Savory Potatoes & Minced Meat
Portions: 2
Preparation time: 25 minutes

Ingredients
500 gr Ground beef
Black pepper
Salt
Oregano
Basil
Ketchup
Soy sauce
3 Large potatoes, peeled & diced
3 Laurel leaves
1 Vegetable bouillon cube
Olive oil
1 Yellow paprika, diced
2 Cloves of garlic, pressed
1 Small red chili pepper, finely cut
Parsley
Hardware
Potato peeler
Cutting board
Knife
Garlic press
Pan & lid
Frying pan

~ The Seasoning
Take the ground beef, and sprinkle the black pepper, salt, oregano and basil on it
Kneed in the herbs until they are evenly distributed
Add some ketchup and some soy sauce, and kneed it in well
If the meat seems a bit dry, add some more ketchup and soy sauce, until the meat is slightly soggy (don't make it a soup, though, just a bit mushy ;) )
~ The Potatoes
Take the diced potatoes and put them in a pan with just enough water to cover them
Add the laurel leaves and the bouillon cube, and let it boil for approx. 10 minutes or until done
~ Red Heat
Heat up the frying pan with some olive oil
Add the diced paprika and the pressed garlic, and stir-fry until the paprika is soft and slightly brown
Add the chili pepper and the ground beef, and stir-fry the whole for just a few minutes until done
~ The Final Touch
When dividing the food over the plates, pour some of the extra moist from the frying pan over the potatoes, and sprinkle some parsley on top of them

Tuna Spread
Portions: 4 generous sandwiches
Preparation time: 15 minutes

Ingredients
3 Eggs
1 Can tuna
4 tsp. Mayonnaise
2 tsp. Lemon juice
Salt
Pepper
Chives
Hardware
Pan
Teaspoon
Hand blender + jar
Knife

~ Prep
Boil the eggs for about 7 minutes
Put the tuna and the mayonnaise in the blender jar
Peel the eggs and add 2 of them to the blender jar
Add the lemon juice and blend the whole until it is a smooth spread
Chop up the last egg, and add it to the spread
Add some salt, pepper and chives, and mix the spread
Put the spread on fresh bread or toast and top off with some chives

Pasta Sauce (Cheap & Easy)
Portions: 4-6
Preparation time: 5 minutes

140 gr. Tomato paste
140 ml. Water
3 tsp. Sugar
6 Olives, sliced
Salt
Oregano
Mixed pepper
Paprika powder
Italian seasoning
Spicy paprika powder
Chili pepper
Hardware
Measuring cup
Teaspoon
Knife
Cutting board
Cup
Fork

~ Prep
Put the tomato paste in the cup and add the water, use the fork to mix it well
Add in the sugar. This will eliminate the the acidic taste
Add in the olives and mix
Add in the salt, and the rest of the seasoning and mix well
Add more of any herbs to your taste; You can't add too much oregano
~ Great with...

Zucchini Soup
Portions: 4
Preparation time: 30 minutes

Ingredients
Olive oil
1 Zucchini, diced
2 Paprika's, diced
2 Potatoes, pealed & diced
2 Vegetable stock cubes
3 Tomatoes, diced
1 Can of Peas & Carrots
100 gr. Cream cheese
Yellow curry
Dill
Paprika powder
Black pepper
Chives
Roasted sunflower seeds
Hardware
Potato peeler
Knife
Cutting board
Wok
Spatula
Ladle
Large soup pan
Hand blender
Whisk

~ Baking
Heat up your wok with the olive oil
Add the Zucchini, paprika's and potatoes
Stir-fry for 5 minutes

~ Boiling
Add water to the wok until everything is just covered
Add in the stock cubes and mix
Let the soup boil for approx. 7 minutes, i.e. until the potatoes are done
Add the tomatoes and peas & carrots, and mix
Take the wok off the stove
Take out 1 ladle and add it to the soup pan
Mash the rest with the hand blender – I usually do this in 3 batches – and add it to the soup pan
Put the soup pan on the stove and add the cream cheese
Whisk well so there are no lumps visible
Add a royal amount of curry, dill, paprika powder and pepper
Mix well, and repeat/ add seasoning to your taste if necessary
~ Garnishing
Put 2 ladles full in a soup plate
Sprinkle some chives and sunflower seeds on top

Stuffed Chicken in White Wine
Portions: 2
Preparation time: 20 minutes. Oven time: approx. 1.5 hours (1 hour per kilo)

Ingredients
1 Whole chicken
Pepper
Salt
Rosemary
½ Lemon, pressed
3 Cloves of garlic, pressed
5 Laurel leaves
½ Bottle fruity white wine
1 Carrot, sliced
3 Potatoes, pealed & diced
Hardware
Citrus press
Knife
Cutting board
Garlic press
Potato peeler
Paper towels
Oven dish
Oven, preheated on 200 °C

~ The Chicken
Rinse the chicken off and carefully dap it off with paper towels
Rub in the chicken with pepper, salt and rosemary, and put it aside
Take the oven dish and add the lemon juice, pressed garlic, laurel leaves and about ¼ of the wine
Mix the content of the oven dish, and rub the chicken in with it, and put the chicken aside again
~ The Stuffing
Add the sliced carrot and the diced potatoes to the oven dish and mix
Stuff the chicken with as much of the carrot-potato mix as you can
Shove the rest of the carrot-potato mix to the side, and place the chicken next to it
Hold the chicken up-side-down (opening up) and fill it up with wine
Place the chicken in the oven dish next to the veggies
Add the rest of the wine to the oven dish
Optional: If your veggies are not completely covered, feel free to add more wine

~ The Baking
Place the oven dish in the oven for an hour
Take the dish out and carefully flip the chicken over without damaging the skin
Place the dish back in the oven for the remainder of the time, probably about 30 minutes
Time calculation: 1 hour per kilo

Take the dish out, and cover it with tin foil
Let it rest for 15 minutes
Cut the chicken in half carefully and divide over 2 plates

Fresh Pasta with Spinach & Eggs
Preparation time: 3,5 hours
Portions: 4

Ingredients
300 gr. Flour
3 Eggs
3 tsp. Olive oil
Fresh pasta
250 gr. Fresh, washed baby spinach
3 Eggs
A chunk of butter
150 gr. Cream cheese
Salt
Pepper
Chives
4 tbsp. Black olives
2 tbsp. Dried tomatoes
2 handfuls Walnut
Hardware
Bread machine (optional but easier)
Pasta machine
4 Tea towels
1 Pan & lid
1 Saucepan
1 Spatula
1 Spoon

~ The Pasta
Put the flower in the bread machine
Break the eggs on top of the flower, make sure to break the egg yoks too
Add the olive oil
Turn on the bread machine on the "pasta dough" menu
When finished, take out the dough and form it into a ball
Cover the dough with a damp tea towel
Leave it for 1 hour
Install the pasta machine
Divide the dough into 4 pieces and flatten them with the rollers
Install the noodle attachment to split the flattened dough into noodles
Let the noodles dry for about 1,5 hours
~ The Magic
Take the pan and add water to it
When it boils, add the pasta and let it boil for approx. 4 minutes
Drain the pasta and add the spinach to the pan - off heat! - and let it shrink by putting the lid on the pan
In the meantime, take the saucepan and add the eggs and butter
Scramble them Gordon Ramsay-style; on and off-heat but instead of adding a spoon full of cream cheese, add 150 grams
Add the salt, pepper and chives

Add the scrambled eggs, olives and dried tomatoes to the pasta
Stir one more time and put generous portions on plates
Crush the walnuts slightly in your hand and sprinkle them on top

Hummus
Preparation time: 20 minutes

Ingredients
225 gr. Chickpeas
50 ml. Water
Juice of ½ Lemon/ 3 tsp. Lemon juice
5 tbsp. Olive oil
3 cloves of Garlic
½ tsp. Cumin
Salt
Pepper
Parsley
Paprika powder
Cayenne pepper
Thyme
3-5 tbsp. Tahini
Hardware
Pan
Measuring cup
Teaspoon
Tablespoon
Cutting board
Knife
Garlic press

If you're using dried Chickpeas: let them soak for 1-2 days and then boil them for approx. 3 hours.
If you're using canned chickpeas, heat them up until they're soft.
~ Preparation
Add the water, lemon juice and olive oil to the blender jar
Press the garlic into the jar and add a bit of all the herbs
Add a few spoonfuls of chickpeas and blend the whole until it's smooth, then add more and blend again. Repeat this process until all chickpeas are mixed in.
Scoop the mix into the bowl
Add 3-5 spoons full of tahini, depending on how strong it tastes
Add more of any herb to your taste. Use the regular pepper for spiciness at the first taste, and the cayenne pepper for spiciness in the aftertaste
If the hummus is a bit dry, add more olive oil
The hummus is at its best when you can taste all ingredients in one bite
Great served warm, best served the next day.

6 tsp. Mayonnaise
1 tsp. Mustard
2 tsp. Lemon juice
Salt
Pepper
Chives
Curry
Dill
Fresh bread or toast
Hardware
Pan
Plastic container
Fork
Teaspoon

~ Prep
Hard boil the eggs for 10 minutes
Peel the eggs, put them in the container and mash them with the fork
Add the mayonnaise, mustard and lemon juice and mash it together
Add some salt, pepper and chives and mix the salad
Add a royal amount of curry and dill
Mix well and taste. Repeat the previous 2 points to your taste
Spread the salad on fresh bread or toast and top off with some chives
