Ginger Garlic Paste Recipe
Ginger garlic paste is the epitome of everything and the eternal recipe which exists for ages in Asian cuisine, especially Indian to be precise. But here, I will describe the version of it according to the broad experience of Chef Mike Channa who perfected it to an extraordinary level and all purposes of non vegetarian dishes and meat marination.

Here is the recipe for 1 kg of a jar.
The ingredients you need are the following:
five to six balls of garlic 200 gr of ginger one half of a small red onion one half of a big green chilly six to seven olives if available one lemon zest four to five teaspoons of salt one teaspoon of pepper corn one teaspoon of turmeric, combination of dry herbs, two tablespoons of apple cider vinegar oil to emulsify.

Preparation:
All the ingredients need to be fresh, nicely peeled and rinsed in clean warm water. After that, they need to be strained in order to dry little and then should be divided into several batches and added into a high speed blender along with enough oil to help them to be nicely ground.

When you finish grinding the last batch, you should put the paste in a clean glass jar and mix it well before closing the jar.

The paste made this way can be refrigerated for 8 weeks without any problems.

Chicken Stir Fry
One of my favourite meals is chicken stir fry. It is a Chinese cooking technique in which ingredients are fried in a small amount in a very hot oil while being stirred and tossed in a wok. The technique originated in China and in recent centuries has spread into other parts of Asia and the West.
For a great stir fry, the first and the most important thing is marinated chicken cut in small or medium sized pieces.

You should always start with browning the chicken. After maximum 5 minutes of frying chicken, you should put chicken out of wok to rest for few minutes while you fry the vegetables.

Vegetables which are added can be any sort of vegetables that you like, and they should be cut into bigger pieces. Vegetables for a stir fry are not supposed to be chopped.

You should start with garlic and little rosemary first, then add onions (both white and red), peppers (red, green and yellow), green chillies, zucchini or mushrooms and in the end leeks, spring onions and little parsley.
Add salt, pepper, chilly flakes if you like it chillier, then little origano, basil, thyme depending on which flavour you like the most.
Vegetables are not supposed to be fried for more than 2 to 3 minutes depending on how much time they require to start "sweating".
When the vegetables start cooking that is sweating, add meat back and mix it together with the vegetables.

There you go, your chicken stir fry is ready to be served and eaten.

My dear rajma :-)
Hello everybody.
One of the dishes I really like to make is rajma or red kidney beans. There are many recipes about how to make rajma, but mine is very simple.
For a great rajma meal you need: 2 cans(400 gr) of red kidney beans, 1 tomato can, 2 big onions(red and white), 5,6 cloves of garlic, little ginger, leek, half a green chilly, parsley, 1 branch of rosemary, spices and herbs.

You start the process of cooking the meal by frying little chopped garlic with rosemary and the whole spices, i.e. 1 black cardamon, 2 green cardamons, 1 clove, 1 piece of cinnamon, whole pepper and coriander seeds, touch of cumin, a bay leaf and a dry red pepper.

After the spices begin to release their oils and fabulous smells, it is time to add the rest of the vegetables. First, you add chopped onions, garlic, ginger and half a green chilly as well as parsley stems if they are nice and fresh. When the vegetables start cooking you proceed by adding half a tomato can or 2 medium fresh chopped tomatoes.

When all the vegetables are added and about to start cooking, add salt, black pepper, little dry chilly flakes, little origano and basil, little turmeric, little garam masala. When it comes to herbs and spices, keep in mind that less is more, so you don't over-add them and ruin the basic flavour of the dish. You can trust me on this as I had that luck to learn from the best chef ever :-)
After some time when all of these vegetables, herbs and spices are cooked to a great extent, add kidney beans which should be rinsed with clean water and drained before they are added. Along with them, add clean water, mix thoroughly and cook for some more time till everything comes together and makes one consistent meal.

  The quantity of water depends on how thick you like to eat your rajma. If you like it thicker, then you add less water, if you like them watery, then you add more water and little ketchup to keep the flavour of tomato in them.
There you go, your rajma is ready after approximately half an hour after you added the beans.

You can eat them with roti or plain basmati rice or any other good quality rice.

The Importance of Communication Skills
The Basics:
In the past generations, educated people developed stronger communication skills that are commonly used today as essential talents for surviving in a world, where all social and business interactions were highly personal. Letters took days or weeks to arrive, and newspapers and magazines discussed events that were often days or weeks behind what was happening in the world in real-time. Importance of communication skills was highly prized and considered a source of news, education, and entertainment.

In today’s world of instant communication, we often don’t bother asking why is communication important or with learning strong communication techniques and substitute emoticons, slang, abbreviations, short texts and sound bites instead of developing the skills to express what we really mean to say. We can say we don’t value the importance of communication skills that much.
