1 tablespoon coriander powder
Salt to taste
1/2 teaspoon garam masala 
Bengali fish curry Preparation: 
Begin by cleaning the fish pieces thoroughly under running water. Pat them dry with a paper towel or clean kitchen cloth.
In a mixing bowl, combine the fish pieces with a pinch of salt and turmeric powder. Gently massage the marinade into the fish, ensuring each piece is evenly coated. Set aside for 10-15 minutes to allow the flavors to meld.
Heat mustard oil in a pan or kadhai over medium-high heat. Once the oil is hot, carefully add the marinated fish pieces and fry until they turn crispy and golden brown on both sides. Remove the fried fish from the pan and set it aside on a plate lined with a paper towel to absorb any excess oil.
In the same pan, heat a little more mustard oil. Once the oil is hot, add the julienned onions and sauté until they turn golden brown and fragrant.
Next, add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Stir continuously for about 1-2 minutes, allowing the spices to bloom and release their aroma.
Incorporate the tomato paste into the pan and cook for 2-3 minutes, stirring frequently, until the paste is well combined with the spices and onions.
Carefully add the fried fish pieces to the pan and gently mix them with the spiced tomato mixture, ensuring each piece is coated evenly.
Pour in about 1 cup (100 ml) of water and sprinkle the garam masala over the curry. Give it a gentle stir to combine everything well.
Cover the pan with a lid and let the curry simmer on low heat for about 5-7 minutes. This step allows the flavors to meld together and the fish to absorb the rich, aromatic curry sauce.
After simmering, remove the lid and check the consistency of the curry. If you prefer a thinner gravy, add a little more water and let it cook for an additional 2-3 minutes.
Once the desired consistency is achieved, turn off the heat and let the curry rest for a few minutes before serving.

Pabda or Pabo (in english) is also known as Bangladeshi Butterfish. It’s a delicate fish with extremely flavorful flesh and is part of the small sweet water fish family known as ‘Catfish Family’. It has no scales and one large bone in the middle. But unlike large catfish it has some tiny bones along the belly. Pabda Macher Tel Jhaal or Pabda Macher Jhol is a staple Bengali Fish Curry. Gondhoraaj Rui : Lemon Rohu Fish. Ten years back, on this same date, i.e on 24th of August, first time, I had this recipe at 6 Ballygunge Place Restaurant with my family on my father's birthday. It tastes authentically Bengali. My father was extremely fond of fish, and, immediately after having it he enquired about the recipe from the chef of the restaurant. Surprisingly, this recipe is very easy to cook. I have tried out this recipe with variety of fish available in Kolkata and everytime the experience is unique. We had bhetki fish at the restaurant, however, today the fish is Rohu. Since, Rohu is used today, I have used onion and ginger along with hung curd. But if bhetki is used for this same recipe, then onion and ginger is not required. Flavour of the lemon zest and lemon juice of Gondhoraaj lebu is uniquely mesmerizing. Gondhoraaj lebu leaves are used while baking the fish along with other ingredients. Garnished with gondhoraaj lemon zest and crushed black pepper corn.  PABDA FISH RECIPE OR PABDA MACHER JHOL RECIPE
Well, Bengalis and their love affair for fish is legendary and the Pabda Fish recipe or Pabda Macher Jhol is one of the favourites. Fish is called mach and a light curry is called jhol in Bengali.  Most of the Bengalis are fish lovers and the process of cooking fish here in Bengal is different from the rest of the country.
There are many varieties of fishes available with freshwater fishes dominating the scenario. Pabda is also known as Butterfish or butter catfish. Over here a very simple curry using Pabda fish called Pabda fish curry or Pabda macher jhol (light curry in Bengali) is shared.
INGREDIENTS FOR PABDA FISH RECIPE OR PABDA MACHER JHOL RECIPE:

Pabda fish or pabda mach
Yoghurt- 3 tablespoon
Ginger paste or grated ginger
Turmeric Powder- Half teaspoon(for curry) and 2 Half tablespoon for marinating the fish.
Coriander Powder- Half tablespoon
Cumin Powder-Half tablespoon
Red Chilli Powder- Half teaspoon
Bay leaf-2 pcs
Nigella seeds or kalo jeera r black cumin seeds- Few
Green Chilli- 4 to 5 (slightly slit)
Mustard Oil(For frying the fish and making the curry or jhol)
Salt-To taste
Sugar-Half teaspoon
Coriander Leaves(For garnishing)

Ingredients–
4 pieces of Hilsa fish
1/2 tsp nigella seeds
5 slit green chillies
1 medium brinjal cut into 2” lengthwise
1/2 tsp turmeric powder
Salt to taste
3 tbsp mustard oil
Method–
Rub 1/4 tsp of turmeric and a little salt on the fish pieces. Set aside for 15-20 minutes
Heat mustard oil to smoking in a kadhai
Fry the fish pieces lightly to a light golden brown
Remove and drain on a kitchen towel

Freshwater fish with simple "paanch phoron" and 2 green cardamom for tempering, for the color I used kashmiri red chilly and tumeric slury or paste. My fish recipe is done. Its simple and amazingly tasty, great with steamed rice. . . P.S every Bengali household have "paanch phoron" in their pantry, its a must have spice for their cooking. Its a mixture of whole spices, I make it at home by mixing fenugreek seeds, fennel seeds, black cumin seeds, cumin seeds, radhuni seeds(again it looks like ani seeds but it has a strong smell of parsley, it is not celery seeds.) and black mustard seeds.
