băuturilor carbogazoase?!), lipsa esteticului, a unui istoric și a informării corecte a consumatorilor (reticiența acestora la schimbare și inovație); nu este biodegradabil. Am adăugat o selecție care depășește palierul vinurilor "ieftine"! Sper ca aceste informații să vă convingă să încercați vinuri diferite.

Olor a Corcho: el causante de este defecto es un hongo que habita en el corcho del vino, te puede tocar de la misma manera que las personas se pueden constipar, es decir, no está relacionado directamente con la conservación de esa botella, simple mala suerte. El aroma, transmitido en mayor o menor grado al vino, lo produce una molécula llamada TCA y que es una de las consecuencias de la aparición de este hongo, por otro lado inocuo. Si partes el corcho podrás apreciar la infección por parte de dicho hongo. Este defecto del vino se viene presentado en menos ocasiones, se prodigan los tapones de rosca, también los sintéticos y ahora incluso el tapón de cristal, también conocido como Vinolok . Con cualquiera de estos sistemas de cierre alternativos se evita la aparición del aroma a corcho. Notarlo oxidado: el vino tinto pierde los tonos rojizos y violáceos volviéndose amarronado y el blanco se vuelve más amarillento de lo normal. La filtración de aire en la botella provoca la oxidación del vino y como resultado cambios en el aroma y el gusto. Esto es provocado por una inadecuado almacenamiento, frío excesivo o calor pueden hacer que el corcho se encoja o se agriete. Vino picado o avinagrado: cuando estamos en presencia de un vino picado, este sabe y huele a vinagre. Hay que saber distinguir el entre el ácido acético (presente en el vinagre) de otros tipos de ácido presentes en el vino. Cuando encontramos la acidez en vinagre en el vino, ya no hay vuelta atrás. Olor a huevos podridos: el responsable es el ácido sulfhídrico, y es debido a una baja oxigenación durante la elaboración del vino. Muchas veces se puede solucionar traspasando el vino a un decantador y dejándolo que se oxigene.
