I bought a chest freezer recently so I can finally indulge my grandma instincts of Make An Unreasonable Amount Of Food For Not Much Money And Eat Of It For Months

Today I bought two rotisserie chickens and made SIX large chicken pot pies (9" pie tins), used the leftover carcasses and have chicken stock going in the slow cooker, with enough leftover chicken meat and veg to make chicken rice soup tomorrow for DnD and probably have quite a bit to freeze as well.

#totaled up everything cost abt $35-40 #including the foil pie tins because i did NOT have that many glass ones #which? for that much GOOD food? im quite proud #coulda done it for less if i hadnt used instant mashed potatoes but it saved enough hassle to be worth it #my family always made pot pie to use up leftovers from a Big Chicken Dinner #bottom 'crust' was mashed potatoes #middle filling was chicken bits and whatever veg we had mixed into the gravy #one crust on top #mom ALWAYS made her crusts by hand #but i decided to just use store bought ones #ive missed pot pie #but my teeny tiny freezers have never allowed for it really #because its most efficient when done in a Fuckoff Huge Batch #and my tiny amount of freezer and fridge space never made it worthwhile before

I hosted dinner for my book club friends this week and decided to do a couple of soups, salad, and dessert. One of the members is a vegan, so I wanted to have good veggie options. I was making a black bean soup in the crockpot, so needed to do the other one on the stove or in the IP. Had a super busy day, so the IP it was.

I’d bookmarked this receipt from somewhere (maybe an IP group I’m part of on Facebook) and decided to give it a go. I mean, what’s not to like about it?

It was super easy! I sautéed the veggies on the stove because I doubled the carrots and celery. Then I basically dumped in everything it called for -- minus the spinach, because I read in the comments that it got overcooked, and minus the pasta because I forgot to put the pasta in. But it was no problem-- I made the pasta on the stove and put it in at the end.

People seemed to like this. I know I did. So I’ll likely make again.

I continue to be skeptical that instant pot cooking is anything except an after the fact justification for buying an instant pot

#I say this having observed several instant pot owners now #yeah yeah okay fine stewing meat #maybe #and I guess timed chop-freeze-dump dinners? #but everyone I know who owns one is either an actual housewife or works exclusively from home for themselves #so the time pressure vs sticking something on a stove or in an oven and being within a couple rooms distance... #but like those things are big and seem difficult to clean I do not grok team #difficult to clean and finicky/breakable... #a dutch oven seems a lot more durable a lot more flexible and like it achieves the same stuff not even that much more slowly #idk I think the logistics of shingling leave-alone chores are also more annoying for most people so maybe I'm undervaluing that
