Couscous, Chickpea, and Cucumber Salad
Couscous and chickpea salad with cucumbers and feta is a new favorite in our house! If you like food with lots of healthy ingredients, this salad is for you.

We are creeping into the middle of October already. The weather's been pretty nice here and I know at some point it's going to get really cold so in the meantime I'm going to enjoy a light salad like this one. Have you tried Israeli couscous? It’s a bigger version of the standard Moroccan Couscous. It goes by several different names. You might find it listed under pearl couscous or Jerusalem couscous. It was developed in the 1950s in Israel when rice was scarce. People think that couscous is a grain because of its size. Typically Moroccan couscous is very small like grains. But it's actually made with semolina and water which makes it pasta and is very versatile.

For this recipe, I've added just a handful of ingredients. I've got some chopped cucumbers, sliced tomatoes, a generous serving of feta cheese chunks,  some chickpeas and the standard spices of salt pepper with a little bit of fresh parsley if you have some on hand and of course a generous drizzle of olive oil.

Makes 5-6 servings
1 (8.8-ounce) box of Israeli couscous ( I buy mine at Target but Walmart carries it too)
4 mini cucumbers chopped
4 cocktail tomatoes, chopped
1 can chickpeas, drained and rinsed
1 (4-ounce) package feta cheese, crumbled
2-3 tablespoons olive oil
salt and pepper to taste
a handful of fresh parsley, chopped
DIRECTIONS
Cook couscous according to package instructions. Let cool slightly and place in a large bowl with cucumbers, tomatoes, chickpeas, feta cheese, olive oil, salt, pepper, and fresh parsley. Serve with a protein or as is.

Reposted my dinner from yesterday. Another #bowladay is a protein vegetarian pasta. I used @ancientharvest pow pasta (made out of lentils 25g) homemade roasted tomatoe sauce, fresh basil, @beyondmeat and sautéed spinach, zucchini and bell peppers. Mix everything together when ready. Jasmime Rice with Broccoli, Peas, and Cauliflower

Serves 4
Olive oil spray
2 cups chopped broccoli
1/2 cup chopped cauliflower
1/2 cup peas
1/4 cup vegetable broth
1 tablespoon chopped garlic
salt and pepper
2 packages Jasmine ready rice
1 package but only use half of frozen butternut squash
Heat pan over medium heat. Add olive oil spray after about 2 minutes. Add chopped broccoli, and cauliflower. Cook 4-6 minutes. Add peas, vegetable broth and garlic. Stir to combine and sprinkle on some salt and pepper. 
Heat frozen butternut squash according to package instructions. When done add 1/2 of the package to pan. 
Heat ready rice according to package instructions. When heated through add rice to pan. Stir everything together and heat another minute. Serve hot or warm.
