Just made this recipe and it turned out great! I used tahini instead of almond butter. For the broth, I used Better than Bouillon No Chicken Bouillon with great results. I'd also suggest adding the lemon a little at a time, because I ended up with just a bit too much.
Will make again!

Adventures in Ameliatarian Challah

I haven't been very satisfied with vegan challah recipes I've found online, so I've been trying to come up with my own.
My big hypothesis here is that egg is really not necessary as a binder in the challah; instead, it primarily serves as a source of delicious, delicious saturated fat. So I'm just using honey and coconut oil in the dough.
Today I actually tried adding some chickpea flour as well, in case having some extra egg-like binder would help, but it didn't seem to make much difference. It may have made the dough a tad denser.
I'm also experimenting with ways to make it brown and shiny. Honey mixed with water and brushed on near the beginning of baking seems to work well (if you put it on too late, it won't have time to crust up and get shiny).
These two loaves disappeared in one meal with just three adults and one toddler... I think this recipe needs more testing. Lots and lots more testing. 😋

I dug up this recipe from my personal archive because it's my very favorite peanut stew recipe. It's different from many peanut stews, which in my experience come out more heavy and creamy than I like; it goes a little lighter on the peanut butter and heavier on roasted peanuts on top.

I've made this recipe and it's good! One note of caution: I find that this and other recipes from Woks of Life tend to go lighter on the flavor in the sauce than I prefer. You probably want to include less broth and more of the other flavor ingredients.
