Kulinarischer Abschluss im Central
Für den letzten Abend unserer Reise hatten wir uns schon langfristig einen Tisch im Restaurant Central vom Sternekoch Virgilio Martinez reserviert. Laut diversen Magazinen und Institutionen sei es wohl aktuell eines der Top-5 Restaurants der Welt.
Das Lokal liegt im romantischen Viertel Barranco südlich von Miraflores. Der geplante Schwellenübertritt 15 Minuten vor Tischreservierung wurde erst einmal von verschlossenen Toren und Mauern gebremst. Von außen gab es kein Anzeichen, dass hinter der schwarzen Mauer ein Restaurant sei und so liefen wir noch mit großer Hoffnung auf der Korrektheit der Adresse eine Viertel Stunde um den Häuserblock. Als wir die Runde abschlossen war ein großes Tor geöffnet und der Restaurantname am Eingang sichtbar. Über einen sehr grünen Innenhof wurde man nach der Impfzertifikatsprüfung an den Tisch geführt. Dort begann nun auch schon bald die kulinarische Reise über die verschiedenen Höhenlagen Perus - ein Markenzeichen für dieses Etablissement - mit einer Gurken-/Kohlvariation aus den „küstennahen Hügeln“ auf 280 Meter über den Meeresspiegel. Dazu entschied sich Rocco für eine alkoholische Getränkebegleitung und ich wurde servicetechnisch etwas vergessen und entschied mich später für eine Cocktail/Bier-Kombo. Das Menü „Territorio Vegetal“ bestand aus 12 Gängen, welches vollständig vegetarisch, fast vegan, war. Neben in heißen Steinen gebackenen Hochland-Kartoffeln und in Teig gebackenen Pilzen mit frittierten Kapern war der Maisschaum mit Kiwicha (Amaranth)-Kaviar ein kulinarisches Abenteuer. Unser persönliches Highlight war jedoch die Entdeckung des Kakaos in all seinen Facetten als letzter Dessertgang: Süßes Fruchtgelee aus der Haut der Kakaofrucht, eine weiße Creme aus der Pulpe einer frischen Frucht sowie einen Aufguss aus der getrockneten Schale und letztendlich eine tiefdunkel-schokoladige Paste aus den gerösteten Kakaobohnen. Von hier aus betrachtet ein gelungenes Menü, welches wir vollkommen genossen haben…
…jedoch aus unsere Sicht nicht ganz perfekt war. Speziell im Vergleich zu unserem letztjährigen Besuch im Hiša Franko in Slowenien war dieses für unseren vegetarischen Maßstab kreativer und vom Service mindestens eine Note besser.
Etwas melancholisch verließen wir nach einer spontanen Führung durch das Haus (es gibt noch andere Restaurants und Projekte im Komplex!) diese kulinarische Destination und spürten schon den leisen Abschied unserer Entdeckungstour durch Peru.

Great Business Name of the Week: @freshii To being with, we came across this great #RestaurantName in Chicago a few years ago and instantly fell in love. To be totally upfront, we didn’t get a chance to eat at the establishment as we were running past to a previous appointment. However, the name stuck with us and we were unable to get it out of our head! After a little investigation we found that Freshii is a new and exciting option for fast food. Notwithstanding, we really should have guessed from the fresh and exciting name. Freshii is an interesting derivation on the word fresh with two additional “ii’s” on the end. We’re unsure if the “ii’s” have a specific meaning or they just they’re just a fun and interesting addition. In either case, we love the name even more when added to the logo. The green conveys freshness, and we like how the tittle or superscript dots above the “ii’s” evokes a smile. When #RestaurantNaming, or any business for that matter, your name needs to convey the kind of establishment you are. For instance, Freshii is a fun twist and a new and exciting name. Guess what? The Aussie mayor who wants America to get tough on guns

Photo: AP Mass shootings happen with numbing regularity in the United States: 59 people killed at a music festival in Las Vegas in October, five at a Pennsylvania car wash in January, 17 at a high school in Parkland, Florida, in February. But in Annapolis, with its holiday village vibe and some of the toughest gun laws in the country? "If youd asked me if this could happen here, Id say no way," Buckley told Fairfax Media in an interview in his City Hall office. He had barely slept since the attack. While almost 300 local newspapers across America have shut down since the mid-'90s, TheCapitalremains a central part of Annapolis life, sending reporters to cover sporting events and council meetings. That made the shooting feel like an attack on the entire community, Buckley says. He assumed he could immediately lower all the flags in the city to half-mast in honour of the victims, but it turned out a presidential proclamation was needed to lower federal flags. He requested one, but was told on Monday it had been denied - a decision that infuriated him. "I nearly went up the flagpole and pulled them down myself." A few hours after Buckley went public with his disappointment, White House press secretary Sarah HuckabeeSanders called him to discuss the issue. The next day a proclamation was issued. Buckley suspects US President Donald Trump heard about the refusal on TV and demanded it be reversed. Since the shooting, Buckley, who is a Democrat, says he has resisted invitations to attack the President, so that the focus will be kept on the victims. Reversed decision: US President Donald Trump. Photo: AP He wasn't always so disciplined. Buckley - whose mother was from Ireland and father from New Zealand - was born in South Africa and spent his early years in London. When he was eight, the family emigratedto Perth and settled in the working class suburb of Belmont ("as 'westie' as it gets"). "I got kicked out of a couple of high schools - the Catholic School, then the public high school. I even got some of my mates kicked out," he says with a laugh. After flipping burgers at Hungry Jacks, Buckley undertook the rite of passage of a backpacking trip through Asia and Europe. While working in a bar in Scotland, he and some mates came up with an idea for a summer job: go to the south of France and spray beachgoerswith suntan oil. Calling themselves the Sunbusters, after the Ghostbusters, they wore white jumpsuits and sprayed lotion on people for $1 using repurposed fertilisersprayers. It proved a hit in France but when Buckley tried to reproduce the success in Florida it didn't work out. That's how - after stints shucking oysters and doing farm labour - he ended up in Annapolis. Loading His first business venture was opening the city's first coffee shop ("the type that had poetry readings in it"). He then opened a trendy Japanese restaurantnamed Tsunami and covered the building's facade with a mural of the Buddha. The ensuing stoush with the local heritage society made him a local celebrity. Last year he ran for mayor on a platform of spicing up the city while protecting its history. "Im a preservationist but cities like Paris, London and Prague manage to balance their history with contemporary art. I thought we could offer something more eclectic here than Irish pubs and sports bars." Despite having no political experience, Buckley easily defeated a six-term state senator in the Democratic primary before unseating the incumbent Republican mayor in November's general election. "Gavin was a businessman, a political outsider running on big ideas against a well-established public servant. He is a big personality, very gregarious." During the campaign, Buckley's Republican opponent distributed fliers portraying him as Crocodile Dundee and saying he "had a few kangaroos loose in the top paddock". Buckley - who still speaks with a broad Australian accent - says the tactic backfired spectacularly: "People are very nice to Australians here, it's a good thing to milk in this country." (While he is a naturalised American, Buckley says "I still consider myself an Australian." He and his wife lived in Perth for five years and visit regularly.) Like many born outside the US, Buckley remains baffled by the fact the country tolerates such huge numbers of gun deaths. He attributes much blame to the National Rifle Association, which opposes even modest gun control measures.He sums up the lobby group's approach as "macho bullshit". You need to compromise to have credibility. That organisation doesnt have a millimetre of compromise in it." He says legislators should examine whether a gun buyback scheme - similar to the one the Howard government launched after the Port Arthur massacre - would work in the US. And he wants more stringent background checks on gun sales to people with mental illnesses. "Arming teachers and journalists, for Gods sake that cant be the future. The suspect in this shooting had so many red flags, he shouldnt have been able to buy a butter knife." Buckley is now planning a music festival - hopefully with major international artists - to celebrate press freedom and commemorate the shooting victims. "My job is to keep the story going," he says. "I dont want us to just be the next statistic, the 150th massacre or whatever. "To be working at a newspaper in a small town and be killed by a guy who had every warning sign, we just cant let that go. We have to make a difference."

There are four digital marketing platforms which are most effective for marketing restaurants: Yelp, Facebook, Foursquare and Instagram.
 Yelp manages to incorporate all the major features needed for both customers and marketing team on a simple and user friendly interface. By including a delivery service and OpenTable integration, as well as allowing customers to review their experiences, Yelp has proven to be a restaurant owner’s best friend in terms of marketing potential.
Facebook, with features such as Facebook Ad Manager and geo-tagging, illustrates a more technical advantage in terms of monitoring and analytical tools. Restaurant owners can depict which demographic they plan to target based off attributes such as age and location. Open communication in the form of reviews, comments and ratings allow customers to give feedback on the restaurant’s strengths and weaknesses.
Foursquare, although not as intricate as Facebook or Yelp, allows restaurant owners to share promotions and media on offer to the customer. This often comes in the form of incentives based off of checking into the location for promotional gifts such as discounts and complimentary food or drinks.
In a simple snapshot, Instagram helps capture a food and drink lover’s attention and can be utilized to highlight any fun features of a restaurant. Being another heavy hashtag platform, a restaurant can find every mention made of them (i.e.#restaurantname). Instagram is a great platform to engage a younger target audience as well as the burgeoning “foodie” demographic.
Once you have an understanding of the influential social media platforms available, you now can focus on building an effective social media marketing campaign.
 Mapping Your Audience and Message
Most social media sites suggest branding your restaurant to everyone and anyone within a certain mile radius. However, in order to really define “who” your audience is, you need to define “what” your message is first.
There are three common essentials involved in defining one’s message:
the customer perspective,
the internal perspective and
the marketplace perspective.
With the customer’s perspective, you need to reveal what is ultimately important to them when they go out to eat. Are they more satisfied with a high energy atmosphere? Or would they enjoy a more slow paced and intimate dining experience? We recommend talking with your customers to find out what their ideal dining experience would be.
In regards to the internal perspective – consider the following: What is your message for your restaurant? Is it portrayed through the atmosphere of your restaurant currently? Does your staff understand your message and what is their opinion on it? By opening up communication and appreciating your staff, your message will run more smoothly throughout the entire atmosphere. Finally, try looking at how you are perceived by your competition. Is your message distinct? What clearly distinguishes you from the competition? Are you highlighting that in your message?
By having a clear-cut and precise message you will easily be able to market yourself on the digital marketplace and, in turn, attract your target audience.
The Power of Video
If a picture is worth a thousand words, then a video is worth a million. Video is a great way to showcase your team, food, atmosphere, and neighborhood to prospective customers. Shooting video seems daunting but it is now easier than ever. Current phones have the capability to take high quality video, and there are many free apps available to edit video to your liking.  Additionally, social media sites like Instagram and Facebook make attaching video to your business simple.
Optimizing Your Social Media Profile
Make sure your social media profiles are effective by having pertinent information easily accessible. For example, highlight specific courses or drinks that emphasize the message of your restaurant using images and videos. Add a “Book Now” button for you customers’ convenience, and encourage “checking in” on Facebook/ Instagram/ etc. by offering special promotions. Other descriptive elements also essential for your social media profile(s) include: a menu, services rendered (good for kids, good for groups, takeout), and reviews.
 If you have more than one location, this can seem complicated. You may be wondering how to distribute equal amounts of time building a social media foundation for each. Don’t fret. The great thing about social media is that multiple profiles are easily accessible and simple to curate off of a parent social media profile. By marketing the new branch on the parent profile and making a separate profile for the new branch, you can convert followers and have crossover between the two branches. Using video and images to highlight and showcase the key elements of the restaurant will be great tools to help build a social media following and steady flow of patronage.
After building a social media following, the next challenge is transforming “likes” into a profitable stream of patronage. The key here is finding the right balance in terms of promotional posts. Try to use engagement as an alternative to promotion.  Ask your customers questions about products, services, and decoration.  People like to give their opinions, and doing so creates an inclusive, community-oriented feel.  By opening the door and engaging your customer base, you can foster a sense of community which will result in repeat customers and also draw more patronage.
Effective Timing For Social Media Posts
Depending on what the theme of your restaurant is, there are certain times in the day – and year — that are more effective, in terms of posting, than others. For example, if you want to emphasize some or all of your bar or drink selection, you will want to schedule your post around 5 p.m. when your followers are getting off work. When you know your target audience, you can cater to their schedule by posting meaningful content at the best times… for them.
Using Social Media Promotions

Collaborate With another Chef or Bartender for a Meal
Collaborations are effective and beneficial to every party involved. By working with an existing restaurant or chef in the same vicinity of your restaurant, you will promote your product as well as that of your collaborator in a fun, natural way.
Feature A Social Media Influencer
Take advantage of nearby social media influencers (i.e. food critics, social media bloggers, local chefs) and highlight them and their experience to promote your product. You can ask a local Food Blogger with a popular social media following, to feature them on your posts to illustrate the popularity of your restaurant etc.
Live-stream Video Feeds
Stream parties, Q&A sessions with chefs/ bartenders and discuss new promotional items on live-video for your social media following. By including the live video stream, you are personalizing the engagement you have with your social media audience. 
Create Specific Social Media Space
If you have certain aspects of your restaurant that are Instagram picture worthy, emphasize them! Come up with unique and fun hashtags for your customers to use. Create a space for your patrons to come and not only enjoy themselves and the food but to share their experience in a unique and creative way.
Now that you have the tools and information needed to really follow an effective social media marketing campaign, add your own creative touch and highlight those elements that make your restaurant stand out. By maintaining a relationship with your target audience, setting campaign goals, and monitoring your results; you will be able to distinguish yourself as a restaurant that not only cares about good food but also about good customer service in person and through social media.
