Carrot top + kale dip
Got wild with some carrot tops, wilted kale, and sunflower seeds for a creamy, yummy colorful dip! Great for snacks, on the go, or on the stay.
Recipe:
- 2 bunches of carrot tops (you can include stems for a thicker texture or compost them)
- 4 or 5 kale leaves (these can be wilty! + stems included)
- 1/3 cup raw sunflower seeds
- 1/2 cup olive oil
- 1 tbsp roasted garlic (or 1/2 tbsp raw)
- 1 tbsp salt
- lemon to taste
To-do’s:
1. Wash and dry carrot tops and kale. Roughly chop into med size pieces.
2. Drop carrot tops into food processor with sunflower seeds, half of the olive oil, garlic, and salt. Pulse for 2-3 minutes.
2. Add in kale and remaining olive oil. Pulse food processor until smooth. Add lemon to taste (like loads of lemon :D) 
3. Enjoy! Keeps well in the fridge for about 1 - 1 1/2 weeks.

Seedlings!
Resilient kale seedlings just starting to sprout. These lil sprouts survived a drop from the counter and an unfortunate washout in the kitchen sink. Definitely getting them planted in a larger pot this weekend!

Turnip Green Machine
Cleaned turnip greens make a wonderful addition to any salad. Most folx might not know you can add in the leaves just as you would other greens. Spring means turnip and radish season is in full swing so this is the perfect time to try out a new salad addition (or sautee them lightly!) They’re super nutritious, with a mild flavor, and lovely color. I like to thinly chop the stems as well for an extra added crunch! This is my favorite kind of root-to-leaf cooking! Using the entire plant in an unexpected way.  What other ways are you using your greens?

Herb starts
A beginner basil plant to get my herb garden started. In a plant-able container that will break down once it’s in a permanent home. I might have gone a little herb crazy at the farmer’s market last weekend and bought this basil, cilantro, thyme, dill, rosemary, lavender, and a baby tomato plant (apparently basil and tomato grow very well together.)
S built me an incredible herb box for all of these plants and I’m so excited to get things growing! I’ve got a lot to learn but trying not to put too much pressure on myself to do it perfectly. (Feels like a lot of pressure though!) As I get things planted I will report back!
Growing your own herbs is a great step in reducing your packaging footprint. So many herbs come in thick plastic packaging, with way more than you will ever use for a single meal and then you’re at a loss as to how to preserve them. Before you know it you’ve got a moldy pack of rosemary in your fridge and are questioning your life choices. Grow your own! Use only what you need! Keep a thing alive! I imagine this will be very liberating. And challenging. Let’s figure this out together, yeah?

Practicing my chia jar skillz with a delicious kiwi and raspberry compote! Recipe: 🥝2 T of chia seeds soaked overnight. Drain and wash out a few times to get rid of the cloudy water. Soak in 1/2 cup of plant based milk. 🥝1 T of maple syrup. 🥝2 T of coconut yogurt or any yogurt. 🥝Use a hand blender and blend your breakfast in a small bowl.
