Spinach and Arugula Salad with Hummus-Dill Dressing & White Beans
My family is loving this spinach, arugula salad, and fennel salad! It is topped with a lemony hummus dill dressing (so easy to make) but the best part is the crispy white beans. They give this salad a pop of flavor and is a nice way to get my kiddos interested in both the salad and the beans.

Lazy brunch crepe recipe 👇
Made with just 5 ingredients for a easy gluten free meal idea. Make it sweet or make it savoury! I love filling it with peanut butter and sliced strawberries when I want a sweet version. So good!
Made with all whole ingredients for a clean version! So go ahead and eat 2!!
Makes : 6 crepes
__________________
• 2 cups buckwheat flour
• 2 1/2 cups of any plant milk
• 2 tbs chia seeds, ground
• 1 tsp garlic powder
• 1/4 tsp salt

Filling:
Get creative and use what you have here. For these I added vegan cheese, sauteed mushrooms and some fresh kale. But feel free to stuff with your favorite things. Vegan sausages, olives and salsa are also great in there!

1. Mix all the ingredients together in a bowl. You want the batter to be slightly runny.
2. On a medium-hot non stick pan melt some vegan butter or coconut oil. Add 1/4 cup of batter to the middle. Swirl the pan or use a spatula to move the batter into a large thin pancake.
3. Cook for 3 minutes then flip and cook for another minute or so.
4. Fill each crepe with toppings of your choice. Then drizzled it all with a reduce balsamic!

Quick and easy summer noodle soup! Cooks in 3 minutes for a perfect nutrient rich, busy night dinner! What toppings would you add? I like to add lots of raw veggies at the end and let my kiddos choose what they want. It helps give them a bit of say which I find helpful when going through a picky stage. We have made this version with so many different toppings so this is really more of a base recipe, or inspiration I guess. If you missed my stories a few days ago I hacked this recipe by using leftover miso soup we had! Literally on the table in 15 minutes!!
Anyhooo on to the recipe 👇
Serves: 6
Prep time: 10 minutes
Cook time: 10 minutes
• thin rice noodles (vermicelli style)
• juice from 1 lime
• soy or tamarin sauce
• 1 can drained chickpeas
• garlic powder
•8 cups of veggie broth
•2 TBS miso paste
(OR leftover miso soup, ideal have 5 cups and then add 3 cups water).
Toppings:
•Oyster mushrooms
•purple cabbage
•Spring peas
•Fresh Cilantro
•fresh tomatoes
•Toasted sesame seeds
•(optional siracha sauce for the adults)
Method:
1.In a large pot add the veggie stock, 2 tbsp of soy sauce, miso paste and half the lime juice. Bring to a boil.
2.Meanwhile, in a separate pan add the chickpeas, garlic powder and 1 TBS soy sauce. Cook over medium heat until they are slightly crispy.
3. Once the soup is boiling reduce the heat and add in the noodles, cabbage, mushrooms and peas. Cook for 3ish minutes or until the noodles are soft. If your noodles take longer to cook add them ahead of the veggies
4. Pour in the rest of the lime juice, then mix and laddle into a bowl. Add some chickpeas and top with the fresh veggies.
5. Enjoy!!!

If love to know 👇 ________________ . • 6 frozen bananas • 1/2 cup oat milk • @welokids banana chocolate granola bars • (optional) vegan chocolate chips __________________ In a vitamix or high speed blender add your banana and oat milk. It's important that the bananas are very frozen. Blend until it is smooth (yes it will sound awful at the beginning lol). Then pour into a bowl. . Next open your granola bars and slice them into small chunks. Fold the chunks into the banana nice cream. If using the chocolate chips add those as well. . Being plant based doesn't mean you have to miss out on this summer tradition! Plus soy has some great benifits to health! . Here is why: - high in protein - high in iron - high in vitamin, minerals and benifical fats -can be protective against certain cancers -some studies show benifits to fertility . ⚠️ what about the phytoestrogens found naturally in soy and breast cancer. Well the research does not suggest soy products increase your risk for breast cancer. In fact many studies show the opposite effect. Some of the conflicting results over the years may actually be because of the studies done on mice versus humans. Or the type of soy consumed (whole, fermented versus processed). As a whole, most dieticians and researchers suggest soy as a healthy and beneficial food. . . Recipe 👇 • 1 package of extra firm tofu • 1 cup of your fav BBQ sauce, mosquite works the best! •1 tbsp sesame oil * If your don't have BBQ sauce just mis some tomato paste, spy sauce, maple syrup, and paprika together. ______ 1. Slice tofu into steaks. Then place onto a shallow dish. Pour on the BBQ sauce and sesame oil and let it sit for 15 minute to an hour. . 2. Fire up the BBQ, to help prevent sticking I recommend brushing on some sesame or avocado oil over the grill right before placing the tofu steaks on. . 3. Cook the steaks for about 5 minutes before flipping. If they stick then wait another minute or so. They should release as they get crispy. Then flip and repeat on the other side. . 4. Once they are cooked you can slice them in half lengthwise (like the photo) or leave them as steaks. Eat with rice and grilled veggies or in a burger bun with grilled veggies and extra BBQ sauce! Gourmet the crap out of everything! That's my husband's motto anyways. Like these gourmet @beyondmeat burgers. Take their ground round, add spices, onions and make your own burgers! Recipe 👇 . We don't often eat processed vegan foods but when we do you better believe we will be gourmet-ifying it. From adding clean cheese, spices and tons of raw veggies to packaged mac n cheese. Or by adding spices, onions and such to vegan ground meat. And they have the added bonus of beefing (lol) up the meal. So we always get extra leftovers 😊 . ⚠️Recipe👇 • 1 package of@beyondmeat ground meat •1/2 small onion, chopped small • 1 tbsp paprika •1 tbsp garlic powder • 1 tbsp oregano • 1/4 tsp salt __________ Start by placing your defrosted ground into a bowl. Add in the spices and onion and mix well. Go ahead and use your hands. . Form the ground into patties and place them onto a non-stick baking sheet or parchment paper . Then pop them into the freezer for 15ish minutes. This helps firm them up and makes them easier to cook. . Then cook them on a BBQ until they are nice and done! Top with your favorite toppings. 🤤Celebrate the weekend with a charcuterie board!! Who says these are just for adults!! . Featuring: @culcherd @nudfud @earthandcity @stasispreserves @mightyfinefoods @acropolisorganics @jewelsunderthekilt . It was so fun sharing this vegan gluten-free board with the boys! Only not much sharing happened as they devoured this board in minutes 🙄! The perfect cottage snack after the morning out on the lake! . Charcuterie boards are so much fun to eat and are actually very easy to make. Especially when you have a vegan gluten-free Charcuterie board KIT like this one!!! So easy to assemble and perfect for snacks, apps, or lunch! I am planning on writing up a 'how to make a vegan charcuterie board' if there is interest so let me know 👇 . but here is a rough 'how to' assemble a pretty charcuterie board: . • CHEESE: start with a big cutting board or large plate. Then add in your vegan @culcherd cheeses. I like to put them on one end of the board. •DIP: then grab some small bowls and add in the delicious dip. This red pepper dip by @stasispreserve was 👌. My 2 year old licked the bowl clean!!! •CRACKERS: then add in the crackers. To make it pretty fan them about in a snake like pattern 🐍. •FILL: Then fill the spaces! add in the olives and pickles! • extra VEG: pick a few of your fav veggies. We love cucumbers, palm of hearts, tomatoes, radish but the options are endless. •extra FRUIT: feel free to add some fruit as well. Grapes and raspberries pair very well in a Charcuterie board!! . And that's it. The main idea is to get creative. It's pretty hard to make a charcuterie board look ugly.
