Recently, i've been eating a lot of stuffed, fried, dried, stewed Bell peppers, well you get it i've had a lot of peppers this year and i feel like im semi vegetarian although i've become a veggie appreciated.
I've researched a few recipes too, many of them i've successfully executed the recipe and actually included some to my recipe guideline. Brunches are my favorite Menu also and well its never late for a breakfast lunch. In this recipe you will have a chance to play around with flavor this can also turn into a deviled egg recipe but i have not tried it yet, that's next.
Recipe Guide Line
1 o 2 Bell pepper (I prefer them big) and the color is up to you
Pinch- salt & Pepper or if you really want to go for flavor use Adobo
1 tablespoon of Grated Parmesan per serving
1 tablespoon of butter
3 eggs (depending of the number of guest you've invited)

On medium heat, heat up the butter and wait until the skillets is warm enough to cook the egg, try not to over cook the butter. When the pepper is cut, try rounds, and sear the peppers before pouring the egg. Cut the peppers thick so the egg doesn't over flow. Try not to pour all the eggs so you secure that there's no spills. the same method of making a sunny side up is used on this recipe because i didn't bake it. a drop of water to make a bit of steam and cover up until the yolk is sealed.. before of course add the rest of the ingredients. We had ham also and voila!!!!!! it was so delicious.
About Bell peppers, If you have extra bell peppers around, making a spanish omelette seems like a dynamic idea, a few days ago i invited my friend over for brunch; and while debating what exactly we wanted to try this time seemed like peppers and eggs where a legit idea. for this idea all you need is a nice sized peppers and an appetite to go with brunch.

It took a mountain to get there. I was singing the whole trail -“ain't no mountain higher enough” song in my head because the humidity was insane. my husband and i where very exited until we had to track back up. But it’s INSANELY worth it. The Cascade is named after Saint Clara, it’s an amazing location in Yauco PR. I Believe its a sector called Sector Negro/Castaner.
