Lemon and Mint Creamed Cucumbers

A fragrant and refreshing Summer Salad, these Lemon and Mint Creamed Cucumbers can be eaten on their own, as a side to ss with toasts, or as a side to grilled meat!
Ingredients (serves 2):
1 large Green Onion
half a dozen large leaves fresh mint
half a large lemon
a pinch of salt and freshly cracked black pepper
1 1/2 tablespoons canola oil
2 heaped tablespoons sour cream or crème fraîche
half a large cucumber, rinsed
Finely chop Green Onion, and add to serving bowl, saving a bit of its green part for garnish.
Roll mint leaves together, and chop finely. Add chopped mint to the bowl.
Grate in about two teaspoons lemon zest. Season with salt and black pepper.
Stir in canola oil, mixing well.
Then, add sour cream, and give a good stir.
Finally, thoroughly squeeze in the juice of the lemon halve, stirring until well-combined.
Cut cucumber into thin slices. Add cucumber slices to the bowl, tossing well to coat generously.
Place in the refrigerator, to chill, at least one hour.
Serve Lemon and Mint Creamed Cucumbers cold, sprinkled with reserved chopped green part of the Green Onion.

Creamed Spinach Conchiglie (Vegetarian)

These hearty Creamed Spinach Conchiglie are also bright with a touch of lemon, which make them a comforting lunch after an hour or two spent weeding, trimming, and planting bulbs in the garden! Happy Tuesday!
Ingredients (serves 1):
125 grams/4.40 ounces conchiglie
about ¾ cup leftover Creamed Spinach
1/2 lemon
In a pot of salted boiling water, cook conchiglie according to package's directions, generally 9 to 11 minutes until al dente.
Meanwhile, heat leftover Creamed Spinach in a large saucepan. Once hot, grate in the zest of the lemon halve.
Once the pasta is cooked, drain quickly, saving about 1/4 cup of its starchy water, and add both to the Creamed Spinach, stirring well to coat, until sauce slightly thickens.
Thoroughly squeeze in the juice of the lemon halve, and cook, another minute.
Enjoy Creamed Spinach Conchiglie, topped with a little freshly grated Parmesan, and with a glass of chilled dry white wine like a Marlborough Sauvignon Blanc or Pinot Grigio.

realized why i associate myself so strongly with lemons even though i dont really like lemon-flavored things is because when we werent feeling really good and wanted a little midnight treat, our tired dad got up and made my sister and i what he called lemon candy, which was just a lil spoonful of sugar with fresh lemon juice squeezed on top.
