I have to give another shout out to the superhealthykids crew -- they have such great recipe ideas!  We had some chocolate hummus this summer and loved it, but I am much happier with our kids eating this mix.  It was super easy to make and we’ve all enjoyed snacking on it, especially with some pretzels.

Today’s boxes:
Snacks: Pretzels with homemade chocolate hummus (recipe to come!), banana, and a slice of a fig bar (Ms is the gluten free kind we found at wegmans)
Hs lunch: breadsticks he made yesterday, Pb sandwich hearts (ener g bread!), sweet potato mini muffins (sprinkles to cover up the smooshed tops, so delicious yogurt, puffs (old school treat for him—will remind him of his “baby days”), and an attempt at some cheese.
Ms lunch: the rest of the banana and the Pb sandwich scraps, sweet potato mini muffins (smooching not hidden), blueberries and grapes, pepperonis, and one more slice of her GF fig bar.

Weekend snack/lunch boxes can get a bit tricky -- for example, yesterday morning, my sweet husband took H to get bagels and then to go fishing.  It was so fun, but H snacked on bagels all morning and that was enough to disrupt his schedule.  Then, today, Travis wanted to make pizzas for lunch (gluten/dairy/everything free for me and M)...H had a blast making them but then only ate the breadsticks (god forbid sauce/cheese touch his lips, apparently) and didn’t really eat anything else.  M couldn’t wait for it to finish, so she had a box with some open spaces to start with and then dug into that pizza like she’d never eaten before (note the sauce on her nose...)
SO, what did I at least pack!?!?
At the playground, M crushed her snack box of pretzels with strawberry hummus, blueberries, and banana.  H ate most of his snack box of a dried strawberry, pretzels, and crunchmaster crackers, but his banana “was brown” so he wouldn’t touch it (they are often brown, so I’m not sure what that was about...!).  Their lunchboxes had some banana with peanut butter, some leftover smoked pork from the grill, and then M had cantaloupe with blueberries plus a few sweet pickles, while H had leftover fig bar and yogurt.  This week will be our first “real” week with my back to school schedule, so we will hopefully continue making progress on this food journey!

We recently discovered this bread at Kroger and I’m wondering where it’s been in my life for the past year...although, not eating bread has definitely helped my carb count.
I’ve decided it is impossible to have totally “normal” tasting bread that meets our allergy requirements.  BUT, this bread comes darn close.  Lightly toast as they suggest and the texture is really great.  It reminds me of bread my husband has made for us, but it is less dense and has lasted longer!  I bought it on Thursday morning and it still feels freshly baked on day 3.  
We are definitely going to be on the lookout for more of their products!  The website lists a great variety!

Today’s yumbox menus:
M’s Snack: Bananas, Blueberries, Peanuts, & 3/4 Gluten Free Fig Bar
H’s Snack: Annie’s Cheddar Bunnies, Blueberries, 1/2 Fig Bar, and a dried strawberry
Lunches: Ham Sandwiches (bite-sized shapes for H and the scraps for sweet M -- both on the Ener g bread), Veggie Straws, their leftover fig bars, cantaloupe, and bananas with peanut butter (H’s have sprinkles to resemble “cup cup cakes”), and then each have 2 pretzels -- M’s dipped in the yummy strawberry hummus and H’s are dipped a port wine cheese that my husband’s been snacking on.

And now for today...
H has pirates booty, a raspberry with cream, and banana for snack. M has the other half of the banana, some blueberries, and a gluten free fig bar.
Lunch: We found this bread that we can eat AND it tastes great! (Link to come.) So H has PB sandwich shapes and luckily M doesn’t mind having the scraps :-). They split a pack of organic gummies, each have pretzels in strawberry hummus, crunchmaster crackers, and slices of a red pepper. Then M finished with some dried pineapple while H has a fig bar.
UPDATE: boxes were a great success. Neither liked their pepper slices, but both tried them!! That’s my goal — let’s at least try everything! H also wasn’t a fan of the strawberry hummus, but, again, at least tried it!

I completely forgot to take my pictures yesterday morning. Hear were our lunch packs:
M has Brussels sprouts, berries (and a raspberry with so delicious whipped topping in it), a sweet potato muffin, leftover chicken/rice, and some ham. Her snack box (no pics) had a cereal bar and fruit (neither kid liked plums...).
H’s big protein fix was in his snack box (no pic) because he usually eats best with his nanny — so I made ham/cheese on skewers, then gave him some veggie pringles and plums. For lunch, he had some rice, Annie’s mac n cheese, crunchmaster whole grain crackers, so delicious yogurt, sweet potato (mini sized) muffins, and a raspberry with cream.

These are the sweet potato muffins I made last night!  I didn’t follow the directions perfectly for measuring my sweet potato AND I am still playing with some egg swaps, so the centers of my “big” muffins were gooey.  I did a tray of the big ones and then used a mini muffin tray for the rest of my batter -- the minis turned out great.  And after sitting in the fridge over night, the centers of the big guys have settled quite a bit.  I don’t feel bad eating them gooey since I didn’t use eggs!  ANYWAYS, all of that said, the flavor of these is killer.  Just licking the batter from the spoon felt like dessert, even when they are so healthy!

Today’s snack boxes went to the pool with “Gigi” (my mom) and the kids.  H is so excited to play with her that he won’t eat with her around, so his was lacking in the “healthy” department: PB Bunnies, Veggie Sticks & Mango Chips, and a handful of CHEETOS!  (My mom said his eyes got HUGE when he tried them, he was so excited.) M’s was slightly better with the same “chips” but a cranberry orange grain & seed bar (Enjoy Life – just got at Wegman’s) and some raisins.
H’s lunchbox: Berries w/so delicious whipped topping for dipping, so delicious yogurt, a skewer with ham and cheese, sweet potato muffins (recipe coming next), and “ants on a log” – one with enjoy life chocolate chips and the other with raisins.
M’s lunchbox: Berries (she just licked the dip, doesn’t really “need” it), the ants on a log options as well, corn/bean/rotel mix, sweet pickles, a bigger sweet potato muffin, and then a space we filled with some chicken and rice.

After watching Wally Kazam and his snow adventure today, was inspired to be a bit creative with the rice for dinner tonight...H was very impressed. Still didn’t eat much of it, but he was excited. (Sushi rice with coconut flakes and some sliced dried pineapple arms...could do lots more for the face next time, but just grabbed the sprinkles tonight!)

All packed for tomorrow! My first morning at school and nanny Erica’s first day back!
Snacks: strawberries and some “so delicious” coconut cool whip I’m hoping they’ll try (wegmans has SO many allergy friendly options!), raisins, and pretzels w/strawberry hummus for M plus bunnies w/PB for H.
Lunch: M has a spot for chicken I’ll be eating, a corn/bean/rotel mix she loves, spinach muffins w/PB, blueberries, cantaloupe, and some mango chips I found at wegmans I hope they like!
H has the mango chips, spinach muffins with sprinkles, the same fruit, a fig bar, and some fresh whole grain bread my husband has been loving from wegmans this week!
Wish us luck with back to school and healthy eating!
UPDATE: what a great food day it was for my crew! H ate every bite of his snack box — I can’t describe the excitement I felt when Erica said he ate strawberries and raisins!!

So we’ve loved the wegmans near us for a while but today I actually got to go with no children and now I reallllllly loooove wegmans! It’s got everything I need at Kroger plus the fresh organic stuff I want from fresh market (we also have a hard time buying meat from FM lately because it’s been spoiling within 48 hours). Some things are more expensive but you save in other places. I found lots of new food ideas to try this week!
But for tomorrow…we will be visiting a friend with a baby in the morning…2 toddlers entering into a pristine home…so I definitely didn’t want snacks that would be TOO messy. Both have veggie sticks. H has fig bar and M has some kind bar. She also has a little bit of banana and dried fruit. H has some peanuts he didn’t try today.
Lunchboxes: M has ham, cantaloupe, blueberries, spinach muffins with PB (she ate FIVE tonight AFTER her dinner), a space for some bbq chicken that I’ll be having for lunch so I know she’ll want, and then I found these awesome little peppers and stuffed them with some hummus! H has yogurt, “green cup cup cake muffins” (he ate all four in his box today!), some ham (I hope he will try it!), “orange watermelon” (aka cantaloupe), banana, and some blueberries (again, I hope will try!).
Update: no one will touch the ham…M used to eat it all the time…spinach muffins are the most favorited item…and M broke into Hs box earlier to get his peanuts!

We packed today’s boxes last night and took them with us on the go today, so no hot foods. Trying some new foods from a quick Fresh Market stop yesterday. M’s snack box: veggie sticks (which she’s actually choosing less of now!), some dried fruit that we found — I’m hoping it’ll help replace gummies for H!, and my favorite: pretzels dipped in strawberry hummus!! So good. H’s snack box: Annie’s snack mix (he loves!), half a banana, some peanuts, and then trying out some banana brittle we got. (Update: H said the crackers were “dirty” and wouldn’t eat but M loved them)
M’s lunch box: banana, cherry tomatoes, kind bar, spinach muffins w/Pb, dried fruit, and a space I filled with some organic deli ham.
H’s lunch box was designed with lots of things he “knows and loves” bc I knew it would be hard to feed him on the go. He got pirates booty (calls it popcorn), spinach muffins (aka green cup cup cakes), fig bar, dried fruit, bunnies with peanut butter, and some cherry tomatoes (or “apples”…)

These are the muffins we tried over the weekend! Although I was skeptical at first, my kids have eaten a ton of them. So I have to retract my earlier criticisms!! H ate a ton with some pink sprinkles and M with peanut butter! I had to make lots of substitutions (lactaid for milk, applesauce for egg, and coconut flour for regular) bc of allergies - when I make them next time, I’ll use more coconut flour because they were very wet, but the kids still loved them!
I really like this website and will be stealing more from them in the future!
