𝙂𝙞𝙛𝙩𝙚𝙙 🥙 @xoshawarma are a new @deliveroo only restaurant making free range chargrilled kebabs with pan-Asian flavours. The menu includes Kung Pao Fried Chicken, The XO Shawarma (pork shoulder, XO sauce), @manilife_ Satay Chicken Shish, and Satay Aubergine Shawarma. The aubergine was a clear favourite for me, it’s spiced and topped with crispy onion rings, garlic and ginger coleslaw, and a @manilife_ deep roast creamy chilli satay sauce. Sides include Chiu Chow Chilli Hummus which was delicious, and Szechuan Fried Chicken. Kita semua butuh kondimen yang bisa ditaruh di hidangan apa saja, kapan saja, dan saus XO adalah salah satunya. Supaya tidak salah paham, kondimen ini sebenarnya istilah asing. Apa itu? Adalah semacam tambahan pada suatu hidangan, yang fungsinya: menguatkan rasa, menambahkan rasa baru, atau melengkapi keparipurnaan hidangan. Kecap, sambal, mayonnaise, dressing salad, dan seterusnya juga termasuk kondimen. Misalnya makan ikan bakar, gak komplit kan tanpa sambal dabu-dabu. Seperti itu. Saus XO ini adalah salah satu kondimen yang kaya rasa. Menurut beberapa sumber, baru populer di Hongkong pada tahun 1980an. Kaya rasa dan literally orang kaya yang sanggup makan (karena bahan pembuatnya mahal). Contoh saja nih musti pake kerang simping kering (dried scallop) yang harganya sejuta per kilogram. Nama XO sendiri pun berasal dari minuman konyak (cognac) dari Prancis yang pada saat itu merupakan salah satu miras termevvah di Hongkong. Sederhananya, seafood kering —kadang ditambah yang segar juga—macam simping dan udang, dibalut aromatik berupa bawang merah, putih, jahe, cabe, dan selainnya. Digoreng dengan minyak panas, lalu dicampur dengan arak beras, kecap asin, kaldu ayam, gula merah, dan berbagai macam rempah, dimasak dengan api kecil sampai kekentalannya menyerupai selai. Setelah itu bisa disimpan di kulkas dalam beberapa bulan. Saus XO ini memiliki kekhasan rasa yang sangat kuat, pokoknya, tidak ada padanannya. Titik. Mau? Beli! Finished (click to enlarge). Added scallions, carved squid, fishball and shrimp. The noodles came out pretty well after the 4 minutes of steeping - good texture.
