Creamy Smoked Salmon and Leek Pasta

These Creamy Smoked Salmon and Leek Pasta make a hearty and tasty meal, particularly comforting after a road trip on a rather cold day! Happy Saturday!
Ingredients (serves 2):
2 cups short (whole-wheat) pasta (like fusilli or penne)
1 tablespoon unsalted butter
1/2 tablespoon olive oil
a medium Garden Leek
1/2 teaspoon dried dill
1 1/2 lemons
1/2 cup double cream
1/2 teaspoon freshly cracked black pepper
60 grams/2 ounces Smoked Salmon 
Stir fusilli into a large pot of salted boiling water, and cook, according to package’s directions, generally 9 to 11 minutes until al dente.
Thoroughly rinse Garden Leek under cold water.
In a large, deep skillet, melt butter with olive oil over medium-high heat. 
Thinly slice Garden Leek. Once the butter is just foaming, add Leek the skillet, and cook, about 3 minutes until softened. Season with dill; cook, 1 minute.
Thoroughly squeeze in the juice of the lemons, and cook, a couple of minutes more.
Finally stir in the double cream, and simmer until slightly reduced. Season with black pepper.
Once the pasta is cooked, drain quickly, saving about 1/3 cup of its starchy cooking water. Add pasta to the Leek sauce, gradually stirring in cooking water, cooking until it is beautifully coated.
Cut Smoked Salmon into chunks, and stir into the pasta.
Serve Creamy Smoked Salmon and Leek Pasta immediately, with a glass of chilled dry white wine, like Chablis, if you're in Burgundy!

I don’t love soupy oatmeal as much as the chunky stuff, plus the bananas and tahini give it extra moisture. Very autumnal, but less boring than peanut butter or cinnamon.
Baba Ganoush. Why I bought tahini in the first place. Eggplant excess is easy, using them all up at once is hard. So roasting at 425 for 70-90 min (!!!) then just mixing the flesh in with a ton of garlic, lemon and tahini does wonders for my consumption of raw radishes and carrots... YUM.
Kitchen Sink Pesto. My coworker made a delish walnut/date/lemon/basil/garlic/waterleaf pesto with excess I grew from the garden. She is such a creative cook and an inspiration for me to prioritize kitchen creativity over habitual food waste. Same story, radishes and carrots. I love herby dips for raw veg. I buy flavored hummus nearly every week for crackers, veg and sandwiches. I’m realizing that what I am really after is the intense herbal flavors and fatty nuttiness of a pesto or baba ganoush, the creaminess of chickpea, eggplant or mucilaginous waterleaf. So many possibilities!
Carmelized onions. What a difference low heat and a dash of red wine makes....so much less greasy than sauteed onions in butter. Plus the red wine gives it a huge flavor depth. Great way to elevate chicken, rice and broccoli...it is quickly taking priority over my crutch of grated cheddar cheese.
One of my big crutches is buying precooked sausage. Half the time I don’t even like them! And how hard is it to freeze some meat cuts bought in bulk on sale? The Aidell’s Chicken sausage with apple and gouda used to be a fave but I now find it boring and too sweet. I had “breakfast for dinner” last night (a college student staple...) and made carmelized onions to go with that sausage. It tasted like a whole other meal!
Fried egg on Avo toast with feta cheese and a ton of scallions. This is a go-to but I want to find more ways to diversify my protein choices and eat a “healthier egg” (poached in asian soup? hard boiled in a cobb salad?)
Moist Chicken Thighs pan-cooked in Mrs. HS Ball’s Chutney...with extra garlic powder, bay leaf and thyme. I cooked this with rice and spinach and carmelized onions. I rarely cook for more than one but this felt like a proper family meal. We only ate half our plates because it was filling and we wanted leftovers :)
Watercress, spinach, arugula and baby kale. Growing my own has given me a taste for bitter greens. I rarely eat a lettuce-based salad and most salad bag options are romaine-dominant. Flavorless. I can’t wait for the fall with its truly bitter arugula, mizuna and chard leaves... but until then I am spending a small fortune on watercress and baby kale!
Lemon Thyme baked Salmon. I flippin love fish and am almost completely illiterate when it comes to (over)cooking it. I loved smoked salmon lox too, but a freshly baked lemony filet over a huge salad is the perfect meal. I like chicken salads too, and need to do more of the lean protein/veg salad meals for dinner. Most days I just don’t need a huge rice, potatoes or pasta carb party to...what? Eat at 9 then fall asleep? No.
Baked Leeks and new potatoes in a lemon thyme buttery artichoke sauce. I used up the canned artichoke juices that came with the briney Mediterranean saute I often like to do (over pasta in the past, but nowadays with meat and modest piece of bread).... this recipe went sooo much better than the cream of mushroom angle i also tried and ended up throwing out. the price of experimentation I guess... the lemon butter angle would taste fantastic baked into a savory pie crust, if you needed a new way to use up leftovers, or for a potluck.
Ginger preserves.... I bought a jar to try to see if this is what I wanted to do with my ginger harvest this winter. In addition to dehydrating, cooking and pickling, I most certainly DO... This stuff is basically CANDY to me and has replaced all want or need for chocolate in the house. I don’t have a sweet tooth beyond fresh fruit most days, but this is a big exception. It feels like a treat. I want to find a way to turn this savory, perhaps in a stir fry with napa cabbage, or as a pastry filling for a potluck cookie or croissant.
