This has been the best tasting thing I have made in a long time: Italian Pot Roast (or Stracotto alla Fiorentina) served over Parmesan Polenta. I decided to make this last minute and I’m so happy I did. The sauce on top is full of hearty flavors like onions, sweet carrots, celery, and tomatoes and the roast? Man, the roast is tender and delicious. All of that over polenta?! I must be in food heaven!! Plus, we have SO much leftover sauce that I’m probably going to serve it with rice tomorrow for lunch. This is literally a win all around. I love leftovers.
