On pizza, in pasta, or even surrounded by an olive and bathed in gin, they’re slimy in texture and taste of the darkest, dankest folds of Gertrude Stein. - These anchovies were different, revelatory. - With the dense, toothsome texture of smoked duck breast and a miso-like mellowness from an eight-month salt cure, they didn’t melt on the tongue so much as sit upright; Navy soldiers demanding attention. Their dark oily flesh was made to swim again, but this time in a local olive oil perfumed of mountain greenery and autumn forest.
