  Brace
Copenhagen, Denmark
  Although it has only been opened for a short amount of time, it is already making a culinary statement in the Copenhagen foodie scene. In fact, Brace is a result of a combination of Italian cuisine and the Nordic kitchen. The explanation comes easily: Nicola Fanetti, the Michelin-starred chef, is a natural lover of Italy and all that concerns culinary concepts from the country. So, he added to this love some ingredients from the Nordic cuisine, using always natural products. This concept is rare in Copenhagen, so, the restaurant assisted a fast recognition that is already perceptible when we are talking about Copenhagen’s finest restaurants.

  Le V. Vernet
Paris, France
Under its monumental stained glass dome designed by the famous Gustave Eiffel, The V Restaurant, from The Vernet Hotel, is a space that can awaken all our senses. Located in a sumptuous Parisian building, truly “Haussmann” style, with a nearly perfect location between the Golden Triangle of Paris and the Place de l’Etoile on the Champs-Elysées, it is possible to identify a completely contemporary look created by the designer of interiors François Champsaur. With a century of history, the harmonious interior seeks to pay homage to the Parisian elegance and the French craftsmanship from which it is impossible to look away.

  Bar SixtyFive at Rainbow Room
New York, United States
Opened in 1934, The Rainbow Room was the first restaurant to be located in a high-rise building and remained the highest elevated establishment atop a skyscraper in the United States for decades. The Rainbow Room was conceived to promote the Rockefeller Center. It was designed by Associated Architects under the supervision of architect Wallace K. Harrison and interior designer Elena Bachman Schmidt.
The Bar oozes old-school glamour, marble tables, low lighting and plush cocktails which ensure a chic experience. The floor-to-ceiling windows provide panoramic views on three sides of the Lounge. Central Park and the George Washington Bridge are visible to the north and the Empire State and Freedom Tower to the south. The view simply takes anyone’s breath away.

Cap Horn

The Cap Horn is a Danish restaurant placed in one of the most touristic places in Copenhagen, the Nyhavn area. The location turns this restaurant into a great stop to be mesmerised by the sweeping views and the energy behind the multiple canal boat tours all over the city. Considered the first organic restaurant in Denmark, the restaurant is exceptional for its charming interior and its high-quality ingredients, most of which are organic. Specialities include freshly caught fish, free-range lamb and steaks.

In 2004, the Restaurant Cofoco opened its doors at Abel Cathrine Gade 7, and since then it has opened 15 restaurants, which serves several dishes from French, Italian, South American, Japanese to Nordic cuisine. The dishes are made with fresh Danish product, but the taste is inspired by French and Southern European cuisine. The restaurant offers trendy seating arrangements including the ‘long table’, a table where the unknowns can eat together, featuring comfy high-legged bar chairs.

When you enter Höst, your attention is instantly drawn to the minimal decoration. The discreet lighting and the brick walls report to a rustic interior that reminds a countryside, respecting a straight architecture. As a matter of fact, you will feel like you are inside of a Nordic portrait. Comfort is achieved easily as the owners let you attend freely without any social constraints or restrictions of any kind. Simply put, you feel at home.
Regarding the gastronomic concept, Höst bases itself on traditional cooking mixed with a modern Nordic food. If there’s a key element for the success of Höst, it is definitely the quality of the space and the food.

The Mark

The Mark Restaurant features an innovative menu specially crafted by NYC’s pre-eminent chef, the award-winning Jean-Georges Vongerichten and a masterful design by Jacques Grange. The designer conceived the restaurant with a sense of comfort capped with high visual style, all while balancing elements of grandeur, colour, artistry, and intimacy with a grain of humour. Furniture is designed by Mattia Bonetti and the bronze and glass ceiling by Eric Schmitt.

  The Knickerbocker

Located at the Knickerbocker Hotel, this restaurant benefits from the expertise of the renowned Chef Charlie Palmer. Throughout a meal, from beginning to end, without exceptions, as soon as one puts the first piece of food in their mouth, they feel a seething sensation of pleasure, comfort, memories and places.

Throughout his restaurant, Chef McCaskey pays reverence to the serenity and abundance found across Maine, including sundry of subtle nuances and refined details. Furthermore, several of the products displayed on the restaurant’s tasting menus are prevenient from the Deer Isle area, specifically Penobscot Bay as well as besieging islands.
Acadia features a contemporary menu that becomes even more enticing with an extensive collection of cocktails, wine and beverage pairings. The Yukon “risotto” with green apple, truffle and fines herbs or the Stonington lobster with masaman curry and Vietnamese herbs are undoubtedly a must try main dishes.  By virtue of such, it comes as unsurprising that Acadia excels in various areas, thus being a fine dining destination nestled in the up and coming South Loop of Chicago.

The Everest Restaurant is located on the fortieth floor of the Chicago Stock Exchange and provides exquisite wine and cuisine curated by renowned Chef Joho. Bronze sculptures created by acclaimed Swiss artist Ivo Soldini grace each table and mesmerize its beholder, as it was our case, and marvellous paintings by Chicago artists Adam Siegel and Tim Anderson decorate the walls. In addition, the stunning dining room also features jaw-dropping sculptures by Virginio Ferrari.
Jean Joho’s French cuisine is characterised by a combination of the finest seasonal fare made with local and regional ingredients. The restaurant features several course menus, from the acclaimed multi-course degustation menu to the vegetarian one, whichever you try, you are guaranteed to have a unique dining experience.

Best of 2017: New Restaurants, Cafes and Bars in Copenhagen
Another year, another list of fabulous places to try in Copenhagen! One thing that this city has in spades is “new;” there’s never a shortage of new restaurants, bars, hotels and shops closing and opening. With an adventurous and diverse food scene, Copenhagen always delivers on cutting-edge choices, as well as great coffee and a growing list of spots that can fulfil more niche desires, such as vegan options.
As for hotels, we’re excited to welcome a few new entries to Copenhagen. This is an area where Copenhagen has struggled – mid-priced, beautiful hotels – and the recently opened options aim to fill that void.
Whether you’re in the mood for the perfect cup of coffee, a great meal or cocktail, these are the best new restaurants, cafes and bars that opened this year in Copenhagen:
New Restaurants
Restaurant Barr
Perhaps the most talked-about Copenhagen restaurant of the year, Barr is all about presenting classic European “beer belt” dishes in a beautiful, modern way. Housed in noma’s former digs, Barr is at once both familiar and exciting. Their selection of beers and snaps is a treat, too!

    Sanchez Cantina
Thank the food gods, Rosio Sanchez has opened a Mexican cantina! Sanchez is the latest offering from the former-noma pastry chef, current Taqueria operator. Her two Hija de Sanchez locations are for fast bites; Sanchez is where you get to sit down and enjoy yourself. A must-try for foodies and those who need their authentic Mexican flavors fix!

    La Neta
More tacos! La Neta, a collaboration between Stockholm’s own La Neta and Mikkeller brewery, is your lazy Sunday, hangover, go-with-friends-before-a-big-night type of spot. Good, hearty tacos, beers and a bright interior all conspire to make La Neta a fun, low-key and affordable meal out.

Coffee Collective Jægersborggade & Bernikow
We’re big fans of Coffee Collective, so when we heard they were opening not one but TWO new spots, we jumped for joy. Their Jægersborggade location is a bigger spot on the same street as their previous bar, and the Bernikow location is an old bodega in the centre of the city serving up coffee cocktails and kombucha, as well as traditional coffees. Their interior are as laid-back and minimalist as ever. Yes to all of it!

    Muf Coffee
In need of a quick coffee to-go, or feel like sitting down with a book and something warm to drink? Muf Coffee on Istegade is your spot. The chic interior is just the beginning; they’re also serving up excellent coffee roasted by Copenhagen Coffee Lab. If you’re lucky, you may just catch Muffin, the adorable Boston Terrier after whom the shop is named.

    Kaffedepartmentet
There are a bunch of great places that have opened recently in Nordvest, including Fovl back in 2016, and Kaffedepartmentet this year. They roast (and sell!) their own beans, make a mean cup of Aeropress coffee, and the interior is a minimalist’s dream. The cafe is especially nice in the warmer months, as they have extensive outside seating.

    Gló
If you’re looking for vegan and/or raw food options, check out Icelandic chain Gló. They have everything from chia seed pudding for breakfast to fantastic, fresh salads. They also have a number of dessert, coffee and juice options. The location in the basement of Magasin is great for a shopping break, or a little refuge during a busy day.

Peryton
With a regularly rotating wine list and a few little snacks thrown into the mix, Peryton is a fantastic, centrally located wine bar for after-work drinks. They also hold consistent exhibitions and events, so be sure to check their calendar!

    Apollo Bar & Kantine
Definitely the trendiest entry on the list, Apollo is the “everyone who’s anyone” type spot. Opened by Atelier September-founder Frederik Bille Brahe, Apollo offers drinks as well as a dish of the day. The location, right in the Charlottenborg courtyard, can’t be beat.

The vibe is very casual, but don’t take that to mean they aren’t serious about wine; the choices are very good and the staff know their stuff! Between 4 – 6 pm, you can get a three-glass tasting for 100 DKK.
