Wedding Series: Stephen Sonnier on the Flowers

Stephen Sonnier of Dunn & Sonnier is the expert to visit when dreaming of beautiful arrangements for your wedding. He defines his style as traditional with a twist, but he has an imagination that runs wild, allowing him to meet any design challenge. Stephen shares with us his favorite flowers and other advice to consider when choosing your floral arrangements for your special day.

TSG: Describe the initial process of planning the flowers for your wedding.

SS: The bride should decide what she would like, or at least have an idea...then I can help refine the idea. Do you want color or all white? Traditional or contemporary? Smooth or spiky? Hand-tied or Cascading? There are so many different options! It’s a personal taste, so the bride should first decide onher vision, so I can make her dreams a reality.

TSG: What do you do if a bride has no opinion on her flower arrangements? Has that ever happened?!

SS: To be honest, I’ve never met a bride who didn’t have an opinion! I have brides who say ‘These are my colors, make it beautiful.” And they leave the store. That’s our conversation. It’s a lot of pressure, but I love those girls because it allows me to be creative and that’s when I produce my best work.

TSG: What are your favorite flowers? What are the most popular?

SS: My favorites...I love working with hydrangeas and wildflowers...scabious, echinacea, foxtails. I prefer the unusual stuff. Every bride wants peonies, but there are so many other beautiful flower types out there that I would encourage them to remain open minded, especially since they are hard to guarantee depending on season and weather...but, when we have them, we can do magical things like create a tree made of peonies.

TSG: Every time I see your work, I am blown away. And, the few times I have worked with you, you read my mind. Tell me a personal touch that you enjoy planning for each wedding.

SS: I always ask the bride if there’s a certain flower her fiancé or boyfriend gave her during their courtship, or that was important to the two of them, and I put it in her bouquet and on his lapel but don’t use it anywhere else in the wedding. It’s just for those two.

A lot of times we’ll try to match the boutonnière for the groomsmen with the bridesmaids. And once we establish a boutonnière for the groomsmen, all the other men wear it... fathers, ushers, anybody. It’s the groom’s day too, so he should have something special... most people forget that it’s the groom’s day.

TSG: Every detail can be planned for the perfect day, but sometimes unexpected things happen. Give us an example of when you made lemons into lemonade...

SS: When “Benjamin Button” was filming in the French Quarter, we were working with a bride who was being married at a French Quarter Hotel. On the day of the wedding, they were filming a scene with horses. Needless to say, after a long day in the sun, there were quite a few different smells! In order to disguise the smell, at the entrance, we scattered the streets with lavender buds. When people entered the wedding they stepped on the buds, and it filled the street with the fragrance of lavender. When the bride and groom departed, we gave guests lavender to scatter through the street... it was an incredible feeling and it overcame that horrible, horrible fragrance.

TSG: Well that bride was certainly lucky to have you in her court! As any bride would be! What a smart idea!

Located on Magazine Street, Dunn & Sonnier is filled to the brim with fine antiques and stunning flowers. My favorite addition is their own locally produced “Bywater” honey from their beehive in their backyard. Apparently, the beekeeper says its the best he’s tasted in years!
