I don’t think I’ve ever mentioned this here but I’m a Mexican-American currently studying to be a pastry chef. Why do I suddenly bring this up? Because I just watched “Mexican Week” in the Great British Bake Off. Overall, I just feel greatly disappointed. This show was one of my inspirations to go into this career path. Sadly. I expected more. It takes one google search to find hundreds of amazing delicious rich baked goods that would’ve been great to highlight. Instead they didn’t do any of that. They made no effort in giving Mexican baking the respect or praise it deserves for it unique techniques, flavors, and qualities that is only seen in Mexico.
I know that some of you will argue that they just didn’t know and that they didn’t mean to offend people, but that’s no excuse. They just didn’t care. They make such a huge effort in highlighting the baking history and techniques for other cultures like French and Germany. Just because they aren’t familiar with it doesn’t mean that they can’t google it, hell, hire a Mexican pastry chef to consult and provide advice to the production and crew. There is no excuse that in the year 2022 something like this should be acceptable.
However, from all of this, I have been inspired once again. I’m making a promise to myself to study and give Mexican baking the respect it deserves. I’ll make it my goal to prove to people that Mexican baking is worth the effort to learn and isn’t just a stupid gimmick. So maybe call that a win.

Sometimes being a culinary student isn't bad. I had chocolate cookies for breakfast while making cake pops even though I'm not participating in the little contest chef is hosting.

hc mizu likes British food 💀 we know that she isn't that great of a cook so I think she'd enjoy the simple flavours.
Tumblr media
unironically, she'd love stargazy pie AND it's historically accurate with its origins dating back to the 16th century. we know mizu likes fish (specifically mackerel) so I think she'd love this.

Culinary school:
what people think it is: hehe flip eggs and make borgers
what it actually is:
Your broiler cook has just broiled a codfish fillet that turned out dry, rubbery, and shrunken. Explain what happened to it.
Why would adding tomato product to a beef stew help make the meat more tender?
How do chefs use the idea of flavor balance to combine a variety of ingredients into a single dish?
what is the difference between seasoning and flavoring?
what guidelines are used for correctly adding herbs and spices to foods?
What is wrong with adding whole caraway seed to a portion of goulash just before serving?
What food safety problems are posed by the vacuum packaging and the low cooking temperatures of sous vide cooking?
Describe the difference between primary flavor and supporting flavor. select a favorite recipe and explain the function of each ingredient, indicating which are primary flavors and which are secondary flavors.

Soap: what’s the one thing I told you not to do.
Ghost: burn the house down.
Soap: and what did you do?
Ghost: made you dinner.
*fire alarm blaring in the background, the smoke coming from ghosts supposed dinner wafting from the kitchen as both ghost and soap are at the front door*

Obesity: The Science, Culture, and Politics of Fatness in America
In Fall 2023, students enrolled in Dr. Margot Finn's course on the science, culture, and politics of obesity worked in groups to research and write captions for food history materials.
Most of these items were from the Special Collections Research Center's Janice Bluestein Longone Culinary Archive.
These were featured on the Shapiro Library Screens in Bert's Study Lounge.

M. L. Holbrook, Eating for Strength (New York, M. L. Holbrook & co. [c1888]). Library of Congress.
The 1888 edition of Eating for Strength, a popular 19th century work on diet written by Martin Luther Holbrook approaches food in a scientific manner, outlining the dietary needs of various classes of people and looking at the healthfulness of various foods. This book includes information about food and diet in relation to health and work, together with several hundred recipes for different foods and drinks. All of these tables illustrate the protein, carbohydrate, and fat content of some of the most common foods that characterized the diets of that era. This underscores how even over 100 years ago, these three macronutrients were seen as important to monitor in order to curb obesity.

Keeping Your Weight Down (Westfield, N.Y. : Welch Grape Juice Co., [1921?]). Janie Bluestein Longone Culinary Archive.
Published by Welch Juice Company in 1921, this recipe book called Keeping Your Weight Down suggests that Welch's Grape Juice can aid in weight maintenance, and emphasizes its importance in influencing desired health benefits with their beverage. The monochrome-purple book cover showcases an idealized “thin” model covered in loose night clothing, examining a weight scale. Inside, “Pudding and Desserts” recipes are listed in sections with the usage of Welch brand ingredients. Framing grapes as dessert, often eliminated in dieting practices, allows for the luxury of sweets within the strictures of losing weight.

Ruth West, Stop Dieting! Start Losing! (New York : E.P. Dutton & Company, Inc., 1956.). Janice Bluestein Longone Culinary Archive.
Although Ruth West’s Stop Dieting! Start Losing! was a dieting recipe book published in 1956, the artifact has a startling resemblance to modern attitudes about weight, despite the huge body of research conducted on obesity since this time. Today, It’s easy to laugh at slogans like “how to lose 2 to 3 pounds a week” and “16 foods for sex appeal and vitality,” but how different are these claims from those we hear today from diet magazines, social media and even our own medical professionals? Is the rigor of evidence from then to now all that different?

hi, would love to hear more about chef Lily, please and thank you :)
Hi! Sure! Thanks for asking!
I initially started this for the Jilytober Masquarade, but didn't end up getting my act together before that deadline and then I just sort of...moved on. I don't know what I'm going to do with this idea now since I didn't get very far with it, but...maybe sometime this year I'll go back to it!
Anyway, without further ado, here's a Muggle AU Lily snippet:
Lily reduced the heat to low, watching as her brew simmered in its pot — its fragrance enveloping her in a warm wash of butter and flour. The rest of the world beyond her station meant nothing to Lily as she worked…the bustle and clamor of her classmates fading to a dull murmur while she hovered over her pot — fancying herself a potioneer of sorts, a mad witch with an epic concoction. She stirred in the milk as if it were some fantastical element, whisking away the lumps until the sauce thickened to perfection. She could feel the jealousy of her classmates bubbling around her as presentation time approached…knowing that her Béchamel Sauce was—as always—a work of art. Her confidence carried her through the rest of her practical lessons that afternoon, lifting her spirits to impossible new heights...until it was promptly crushed in the women’s lavatory. “That Evans girl is the fucking worst,” said a voice that Lily was sure belonged to Ellen Halloway — the snooty blonde girl from her pastry class who reminded Lily viscerally of her sister. “The instructors really think she’s God’s gift to the culinary world, don’t they?” From her hiding place in the stall, Lily heard several other girls snicker at that. “She thinks she’s so much better than us,” another girl—Tara Smith—chimed in. “Just because she doesn’t have a life outside of the kitchen, doesn’t mean the rest of us are the same…” More laughter. “Pathetic,” Moira Fraser spoke up. “So pathetic.” Sucking in a deep breath and collecting herself, Lily flushed the toilet and stepped out of the stall — holding her head high as she marched silently across the room towards where the girls were standing together near the sinks. “Excuse me,” Lily said with perfect politeness, stepping around her gossiping classmates and flicking on the nearest tap. She felt—rather than saw—the way the other girls shrank in response…all three of them tensing with horror at the sight of the object of their ire washing her hands so casually before them. Lily took her time washing and drying her hands, savoring in the feel of the awkwardness that sizzled in the room. “Lovely pastry lesson today, wasn’t it?” she asked pleasantly, turning to face her classmates. “Best of luck next time, Tara. You’ll learn how to work the oven eventually, if you really put your mind to it.” Tara just stared back at her mutely, and Lily smiled, patted her on the shoulder, and stepped past. A rush of satisfaction burned through her when she left the room — the door swinging shut too slowly to muffle the “Oh my God,” that followed her departure.

Ohhh that carbonated drink anon was onto something! To add onto this interesting subject, Fowler would probably be ‘meh’ in terms of shock value, but I think Sword Father would really like the texture. Not just because he relies on his other senses to navigate the world, but he’s very much open to almost anything.
Also, I like to think that Taigen would maybe only be able to keep all the sprite down after three or four tries, but Akemi would handle it like a champ. She’d either make a polite little burp and then be all “excuse me🤭” or nearly break Taigen’s record and *then* have that same ‘tee hee’ response, no in between
Fowler is a simple guy. man's imported cows just to make sour cream!? he'd be indifferent to fizzy drinks. he'd shake them up then shoot them for fun after all that painstaking work of getting it smuggled into Japan lmfao.
Heiji Shindo would absolutely hate it LOL. he'd call Fowler a dumbass for importing spicy water for what ???? i think he'd enjoy it better mixed with sake. he seems like the type to enjoy mimosas tbh.
I absolutely agree that Swordfather would love fizzy drinks! I'd like to imagine after years of forging he'd have impulsive thoughts on just... chomping on hot coal... wondering what it would feel like.... fizzy drinks would be the closest he'd get to eating hot coals. additionally, he would Love pop rocks. 100% Swordfather would be open to trying any food cuz I can imagine a young Mizu having to cook for the both of them when he's busy. and we all know what Mizu's cooking skills are like lmao.
AND YES! Taigen would need to try at leasttt 4 times to successfully complete the challenge. Akemi definitely could handle it. she's the most adventurous when it comes to food and is a badass lady so you know dang well she'd handle it like a champ! her face unwavering after taking the last sip. the burp she let's out after is so astronomical, she doesn't even bat an eye and just politely says "excuse me" (✿^‿^) Taigen's jaw on the floor after seeing Akemi almost beat his burp record could send him to a chiropractor.
(the link is a tiktok video that best describes how akemi would have burped after doing the "sprite challenge")
