May 12 night: Heading out to post the fake letter to Mr Hawkins (allegedly the one to Mina too)
May 15 night: Heading out to bring fresh blood
Those are things Jonathan doesn't realize upon seeing it happen, but it becomes obvious upon re-read

If I be sane, then surely it is maddening to think that of all the foul things that lurk in this hateful place the Count is the least dreadful to me; that to him alone I can look for safety, even though this be only whilst I can serve his purpose. Great God! merciful God! Let me be calm, for out of that way lies madness indeed. [...] The Count's mysterious warning frightened me at the time; it frightens me more now when I think of it, for in future he has a fearful hold upon me. I shall fear to doubt what he may say!
Jonathan is very aware of the game Dracula is playing here. It's just like the wolves on the way to the castle (and in fact the way he wards the vampire ladies off is a direct echo of the gesture he used then): he presents himself and the places he has prepared for Jonathan as a welcome escape from greater and more uncontrolled/immediate dangers lurking in wait just outside. Jonathan fell for this trick that first night. He was glad to be inside rather than left alone in the cold and dark with howling wolves, despite his hesitance, and he let Dracula make him feel better. And doing so left him trapped inside this prison.
Now, he's well aware of what is happening, and doesn't want to fall for it again - yet in a way, he has no choice but to do so. The vampire ladies are an immediate and intense danger, but Dracula can keep them away. All Jonathan has to do is rely on him once again. In terms of movements, it restricts him more fully to the places Dracula has already set aside for him. That's bad enough, because those places are secure against escape already, so his prisoner status is even more solidified.
But the much greater danger here is what it might do to him mentally/emotionally. Jonathan knows he has no choice but to look to Dracula for safety, but he can't dwell on the thought without feeling like he's going mad. Because he knows just as well that he will only ever be 'safe' with Dracula so long as the Count wants, so long as he does exactly what the Count asks of him. He's so afraid at the thought that Dracula's hold over him will grow. He's already so smart and charming when he wants to be, manipulative and clever and sadistic. He's already playing at friendship and Jonathan has to doubt everything he says. Except now he finds himself having to doubt his own doubt, too, because maybe some warnings will be genuine. Maybe it will be better for him not to fight so hard against Dracula. Except if he stops doing that, he'll never stand any chance in the long run - but if he keeps trying so hard he'll never get to the long run.
He's completely trapped, and fully aware of it.

I will say though the ladies are a lot more assertive than I expected. I do love that for them. For all of Dracula’s fixation on ideas of Hunter and Master, for all his disdain of the peasantry and domineering manipluation of Jonathan, his ladies (who are most explicitly under his power) do not care at all.
Like maybe physically he can and is keeping them away from Jonathan but after his notably scary monologue - they laugh in his face, they argue and humiliate him in front of his guest and still assume that he will cater to their needs (which he does)

I love how Jonathan immediately went to peek into Dracula's mail the minute he got the chance
Yeah! I do love that about Jonathan’s character, he is very resourceful!
Even when stuck at Dracula’s castle, even when he’s put up against a threat he does what he can and when he can to save himself. Be it writing down everything he can, just in case it’s of use later on (and it will be!), looking for any way in which he could possible escape, and as you’re saying anon, peeking into mail, gathering any information possible that might help him escape, he’s taking any chance he can to gain any upper hand against the Count.
