My Roasted Butternut Squash soup with roasted squash seeds and French baguette slices. Clean and Simple ingredients, Nice light and warm for those cold windy nights, comfort food. In 450 oven on a baking sheet place a cleaned and halved butternut squash, sprinkled with salt, pepper, olive oil and fresh rosemary leaves, half of a yellow onion to roast for 35-45mins. Wash and separate seeds from meat of pit, pat dry, season with salt, pepper, paprika and olive oil and place on baking tray for last 15mins of food roasting in oven. Remove food from oven let cool down for 10-15mins. Remove the meat of the squash from the skin in a blender or food processor, add roasted onion, coconut milk, water and seasonings to taste and for desired thickness. Reheat in a saucepan or pot, garnish with seeds, coconut milk, olive oil and desired dried herbs. This one was so quick and easy- My Cheezy sauce: sauteéd white onions Oat milk 1 slice 365 Plantbased Gouda 2 slices @daiyafoods Cheddar Sweet corn for color and flavor Onion powder Pinch of salt The rest is garlic crispy fried mushrooms and fresh sautéed garlicy string beans. ‘Twas yum! Spaghetti Squash was the main focus covered in this delicious red Basil sauce with sautéed vegetables and mildly fried mushrooms. This was a spontaneous creation focused on the Squash element which was oven roasted with EVO, salt and black pepper. I added a side of broccoli to get my greens in and for some extra protein. This was like a glass of fine red wine. I followed this up by making strawberry nice cream for the first time and topping that off with dark chocolate as a garnish.
