A Day in My Life - Cheese Pairings, A Historic Hotel and Brochu Walker

Last week, my assistant Hannah and I set off to Chapel Hill, North Carolina to photograph an outfit or two! Burlington is a small town and there are only so many options for places to take pictures and it’s nice to get out of town every now and then! Chapel Hill is only about 40 minutes away and is such an interesting town with the University of North Carolina at Chapel Hill being at the center!

As we were driving, I suggested we stop in Carrboro (a neighboring town), to check out a cheese shop (called The Cheese Shop) that I had been hearing great things about! The Cheese Shop was on the way into town and we easily found it. What we didn’t realize was that it was connected to a darling restaurant and wine shop called Glass Half Full! As we went in, we quickly decided that we definitely needed to eat lunch after shopping for cheese and then we would be on our way to our next several destinations.

As is sometimes the case with a fun filled day, the plan falls to the wayside and spontaneity takes over! We stood at the cheese counter and tasted more than our share of dellcious cheeses (see below) and purchased several along with wine to go along with the cheese! This took much longer than we had anticipated, but we were getting to know the girls that were helping us and having a great time! After we finished sampling cheeses, we sat down to eat lunch and had a delicious flatbread and a hummus platter that we quickly devoured. I made a mental note to recreate the flatbread and hummus (recipe coming soon).

The point of the trip was actually to photograph the fabulous outfit I’m wearing from Brochu Walker and it ended up being a perfect outfit for this outing! As you know…Brochu Walker is my go-to brand for relaxed, elegant clothing and look certainly fits into that category! The cashmere sweater was perfect for a cooler spring day and the linen pants were a nice alternative to my usual pair of jeans! I wore sneakers with this look and later in the day while shopping, purchased a pair of raffia platform sandals by Marc Fisher to wear to The Carolina Inn for a light dinner before we headed home. The shoes immediately took this look from day to evening! My amazing gold jewelry is from Julie Vos and added a little understated bling to the look! I also cannot say enough about the Coffee Suede Tote, also from Brochu Walker! It’s so fabulous…roomy and a statement bag for sure! It would even be great for an overnight bag if you were really packing lightly!

The Cheese Shop has a small but extremely well edited selection of truly amazing cheeses! They also do educational workshops on cheeses as pairing wine and cheese. I’m trying to figure out how to get back soon to learn more!

I’m surprised that I had room for lunch after tasting so many cheese, but somehow, I managed! Below is a list of the cheeses and condiments I purchased along with descriptions! It is one of my great pleasures inn life to pair cheeses with interesting jams, meats, pickles and fruits, so clearly, I’m going to have a blast with these items! I’m not even able to say that I have a favorite cheese from this list because they’re all so different. When I’m eating a certain cheese, that one is my favorite in the moment!

Lideline Cheese - Linedeline is a large format ash-ripened goat cheese. The flavor is of crème fraiche and mushrooms. Cheeses are slightly firm when young, with the paste breaking down into a nice creamline after a few weeks of aging.

Point Reyes Bay Blue - A rustic-style blue cheese with a natural rind. It is known for its mellow flavor and sweet, salted caramel finish. Delicious with toasted walnuts and honey!

Quadrello DiBufala - Quadrello® di Bufala is a water buffalo milk cheese produced by Quattro Portoni in the Lombardy region of Italy. Made from pasteurised milk, this washed-rind cheese is aged for about 40 days. It shares several attributes with Taleggio, except it is made from water buffalo milk.

Quicke’s Vintage Mature Cheddar - This savory, crumbly truckle is a shining example of English cheddar. The grass-fed, farmstead production process makes for a mature cheddar that is savory and grassy, with notes of warm butter and fresh horseradish.

Jake’s Nettle Gouda - Jake’s Nettle blend is their signature baby gouda with the addition of chives, nettle, celery, parsley, onion, and garlic! This is a soft and smooth gouda with a pleasant taste of springtime! I broke into this one last night and served it with baguette slices toasted with olive oil and flaky salt and a small slice of tomato! It was a really sophisticated take on a grilled cheese sandwich and indescribably delicious! See pictured below…

Eat This Yum Balsamic Caramelized Onions - These onions have a deep, intense flavor of caramelized onion and aged balsamic reduction. Perfectly smooth and silky, this delicious spread adds an elegant touch to any dish and is perfect with a soft brie, cheddar or most any milder cheese! I could eat this with a spoon!

Azeite Aromatico Piri-Piri Oil - The fruity and sweet aroma of this Alentejo olive oil has been subject to a highly appreciated combination. The piri-piri flavoring makes it ever-so-slightly spicy. As if the properties of olive oil were not enough, they are now multiplied by those of piri-piri, a known source of vitamins A, E and C, folic acid, zinc and potassium. This oil is an interesting addition to your condiment cabinet!

Brins Cherry Chai Jam (also just ordered Brins Rosemary Grapefruit Marmalade) - These spreads are made in small batches and contain less sugar so the flavors of the ingredients really shine! They make your cheese board (or morning toast) a real moment to remember!

One of the wines I purchased was this delicious Sancerre Rosé and it will be perfect served with our Easter lunch! I’m smoking a side of salmon and serving it as the main part of a composed salad! Recipe coming tomorrow!

Happy with my purchases and full from a fabulous lunch (see below)! We were ready to do a little shopping and head to The Carolina Inn!

If you’ve never been to The Carolina Inn, it’s a beautiful historic destination! The inn was built in 1889 and to this day is a gathering place centered around The University of North Carolina! We often meet friends there before football games and even stay the night if the game is a late one! The bar and restaurant are charming and the grounds are breathtaking!

This post was supposed to come out on Monday but it took a little longer than I had anticipated! My new website is underway and I’ve been working hard to make it everything I want it to be! It will be finished by the end of April and I’m so excited for you all to see it! It will be much easier to navigate and I’ll be able to add video! It’s a project that will be well worth the time!

Dans le temps de l’épreuve, de la souffrance, de la traversée du désert, nous avons besoin d’aller à la source. La source c’est Jésus. C’est lui, notre Berger qui nous conduit près des sources vives dans des près d’herbes vertes et fraiches. C’est lui qui nous appelle un moment auprès de lui pour parler à notre cœur, pour faire son œuvre en nous. Notre souffrance n’est pas une punition. C’est une opportunité d’aller plus loin et plus profond avec notre Dieu.

Nous avons besoin de reprendre contact avec nous-mêmes, avec notre cœur profond. Pouvons-nous nous poser cette question : « Que se passe-t-il au-dedans de moi maintenant ? »

Ouvrons encore et toujours notre cœur à la présence de Dieu et à son règne en nous.

Aller à la source, c’est se plonger dans la Parole de Dieu et la lire comme si c’était la première fois, la prendre comme un repas. Nous en avons besoin. Oui, notre corps a besoin de manger le matin. Notre âme a besoin de la Parole de Dieu. Nous allons alors laisser cette Parole de Dieu s’imprégner au fond de notre cœur.

Nous allons écouter ce que Dieu nous dit au travers de ce passage.

Qu’est-ce qui va nous nourrir aujourd’hui et qui va être source de vie pour nous ?

Divine Parole, nous nous ouvrons à toi. Nous te recevons. Nous t’accueillons. Nous t’acceptons en nous. Remplie-nous. Nourrie-nous. Sois notre force aujourd’hui. Que par toi nous soyons forts, nous vivions, nous triomphions. Nous te voulons toujours plus en nous alors nous te lisons, te méditons de plus en plus, amen.

Et nous savons que la Parole, c’est Jésus. Laissons donc le Seigneur nous visiter pendant notre épreuve. Il est plus près de nous que nous pouvons l’imaginer.

Biarni: un nouveau héros chapitre 3

Grâce au traitement de la gelée bleue, Léo semblait ne pas souffrir d’un quelconque traumatisme suite à son agression. Biarni en était soulagé. Cela permettant à Léo de continuer à vivre sa vie sans séquelle et surtout de poursuivre le petit jeu de séduction entre eux deux. Donc tout semblait aller pour le mieux. Biarni rentrait d’une de ces patrouilles quand tout à coup, il entendit des hurlements venant de l’appartement de Léo. Il se précipita pour porter secours à son voisin. En arrivant sur les lieux, il vit une énorme pieuvre de gélatine rouge. Cet énorme monstre avait englué dans ces tentacules, Léo. Le super héros vit rouge et essaya de tirer Léo des griffes du monstre. Cela en vain, le monstre esquiva toutes les attaques du héros. Le monstre réussi à s’échapper ne laissant derrière lui des traces gluantes rouges.

« - C’est quoi ce bordel ?! Une autre gelée ?! S’affola le super héros.

- Non, ce n’est pas un de mes congénères. C’est autre chose créé par l’Homme. Répondit la gélatine.

Sérieusement ?!

J’en ai bien peur, il faut le rattraper avant qu’il ne blesse Léo. »

Ce que Biarni fit, il suivra les traces de gélatine rouge jusqu’à un immense entrepôt. Biarni défonça les portes de l’entrepôt et surprise, il se retrouva dans ce qui semblait être une forêt composée d’arbres en chips ?! Les chips du tronc étaient disposé de manière à ressembler à de l’écorce. Pour le feuillage était fait de chips enrobées de salsa.

Ce feuillage croustillant forme une canopée d’avocat. Le super héros s’avança dans cette étrange forêt.

« - Mais qu’est-ce que c’est… D’abord un monstre pieuvre et maintenant une forêt de chips… Se dit Biarni ».

Tout à coup le héros entendit un cheval au galop. Il vit débarquer un cheval fait de tranche de pain à la crinière de jambon ibérique à taille réel. Biarni se retrouva bouche-bé devant cette créature comestible totalement irréel. Il remarqua que le cavalier était une tortilla à taille humaine chevauchant l’étalon alimentaire. En fait le cavalier portait un costume de Zorro fait d’encre de seiche solidifié.

« - ¿Holà hombre, que fais-tu ici ? Demanda le cavalier.

- Euh, je suis à la recherche d’un jeune homme enlevé par une pieuvre. Répondit le super héros.

¡Qué ! Tu veux t’en prendre au compagnon de notre roi. Ye te laisserai pas faire. »

La tortilla géante sorti une épée en bretzel, tout en faisait ruée son cheval. Pour foncer sur le géant blond. Biarni réussi à éviter la charge de la tortilla grâce à ses nouveaux réflexes de super héros. De rage la tortilla, envoya son épée dans la direction du héros. Sans y réfléchir Biarni croqua l’épée quand elle passa au niveau de sa bouche. Et surprise cette épée était tout à fait comestible, bien qu’un peu sec et très dur.

« - J’ai une idée pour sortir Léo d’ici, tu vas manger tous tes adversaires alimentaires. Pensa la gelée.

- Comment veux-tu que je mange de la bouffe qui fait la taille d’une personne ?! Répondit Biarni à la suggestion de la gelée.

T’en fais pas, je vais te donner un nouveau pouvoir, la supra-digestion comme ça tu auras suffisamment de place, pour dévorer tes adversaires. La gelée essayant de balayer les inquiétudes de son hôte.

Ça m’a l’air foireux comme plan. Pensa de manière sceptique le héros.

Eh ! Je te rappelle que ma vie est liée à la tienne. Tu crèves, je crève, c’est clair. Mais, si tu as une meilleure idée, je suis toute ouïe.

…

C’est bien ce que je pensais. Aller, à l’attaque ! Exhorta la gelée. »

Biarni se jeta sur le cheval, il commença par arracher les pattes avant du cheval pour l’immobiliser, le cheval se cambra et désarçonna son cavalier. Des blessures du cheval se déversèrent un fleuve de sangria. Les yeux de Biarni brillaient d’un bleu fluo.

« - ¡Cobardo! Tu oses t’en prendre à un pauvre animal de la manière la plus horrible. Siffla la tortilla géante.

- Je le prendrai comme un compliment venant de la part de kidnappeurs et de maquerelles. »

Il termina de dévorer le cheval en quelques bouchées. On n’entendit que le bruit des mâchoires. Cric-croc, shrump et slurp. Le cavalier détourne le regard de l’horrible fin de son fidèle destrier. Le super héros se retrouvait couvert de la sangria rouge du cheval. Tout ce liquide rouge mettait encore plus en valeur la rondeur de ses épaules, de ses pectoraux et de son ventre. Le spandex du costume imbibé de rouge, accentuait encore plus la forme ronde des muscles et du ventre du super héros. La tortilla essaya de se battre cependant son premier coup de poing se retrouva dans la bouche de Biarni. La tortilla se retrouva manchot. Le héros, tordit le cou, à la tortilla, pour mettre fin à ses souffrances. Il ne faudra pas longtemps pour qu’il fût englouti.

Le super héros continua sa route jusqu’à sortir de cette forêt de chips. Il se retrouva devant un bassin d’eau bouillante, il y avait çà et là des taches oranges, d’un coup toutes les taches se rassemblèrent en une vague forme humanoïde, une espèce de bonhomme en pâte à modeler orange.

« -Ah, ah tu as réussi à vaincre Raoul mais pas moi…

- Raoul ?

Oui Raoul la tortilla, t’aurai voulu qui s’appelle Baptiste, Jean-Marc, Kader, Xao Ling ou encore Murakane. Franchement j’en étais où moi… Ah oui parce que moi je ne suis pas un putain de poseur avec des discours hyper long et des mots en espagnol pour me la péter. Ce bouillon sera ton tombeau Ah Ah. »

Le bonhomme orange créa un torrent de soupe à déverser sur Biarni.

« - Tu vas finir noyé pauvre fou ! Ah ah ! N’essayes pas d’avaler, ton estomac ne pourra jamais contenir une telle quantité de soupe. »

Le personnage orange perdit de plus en plus de masse.

« - Merde, arrête de me bouffer, je t’en prie, je vais t’aider à faire sortir le prisonnier. »

Biarni arrêta d’aspirer le bonhomme orange

« - Essayes de me trahir et je bouffe ce qui reste de toi.

- Pas de soucis, tu n’as qu’à te mettre sur la croix rouge pour pouvoir accéder directement à la cellule du prisonnier. »

Le bonhomme orange tira sur un levier faisant tomber une cuve d’eau chaude sur la croix rouge.

« - Quel abruti, s’il croyait que j’allai l’aider. Merde ! Pi…

- Slurp burp ! »

Biarni fini de se débarrasser du bonhomme de soupe. Il continua son chemin jusqu’à tomber sur un labyrinthe composé de pop-corn.

« - Putain sa fini jamais cette merde ! Sérieux c’est quoi cette obsession pour la bouffe ! »

Dans un élan de fureur il mangea son chemin à travers le labyrinthe, quand tout à coup il entendit un mugissement. Un énorme minotaure fait à partir de steaks, le monstre portait une armure en frite ainsi qu’un bouclier et un glaive fait tous deux dans la même matière.

« - Viens pas me saouler, c’est pas le moment. »

Le combat fut de courte durée étant donné la taille de l’adversaire, juste quelques coups suffirent au héros, pour dévorer le minotaure, sous le coup de la colère et du desespoir. Tout ce qu’il restait du minotaure était le ventre gonflé de Biarni sa bouche taché de sauce barbecue.

« - Buuurrrppp. Bordel *uf*Faut que Urgh je me dépêche de sauver Léo. Exulta Biarni. »

Une grande double porte en bois apparut avec une mélodie de victoire.

« - Sér-urp-ieux ! S’exaspéra Biarni. »

Biarni se traina jusqu’à la porte et il sentit de nouveau l’effet de la supra-digestion. Le corps de Biarni se transforma, il gagna deux bons centimètres de hauteur, prenant une bonne dizaine de centimètres au niveau de l’embonpoint, sans parler de la masse musculaire accrue.

Derrière cette porte se trouvait un jardin avec une pelouse en glaçage vert, le bois des arbres était fait d’un mélange de chocolat noir, au lait, blanc. Ces arbres était chargé de fruit confit brillant de sucre. Les fleurs multicolores étaient composées d’une tige en pâte d’amande vert tendre et la corolle était faite de pétales de guimauve de toutes les couleurs possible.

« - Eh beau blond sa te dirait de prendre ton pied ! S’exclama un éclair au chocolat. » Cet éclair exhibait son derrière avec le trou pour le remplir en vedette. Une énorme religieuse à la vanille tenta d’écraser Biarni.

« - Repend-toi de tes péchés contre-nature, mon fils. Ce n’est pas naturel de vouloir coucher avec une personne du même sexe. Déclama la religieuse.

- Mais barre-toi la grosse bourge.

Comment oses-tu le tenté, Satan ! Oh pauvre âme égaré, pour le salut de ton âme je vais devoir te tuer, pour t’éviter les tentations de ce monde, puisque je suis la gardienne de la sainte morale de notre seigneur. Annonça la religieuse. »

Avant même que la religieuse n’ait eu le temps de bouger, la partie supérieure de la pâtisserie fut arraché par Biarni. Les restes de la religieuse s’effondrèrent en une masse informe de pâte à choux et de crème. Cet amas informe attaqua Biarni cependant le héros réussi à dévorer tous les restes de la religieuse.

« - Ouah, cette religieuse était pas fraiche, je me sens nauséeux. Pensa la gelée

- La coincée du choux est enfin morte, on est libre les mecs ! S’exclama l’éclair »

Des dizaines de pâtisseries sortirent de tous les coins pour venir remercier le super héros pour les avoir libéré du joug de la didactrice.

« - Notre héros, si tu veux aider le prisonnier du boss, va falloir vaincre le kraken en gélatine.

- Comment je peux te faire confiance ?

Ecoutes je serai stupide de te mentir, tu as déjà réussi à vaincre Raoul, le bonhomme soupe, le minotaure et l’autre folle. J’ai pas envie de finir comme eux. Je suis bien trop jeune et superbe pour finir sur tes hanches. Expliqua l’éclair

Si tu mens tu subiras le même sort que les autres. »

Le super héros s’avança vers le fond du jardin il se retrouva devant le kraken en gélatine. Le combat se passait mieux que la dernière fois, grâce à la puissance gagnée de ses anciens adversaires. Le kraken en gelée fini dévoré comme le reste des adversaires de Biarni. Enfin la dernière porte apparut avec la même mélodie de victoire.

Quand il ouvrit la porte, il se retrouva dans un donjon, Léo était attaché à une table d’expérimentation et de l’autre côté de la salle se trouvait un homme en blouse blanche.

« - Ne t’en fais pas, mon amour, je vais te libérer du joug… Comment as-tu pu entrer ici ?! Qu’as-tu fais de mes enfants ?! Apostropha l’homme.

- Oh tu parles des casse-croûtes que j’ai bouffés, pendant que tu faisais des trucs bizarres à Léo. Et je suis là pour libérer ta victime.

Bon dimanche de Pentecôte à vous tous mes chers frères et sœurs.

Ce matin, nous n’avons qu’une prière :

Viens, Saint-Esprit, viens remplir mon cœur. Je t’ouvre la porte. Viens établir le règne de Dieu dans ma vie. Prends ta place sur ton trône. Mon corps est ton temple. J’ai besoin de toi, amen.

Nous n’avons aussi qu’une seule espérance :

La promesse est pour chacun de nous.

Aujourd’hui, restons dans cette attitude de foi et de reconnaissance. Le Saint-Esprit descend sur nous et nous donne la force de mener une vie sainte et pure à la gloire du Père. Alléluia.

Les viandes définitives…

D’abord la salle. Une splendide réussite du couple Piège, Jean-François et Elodie, qui ont conçu, organisé et décoré cette salle superbe. On les savait exigeants, les voilà inspirés. Cuivres éclatants, marbre, banquettes claires, bar rutilant, salle lumineuse grâce à un éclairage très étudié, cuisine ouverte éblouissante en fond de salle, et last but not least, l’armoire des viandes qui permet de faire son choix suivant la race et le stade de maturation.

La carte, riche, variée, tourne autour de la broche et de la braise. Quelques beaux poissons de pêche de petit bateau, du homard, des crevettes, saisis en aller-retour avec des légumes de saison en papillotes sur la braise. Et les viandes ! Choix des races et races de choix : Blonde d’Aquitaine, Noir de Baltique affinée au bois de hêtre, Bavière, Black Market d’Australie, et en prime gigot d’agneau (pour 2) et volaille de Bresse (pour 2). Des légumes, des frites, de la mousseline de pommes de terre, des sauces, tout est prêt…

Entrées fraiches et originales dont un étonnant et japonisant Riz Koshihikari grillé (grains courts à la saveur très marquée) sur lequel sont posés des petites tranches de maquereau au vin blanc, et raifort. Le chef est japonais, Shiniya Usami, donc à l’aise avec ce mélange des genres.

Comme une Pizza soufflée sur la braise rappelle les beaux jours de la brasserie Thoumieux. Toujours aussi étonnante, toujours aussi délicieuse et originale avec à l’intérieur Saint-Jacques, truffes, oignons et lard. Du riche et du bon.

Puis l’Entrecôte vint… Black Market d’Australie comme pédigrée, maturation idéale, cuisson d’exception pour préserver le goût et la tendreté mais aussi la cuisson demandée, une pièce superbe, du gras comme il faut, dans laquelle le couteau s’enfonce sans résistance, et la saveur, my God ! Sans doute, une des meilleures entrecôtes qui puisse se goûter grâce à tous ces critères réunis. L’Entrecôte définitive… après on peut arrêter.

Variation sur le thème, le Filet de bœuf Prime Angus Kansas USA est de la même tenue et teneur. Une perfection.

Les accompagnement sont à la hauteur : pommes grenailles confites à la graisse d’oie (exceptionnelles), et une douce mousseline de pommes de terre. Plusieurs sauces à disposition mais non indispensables avec une telle qualité de viande.

Les desserts maintiennent le tempo avec des Churros de folie servis avec une glace vanille et une petite coupelle de sauce chocolat pour les tremper. Dangereux… Plus raisonnable l’Ananas à la broche et sa glace citronnelle apportent une note de fraîcheur bienvenue.

Carte des vins de haut niveau dans la plupart des appellations avec des sélections pointues et des grands noms. Choix de sept vins au verre de 8 € à 12 € dont un sympathique Clot de l’Origine de Marc Barriot en Minervois, rouge, cuvée Le P’tit Barriot. Service parfait, accueil itou, et tout roule comme une Rolls.
