For the past 10 years or so, restaurants have been getting progressively louder. A recent study, outlined in USA Today, says high noise volumes can affect nearly every aspect of the dining-out experience, right down to how the food tastes. Loud music can cause patrons to miss out on normal sounds, like the crunch, crackle and fizz that all add to the pleasure of dining. Distractingly high noise levels also can divert attention away from the rest of your senses – research suggests that loud noises can diminish the ability to taste sweet and salty flavors, while high-tempo music has been found to cause diners to chew faster or to forget about the taste of their food altogether.
Restaurants are taking note of the effect that noise can have on patrons and, conversely, that patrons (particularly those from the younger generations) can have on the prevailing levels of noise. Millennial diners, who tend to view restaurant visits as opportunities to socialize, prefer an open layout, visible kitchen, lively bar and communal tables, which all contribute to elevated sound levels. Even though the senses seem at odds with this trend of high-decibel dining out, noise control has proved difficult to accomplish. A few solutions that are growing in popularity include sound-absorbing materials, hourly noise checks by restaurant management, and ceiling panels that reduce echoes.
