Pesto Pull-Apart Bread from Sally’s baking challenge. It was a fun and relatively easy bake for a very nice bread. It’s a good appetizer or just as an afternoon snack for the kids. The home made pesto matches the bread and bakes well.

Lemon pavlova with home made lemon curd for the Nigella cookalong. We followed the recipe with my daughter exactly and the texture and taste turned out great. It is a lot of fine temperature and texture testing to ensure good results, but the description was good and easy to follow. The only thing I learned before to check the curd with the back of a wooden spoon or reaching a certain temperature instead of relying on texture only.

Easter Egg Nest Cake for the Nigella Cookalong. It’s a flourless chocolate cake, after rising it up, quickly cooling it down in the cake form, so it collapses and creates a crater. It is filled with a chocolate cream before decorating with the eggs. The harder bits are to get the consistency right with the eggs and do not burn the chocolate, but the recipe had good descriptions. We decorated it with coconut flakes for the nest cover and creme covered dried strawberries for the eggs (I found TruFru’s the tastiest).

Irish soda bread muffins from King Arthur. Quick and easy. I did half raisins, half dried cranberries with the yogurt and vegetable oil options. I did not have Irish style flour, so I mixed up whole wheat flour with wheat germs to get the same corse ground texture. I also left out the caraway seeds, as no one likes them in my house.

Espresso chip muffins from Marie Simmon’s A-Z muffin book. Quick and easy mix muffins, the chocolate chip is only on the top. Great flavor with the espresso, cinnamon and vanilla combo. I like the King Arthur espresso powder for baking, it’s not sweet and gives a great non bitter coffee taste.

Christmas muffins from Marie Simmons A-Z muffin book. It’s a cinnamon cranberry muffin. It should have green pistachios on the top, but as my daughter is allergic I skipped that. The base of the muffin has some yogurt and milk with the butter, so it’s not too heavy. The fresh cranberries and the cinnamon gives a dark look for the insides, but it has no whole wheat in it. quick and easy.
