Traditional Salmon Rillettes
From The Country Cousin in An Academy Award Review of Walt Disney Cartoons
History
There's a lot of indistinguishable blobs of color painted in the background of this short. Conventional wisdom would suggest these would be sweet things like ice cream, however, I would like to offer up a more savory option.
Food
Rillettes is a type of preserved meat confit where said meat is stewed, shredded, and then stored in a sterile container like a can or a mason jar.
Since we've already had beef and pork the last two recipes let's go with a seafood option.
Ingredients
250 g of skinless salmon fillet
115 g of skinless smoked salmon
1 minced shallot
2 tbsp of chopped chives
White pepper
Salt
Water
50 g of unsalted butter
1 tbsp of sour cream or creme fraiche
2.5 tsp of chopped dill
1.5 tbsp of lemon juice
Cookware
Boiling Pot
Mixing bowl
Spoon
Non-stick pan
Mason Jars for canning if you choose
Directions
Add 4 cups of water to a pan along with the peppercorn, bay leaf, and lemon juice, then let the mixture boil. Once it starts boiling, simmer it for about 2-5 minutes.
Afterward, add the salmon while simmering. Keep poaching the salmon for about 5-10 minutes. Make sure to turn the salmon over to poach both of its sides equally.
When you’re done poaching the salmon, take it away from the heat and cover it. Then, put it in the refrigerator to cool down. Note that it can cool down to room temperature without having to refrigerate it, but it’d take more time.
While the salmon is cooling down, start working on the smoked salmon. Get a medium-size bowl and put together the smoked salmon, butter, olive oil, sour cream or creme fraiche, lemon juice, chives, and the shallot. Whisk this mixture well until all the ingredients are combined together perfectly.
Back to the salmon. Flake it, and heat it together with a tablespoon of butter and shallot till it’s soft. Then, wait till it’s cool and add it to the mixture you prepared previously.
Whisk the mixture enough so that it’s chunky. Afterward, season it with salt, white pepper, and a sprinkle of dill.
Your rillettes are now ready to be served. You can serve it on baguettes and top it with the watercress or any other vegetables you like. You can put the rillettes in two glass cups or mugs, and place them along with the side dish on a tray, for some fancy-restaurant vibes.

The price for each set is 13,000 yen, which is roughly $88.
Starting at the beginning of the month of April, special courses will be offered over 8 periods that last a week each.
The first period ran from April 1st-7th with Heartslabyul being that period's theme.
The Heartslabyul Set details:

The Heartslabyul Magical Drink costs ¥1,600
It contains apple juice, grape juice, iced tea, rose syrup, and strawberry syrup.
Coffee and tea are also available.
The second period will run from May 13th-19th with Savanaclaw as the theme.

The third period will feature the Octavinelle Dorm and run from June 24th-30th.

The website teases that sets for Scarabia, Pomfiore, Ignihyde, and Diasomnia will be "-Coming Soon-"
A "Secret" set is also teased. It seems that it will come after Diasomnia.

Admiral Hotel Manila- MGallery Launches Festive Afternoon Tea at El Atrio Lounge
I have been a big admirer of Admiral Hotel Manila - MGallery ever since it opened its doors last year. The reimagined Admiral Hotel pays tribute to an early 1940s iconic landmark and relives the grandeur of the city's Golden Age. We had visited this beautiful hotel on our own a couple of times already for their Admiral Club Manila Bay weekend brunch on the top floor, but this time, The Hungry Kat was invited to sample their new Festive Afternoon Tea that is perfect for the holiday season.
Set along the sweeping Roxas Boulevard, the Admiral Hotel Manila - MGallery is a gorgeous hotel offering a storied legacy, a prime location, and lavish indulgences in many forms. A gateway to the city’s vibrant past and present, this luxury boutique hotel is designed to evoke Manila’s Golden Age. Classic and contemporary Filipino-Spanish design and architecture elements have been reinterpreted into contemporary aesthetics with spectacular narratives and stories that make Admiral Hotel Manila – MGallery stands out among its peers.
You can immediately appreciate the hotel's aesthetics once you enter the lobby. Art and history come together at El Atrio lobby lounge. This is open from 6:00am to 11:00pm daily offering exclusive coffee and tea blends, cocktails, plus sumptuous patisseries from a local chocolatier.
For the month of December, guests can enjoy their luscious afternoon delights with the Festive Afternoon Tea at El Atrio. For P2,888 nett, this afternoon tea set is good for two to three persons and includes two rounds of coffee or tea.
Let's start with the savoury items on the top plate. You can find the Smoked Salmon Rillettes Choux with lumpfish caviar and the Seared Foie Gras with raspberry jelly on brioche toast. I love anything with foie gras so this was obviously one of my favorites.
On the middle plate you can find the Scallops Kilawin with mango salsa, Winter Root Vegetable Tartlet with whipped feta cheese, and the Black Truffle and Ham Croquette. The scallops kilawin was a surprising item, giving it a Filipino twist.
The bottom tier comes with sweet inspirations such as the Buche De Noel, Mille-Feuille with Christmas Spices including poached pear and salted caramel cream, Tatin Style Apple with breton cookie, plus the Milk and Dark Auro Chocolate Mousse. All of these bite-sized desserts are quite delightful.
Of course, the most important element of the afternoon tea is the tea itself. Guests can choose from a selection of TWG Teas which include flavors like English Breakfast, Vanilla Bourbon, Jasmine Queen Tea, Earl Grey Fortune, and Orange Blossom Oolong. Coffee lovers also have the option of having Vittoria Coffees including lattes, Americano, Cappussino, Macchiato, or the Bistro Pot Cafetiere by Nick Munro.
Instead of the traditional scones seen in British afternoon tea sets, Admiral Hotel Manila's Festive Afternoon Tea comes with the more savoury Vol-au-Vent Pork and Chicken Adobo that you can pair with liver sauce. This gives the set a more Filipino flavor that really blends well with the setting.
Another Filipino favorite is the Bibingka with coconut jam and sour cream that is also included in the set. You can really feel the Christmas spirit when you avail this festive afternoon tea set.
After enjoying our lovely merienda at El Atrio, we were given a short tour around the hotel led by Admiral Hotel Manila's Assistant Director of Marketing Communications, Katrina Nocom. Each boutique hotel in the MGallery collection tells a unique story, inviting guests to immerse themselves in tales of adventure, romance, history, and culture. For Admiral Hotel Manila, this location is right in front of the Manila Yacht Club so I'm sure there are plenty of stories to tell within these walls.
The Admiral Spa and the Fitness Center on the ground floor both offer health and wellness activities for guests. The spa has some promotions for couples this month so I'm thinking about getting some pampering done.
Then we went up to the rooftop level which houses the Admiral Club Manila Bay. This is a unique dining destination located on the top floor which comes with a stunning Manila Bay sunset and a catwalk table that will spice up your dining experience.
This is also where our family gathered together for a Sunday Brunch mini reunion earlier this year. The Admiral Club is a great venue for parties and events with its bright and colorful interiors.
Just outside is the pool area which is where you can enjoy the magnificent views of Manila Bay.
Guests can bask in the Sunset Hour at Coconut Grove with their unlimited cocktails paired with one savory platter from 6:00pm to 8:00pm for only P1,850 nett.
We wanted to stay longer to watch the Manila bay sunset, but we had one more very interesting place to explore downstairs. This was a room that we were curiously looking for during our last visit here but we just couldn't seem to find it. This time, we had Ms. Katrina to help us finally get inside. I'll tell you more about it on the next article!

Cochon Butcher, 930 Tchoupitoulas St, New Orleans (Warehouse District), LA 70130
A place that is inspired by Old World butcher and charcuterie sounds like they would have excellent housemade meat, including Genoa salami, fennel salami, boudin, andouille, tasso, sopressata, capicola, hog’s head cheese, rillettes, smoked salmon, ham hocks, venison and duck confit. Their sister restaurant makes their bread. They also make their own pickles, mustard, jellies, jams, and sauces. You can order from the counter and grab a seat, get full service from the bar side, or pop in for the housemade meat. It’s a deli, sandwich shop, and full service bar.
They had an Oktober Fest menu with currywurst, schnitzel, and pretzels. The regular menu includes small plates (e.g., wings, fried shrimp), sides, charcuterie, sandwiches, and sweets.
Moroccan spiced lamb ($16) with tzatziki and chili oil on pita: A thicker warm pita with thinly sliced lamb, tzatziki with chopped cucumber and dill. They didn’t use Persian cucumbers and left the (tough) skin on the cucumbers. The lamb flavor was nice but the sandwich was very oily (there was a big pool of oil). The sandwich was on the small side. The pickle slices were very sweet but also tangy. They didn’t go with the Moroccan lamb sandwich.
New Orleans style Bavarian pretzel with housemade whole grain mustard ($5): A thick pretzel that was too pale and had too much salt. It didn’t have the deep flavors of a good Bavarian pretzel. The mustard was good though.
There’s an outdoor patio with fans and indoor seating too.
