Cuban Congri Rice

Congri is the name for this rice recipe which is similar to Moro rice, but instead of using black beans, it’s made with red kidney beans.  In Nicaragua they make a similar rice that is called “Gallo Pinto.”

In a medium steel pot sauté and brown a few pieces of salted pork belly (tocino) in olive oil. Add two fresh crushed garlic cloves, one cup of diced white onions, and sliced green bell peppers to start the process of making them. Add the dark red kidney beans after the pulp from the can is removed through a strainer and set aside to make the black water. Add one tablespoon of salt, one teaspoon of ground black pepper, two bay leaves, and one tablespoon of cumin powder.

To make the rice add two cups of parboiled rice to the sofrito and three cups of the black water that came from the beans, cover and cook at medium-high heat for 25 minutes. Once cooked, stir the rice, add a drizzle of olive oil, cover and simmer for another 5 minutes.

A highlight of this rice is to eat a leftover portion for breakfast the next morning with two soft fried eggs on top.

In honor of American Thanksgiving coming up soon, what do you think is Fez and Lexi's favorite Thanksgiving dish? If you don't celebrate Thanksgiving, what you do think is Fez and Lexi's favorite meal/food/entree (it can be anything)?? Or you can answer this as though Lexi and Fez are taking a vacation in your home country! What would they eat in your country?

Hi bby! Thank you so much for sending me an ask. As for me, I hate thanksgiving and all the foods it has to offer except maybe Mac and Cheese and Pumpkin pie/cheesecake. Those are my ride-or-die bitchs. As for Fez and Lexi, I think Fez is the driving force behind celebrating thanksgiving. My man's favorites gotta be cornbread, turkey, and mashed potatoes. He's the one making sure to give Ash and Lexi a wonderful Thanksgiving because his Grandma did that for him (as best she could given she was a massive drug dealer). I don't think Lexi vibes with thanksgiving food or the holiday at all because of her previous home life, but she DOES love to bake so I'd say she's the one making the Pecan and pumpkin pie for dinner. And she'll do literally anything with Fez, so if he celebrates then she will too, and I think she'd actually LIKE it.

As for my home country/cultures meal, Fez and Lexi would have flan, congri, fricassee de pollo, and lechon, which I don't think EITHER of them would enjoy the lechon, but they would eat the flan and everything else.
