It shouldn't have been hard.
Steve has made hundreds of cookies for the kids since becoming their pseudo mother. Steve is good at baking! Every year he makes Christmas cookies for fucks sake! It shouldn't have ended like this.
"What the actual fuck."
Let's rewind.
Steve had been regularly bringing little treats to Hellfire. He didn't play but he liked spending time with the kids and if it gave him an excuse to look at Eddie then that was his little secret. The problem at first had been the other members of Hellfire not trusting why King Steve suddenly wanted to spend time with the freaks, but a tray full of fresh brownies had smoothed over any old issues. Since then it had become habit.
Eddie had been the one to ask him.
"Stevie, my strong and handsome liege and creator of tasty treats."
Steve had to fight to control his blush, "You don't need to give me hollow compliments, Eds, what do you need."
Eddie's smile had faltered a bit but he continued, "Well, sweetheart, Christmas is coming up and Wayne and I made Christmas cookies the first year I lived with him and I wanted to surprise him with some homemade ones so I was hoping you'd help me?"
Steve smiled, any excuse to spend time with Eddie, plus, wouldn't hurt that he could show off and impress him, "Of course, Eds, come by tomorrow ok."
Steve had gotten out all the ingredients ready to make and then decorate the cookies. Simple sugar cookies shouldn't be too hard to teach Eddie how to make, Steve could make them in his sleep at this point. It had been snowing so when Eddie showed up he looked like an angel with little snowflakes resting in his curls and on his rosy cheeks. Fuck, Steve had it bad.
Steve had decided the best way to teach Eddie was to read out the recipe and let Eddie pour everything in.
"Ok add two sticks of butter and a cup of sugar to the bowl and mix until fluffy." Steve watched Eddie add the ingredients and start to mix them, well, he watched Eddie. Eddie was so cute with his tongue poked out concentrating.
"This look good?"
"Hm? Oh yeah looks great, now add an egg and some vanilla extract and mix those as well." Eddie had a little pinch between his eyebrows, Steve wanted to kiss him right there.
"Ok done."
"Great job, now in another bowl add two cups of flour and half a teaspoon of baking powder and a quarter teaspoon of salt."
"Baking is easy, we should do this more often, Stevie."
"Yeah, we should," Steve said smiling dopily at Eddie, "Ok now mix all of that together."
Steve then helped Eddie roll out the dough and cut out fun shapes to decorate.
"Eddie no dick cookies this is for your uncle!"
Steve put the cookies in the oven and helped Eddie make the icing. They watched a movie while the cookies cooked and then cooled. Steve thought he was pretty subtle cuddling up to Eddie. He was not.
When the timer went off the boys went back to decorate the cookies. With all their icing and candy supplies they sat beside each other at the table. Giggling together they decorated each cookie. Steve's certainly looked better but he thought Wayne would probably prefer his nephews chaotic ones.
"Eddie how did you sneak a dick cookie in!"
Once they were all done they admired their work. "I think we did a great job, Stevie."
"I think we did too, Eds, want to try the dick cookie together since there's no way I'm letting you give that to Wayne."
"Steve Harrington giving me dick, and we're not even dating yet."
"Yet?"
"Well I figured you'd ask me eventually," Eddie said smiling shyly and leaned over giving Steve a soft kiss on his cheek, passing him half of the cookie.
"Maybe we can count this as our first date?"
"I'd like that, Stevie."
The boys smiled at each other and bit into their cookies.
"What the actual fuck."
"Stevie, I know I'm gay and all but dick cookies shouldn't taste salty in my opinion."
"Eddie did how much salt did you add?"
"Quarter of a teaspoon like you said, basically a pinch."
Steve stood up and went into the kitchen, the sugar jar barely empty. "Eddie, baby, can you read?"
"You can't call me baby for the first time and insult me, this is terrible first date behaviour and if anyone is at fault it's your shit handwriting on the labels."
Steve had to admit, his handwriting was terrible. "You're right. Guess we'll just have to have another date to make some edible ones."
Eddie smiled, pulling Steve into a kiss, "I think I can work with that."
"Just no more dick cookies!"

Crunchy Fudgy Brownies
Tumblr media
When I woke up today, snow was falling thickly in the gardens and the roofs and the windows and the streets! It made me very happy as we did not have a single flurry this Winter. And, I wasn’t alone; from my window I could see little children giddily going to school, trying to catch snowflakes and imagining the snowmen they would build at recess! I think this impromptu Winter Day is the perfect occasion to indulge in those beautifully Crunchy Fudgy Brownies (I took inspiration from The Simple Things’s Ultimate Fudgy Brownies but added a bit of a crunch to it with nuts, cereals and seeds!) Whether you stay cosily inside, or go for a vivifying walk in the white powder; these are a wonderful treat to indulge in! Happy Friday!
Ingredients:
5 whole walnuts
1/4 cup hazelnuts
150 grams/5.30 ounces dark chocolate (at least 70% cocoa solids)
100 grams/3.5 ounces unsalted butter
150 grams/5.30 caster sugar
2 eggs
25 grams/0.90 ounces plain flour
30 grams/1 ounce unsweetened cocoa powder
1 tablespoon quinoa crispies
1/4 teaspoon fleur de sel or sea salt flakes, plus more for sprinkling
1/2 tablespoon pumpkin seeds
Preheat oven to 180°C/355°F. Butter a square or rectanglular brownie tin, and line with baking paper; set aside.
Crack open the walnuts, and gently remove the halves from the shells, so you have ten halves.
Toast walnuts and hazelnuts in a small frying pan over a high flame until fragrant and lightly browned. Remove from the heat, and transfer to a small plate; set aside.
In a medium bowl fitted over a small saucepan of simmering water, melt dark chocolate with butter until silky. Stir in caster sugar, and remove from the heat. Let cool slightly, about 5 minutes.
Break in the eggs, one at a time, whisking well after each addition. Then, whisk energetically for about 3 minutes, until mixture is smooth and shiny (this is an excellent arm workout, too!)
Sift in flour and cocoa powder, and gently fold in with a spatula. When almost all the flour and cocoa are folded in, add toasted walnuts and hazelnuts, quinoa crispies and fleur de sel. Fold in until just blended and no white spec of flour remains.
Pour batter into prepared tin, and level the top with the spatula. Sprinkle liberally with pumpkin seeds and a pinch of fleur de sel.
Bake at 180°C/355°F, for 20 minutes, until the middle is just set and the edges are a bit cracked. Remove from the oven, and let cool for as long as you can wait (at least half an hour) before cuting into a dozen squares.
Enjoy Crunchy Fudgy Brownies on their own, with Vanilla Custard or a scoop of Vanilla, Coconut or Coffee Ice Cream!

A few more than six sentences
A little late, but here’s a few sentences from a possible story for Nabrina Winterfest.  It may become something more or be folded into something else.  Just wanted to share!
Most people wouldn’t say they liked the cold, or if they did they may never admit it.  But Sabrina wasn’t afraid to claim her affection for it.  She loved any excuse to put on a warm sweater, her thick wool tights, and plaid skirt to match.  Going out in the cold also meant forgetting gloves on purpose, which quickly became one of Nicholas Scratch’s favorite things to do.  He usually came up with some excuse as to why he didn’t have them just to hold her hand, usually kissing them both before slipping their linked fingers into his coat pocket.  He’d tell her he forgot his scarf too, so he needed to warm up his nose by burrowing his face into her neck after walking her to school.  His lips needed warming up too, and she was more than happy to oblige him, kissing him next to her locker until the heat between them was billowing outward.
With the cold came snow. And to Sabrina there was no better sight than Nicholas Scratch, in his dark and intriguing glory, against a backdrop of white winter wonderland.  The snow would pepper in his hair like a dusting of powdered sugar on freshly baked brownies.  And the snowflakes clung to his long eyelashes like the stars clung to the sky.  Cold days led to warm nights, and there was no one better to keep Sabrina warm than Nicholas Scratch.  He still climbed up to her windowsill, even when it was slick with ice.  And sometimes he left the window open just a crack  just so they could hold each other even tighter, craving the warmth only the other provided.

ϟ: Our muses bake Christmas cookies together. (Isaac & Maddie, obviously)
Madeleine was chewing on her bottom lip as she looked over the ingredients to make sure they had everything. They did. "Okay!" She clapped her hands together and turned to face Isaac. "You ready? Because I'm ready and I really, really, really wanna eat some Christmas cookies."
"Okay... we have the stuff to make the traditional sugar cookies, and we get to cut them into fun Christmas shapes wiiiiith THIS!" Madeleine held up a couple of the Christmas shaped cookie cutters, then set them back down. "We've got sprinkles. We've got icing, buuuut... We also have the stuff to make one of my personal favorite cookies, the chocolate crinkle cookies. Now, don't judge, they're delicious, and who doesn't love a nice chocolate cookie with powdered sugar on it? Don't you dare even dream of saying that you don't love them because you'll break my heart, and then where will we be." She jokingly warned him, holding a finger up to him as if to stop a protest that likely wasn't coming, and tried to fix him with her best serious expression, but instead she burst into a fit of giggles.
Turning back to the ingredients, Maddie placed her hands on her hips. "Alrighty, first thing's first... and that's flou-" Her word was cut off when a bursting cloud of flour exploded from the bowl. Maddie glanced down at the front of the apron she'd chosen to wear, seeing white flour clinging to the front of it before looking to her side and seeing a guilty, and all too amused Isaac standing there holding the offending measuring cup.
Laughing she said, "Not fair!"
Aside from that incident, which Madeleine swore was on purpose, the rest of the ingredients made it into the bowl without causing any mess, and they were able to continue on with their baking. They found themselves standing side by side cutting different cookie shapes while the chocolate crinkle cookies baked in the oven, filling the kitchen with a delicious smell reminiscent of chocolate brownies.
While they cut a variety of shapes Madeleine spoke, "You know, I understand why they have the candy cane shape, but it's my least favorite of all the Christmas cookie shapes. I mean, how can you want that when there's snowflakes, or snowmen, or stars, or Christmas trees. The candy cane shape just can't compete."
Normally, she wouldn't have been so talkative, but she'd spent enough time around Isaac now that she was fully familiar with him. On occasion, he could catch her by surprise and still cause her to blush, but for the most part, he'd managed to bring out her bright and bubbly personality. Something that, when mixed with Christmas, made for a lot of excitement, and in turn, excited rambling.
With all their cookies cut, chocolate crinkle cookies came out of the oven, and the sugar cookies went in. The cleanup wasn't so hard, sharing the burden with Isaac, and then before long, Maddie was no longer able to hold off. "Okay, we have to try these cookies. I want to see what you think?"
Madeleine grabbed one of the chocolate crinkle cookies and then came to stand just before him. "Now, be completely honest with me on if this tastes good." She instructed before holding the cookie up to his lips. As he leaned in to take a bite, Madeleine could feel the heat rise in her face, and she knew that it was likely a sign that she was blushing. "So? What do you think?" She asked with a hopeful smile, and when she got a smile and nod in return while he was still chewing she bounced with excitement and, still holding the cookie she'd had Isaac take a bite from in one hand, she grabbed one cookie for herself and took a bite, her eyes immediately closing as she hummed contentedly. She flashed him a bright smile as she took another bite of her own cookie while also holding his back up for him.
It wasn't long before the sugar cookies were ready to be decorated, Madeleine nudged Isaac with her shoulder before she reached across him to grab some green sprinkles as she began to hum a Christmas tune. Isaac, on the other hand, seemed to have gone for icing, and she couldn't help but think that this was a dangerous situation to find herself in, but she went ahead with decorating using sprinkles and then froze when she noticed that he had paused with the icing.
Her eyes lifted to his for a moment, just in time to see him reach out and swipe her cheek with icing despite her attempt to dodge it. Madeleine was laughing as she jumped around him to grab one of the other icing colors before managing to get a tiny spot on his nose, not without another mark across her own face. She tried to get him again, and in her final attempt, her finger passed over his lips, and he caught her wrist, to which she froze as she met his gaze.
"You're taller and you have longer arms, there was never any hope of me getting you back." She commented, but her voice was soft as she realized that she was being pulled in towards his body. Before she could think twice about it, Madeleine reached up, her fingers curling around the back of his neck and slipping into his hair at the nape of his neck as she pulled him down gently, "You've got icing, just here..." She muttered softly before her lips met his.

Cooking With Christie: Lemon Snowflake Cookies
Recipe: The usual suspects - Flour, eggs, baking soda, salt, super fine sugar, European style butter (higher butter fat content and better flavor), juice of 2 Meyer lemons, zest of two lemons and lemon extract & a dash of vanilla extract. Powder sugar to roll dough in at the end.
Room temp butter (not melted) creamed with sugar, then add eggs - beat until really light yellow. Then slowly add in the lemons and finally the rest of the dry ingredients.
The key to the success of making this cookie is refrigerating the dough overnight - it is super, super sticky otherwise and you end up loosing a lot of dough when you roll it into small balls and thru the powdered sugar!
The other key here after you put the dough on the parchment paper lined baking sheets - put them in the refrigerator to chill while you’ve got a pan in the oven (so 12 - 15 minutes). It will keep the cookie from becoming to thin while baking!
Christie: I think Mr. Satterthwaite would enjoy these cookies as they are sweet & tart - cookie & brownie like all at the same time!

If you’ve never visited Walt Disney World during the holiday season, let’s just say it’s…a feast for all the senses. Jolly Christmas tunes follow you everywhere you go. Elaborate gingerbread houses—yes, made with real gingerbread—are erected throughout the parks and resorts (the one at Disney’s Grand Floridian truly can’t be missed), perfuming the air with warm spices. Signature rides and landmarks, like Cinderella’s Castle at Magic Kingdom and the Tower of Terror at Hollywood Studios, get full makeovers with holiday decorations and overlays.
And of course, no feast is complete without food. Disney has continued its never-ending race to outdo itself in the culinary realm, creating new themed treats for special occasions, holidays and movie releases year round—but the Christmas season really shines above the rest.
This year, there are a sleigh-load of new foods that are exclusive to the holidays, and some that are even more exclusive, only being offered during Mickey’s Very Merry Christmas Party, which is a special ticketed event that takes place during certain evenings at the Magic Kingdom for an additional fee.
After eating my way through all the treats at the Magic Kingdom, sacrificing my tooth enamel for the sake of journalism, I’ve come up with the top five treats that are worth your time and money should you find yourself in the park during the next few weeks and in need of a sugar rush.
RELATED: 55 Magical Mickey-Shaped Foods You Can Eat at Disney Parks
1. Santa Mickey Waffle Sundae
Sleepy Hollow Refreshments, $7.79
View this post on Instagram Breakfast was a Santa Mickey red velvet waffle with mint chip ice cream and peppermint powder. A pure delight. Please follow along on my story today as I make myself ill trying all the Disney holiday snacks for you. (Epcot International Festival of the Holidays preview! Very Merry Christmas Party! Everything!)

This was my first stop on this oh-so-sweet journey (waffles are technically a breakfast food, right?), and was absolutely one of the top eats of the day. The waffle is everything a waffle should be: crisp enough to make a light crackling sound when you cut into it, but soft in the center, like a slightly-fudgy red velvet cake. For red velvet, it was heavy on the chocolate and light on the food coloring—just a mild tint—which was also appreciated. With a dusting of peppermint powder and mint chip ice cream, it could have been easy to go overboard and taste like Colgate, but the minty flavor was restrained and provided just the perfect holiday accent.
2. Kakamora Float
Aloha Isle, $6.99 (exclusive to Mickey’s Very Merry Christmas Party)
View this post on Instagram I ate approximately 3.5 million desserts tonight but all you need to know right now is that the COCONUT DOLE WHIP is an absolute jam and I will dream of it for decades to come

A post shared by Shay Spence | Cruise & Amuse (@theshayspence) on Nov 22, 2019 at 6:49pm PST
//www.instagram.com/embed.js
It’s named after the pirate warriors in Moana, but let’s call this what it really is: Coconut Dole Whip! If you take away nothing else from this article, just know that if you’re at the Very Merry Christmas Party, you simply must eat this. Even as someone who is only mildly interested in coconut, the impossibly creamy soft serve sparked so much joy. It comes with pineapple juice and non-alcoholic blue curaçao below the ice cream, but honestly I’d rather just eat it straight up. Unfortunately, this is exclusive to the party, but perhaps we can create a demand to make this a year-round thing? Consider this my campaign announcement.
3. Orange Bird Christmas
Sunshine Tree Terrace, $5.99 (exclusive to Mickey’s Very Merry Christmas Party)
Die-hard Disney fans recognize this bird as the official mascot of Sunshine Tree Terrace in Adventureland, and now he takes edible form in the most delightful way. Once you crack through the orange shell, the spherical dessert is filled with orange-scented white chocolate mousse and orange curd. The whole thing rests atop a citrus-almond cake. It has a heavenly citrus scent and the center is very tangy—but when you eat everything together, the creaminess balances it out, creating a flavor reminiscent of an Orange Julius.
4. Christmas Cookie Sundae and Gingerbread Sundae
Auntie Gravity’s Galactic Goodies and Storybook Treats, respectively, $6.49 each
Okay, these two piled-up boats of soft serve were both so good, I couldn’t choose between them. I’m sorry! The Christmas Cookie Sundae is made with cookie butter ice cream, which is absolutely rich and delicious, while the gingerbread version delivers on its promise and packs a huge punch of warm flavors that are bolstered by real bits of gingerbread and ginger candy bits on top. I can’t pick a favorite—but if you like things a little spicy, try the gingerbread. Or both! You can always try both.
5. Jolly Tamales
Pecos Bill Tall Tale Inn & Café, $11.99 (exclusive to Mickey’s Very Merry Christmas Party)
Because we can not live on sugar and sprinkles alone, something savory was necessary to include—and this snack certainly fits the bill. That was a pun because they come from a restaurant called Pecos Bill. Not as fun when I explain it. Anyway, they’re good, particularly when completely smothered with all the fixings offered at the toppings bar. The dough-to-filling ratio was perfect, so they didn’t dry out like tamales so easily can when they have too much masa. Definitely a welcome break from all the sweets, even if the price is a little steep.
Other New and Noteworthy Treats
I’ve already listed my top five, but there are plenty more to choose from at the Magic Kingdom. If you have a serious sweet tooth, the Snowflake Brownie at Casey’s Corner comes with a rich layer of frosting that’s about an equal ratio to the brownie itself. Not being a frosting lover, it wasn’t totally my vibe—but hey, maybe it’s yours! The Holiday Mickey Cinnamon Roll from Main Street Bakery (a.k.a. Starbucks), on the other hand, was restrained in its sweetness. The flavor wasn’t quite powerful enough to stand up to some of the other, more exciting desserts in the park, but for an Instagram opportunity on Main Street, look no further.
Disney has a full list of all the exclusive treats at the Magic Kingdom this year on their blog, so don’t forget to peruse that before making your final decisions.
And if you’re in need of a nightcap after all the eating, head over to the Grand Floridian Resort & Spa—you can check out that massive gingerbread house, and also pop in to the new Beauty and the Beast-themed Enchanted Rose for a seasonal cranberry old fashioned.

Coconut Oil Is Key to These 18 Dessert Recipes
[Photographs: Vicky Wasik]
At a recent stop on my book tour, someone asked if I had any "pet" ingredients that the average baker may not have on hand. In the heat of the moment, all I could think of was malted milk powder, what I call the "umami bomb" of dessert. As handy as malted milk powder can be when it comes to layering a toasty/malty flavor into desserts, the secret workhorse of my kitchen is undoubtedly coconut oil.
Like any oil, it's a pure fat, but what sets coconut oil apart is that it's solid but creamy at room temperature (well, when "room temperature" falls between 70°F and 74°F). That means it behaves more like butter or shortening in baked goods, creaming up light and fluffy when beaten with sugar.
Coconut oil melts quickly on the tongue due to a melting point well below body temperature, so it doesn't feel greasy like shortening or cold butter. Refined coconut oils like LouAna or Nutiva are absolutely neutral, with no taste or aroma whatsoever, while virgin coconut oil can have flavor that ranges from mild to intense depending on the brand (Coco Vita is my favorite when it comes to coconuttiness).
These properties allow coconut oil to wear a number of hats in the kitchen, functioning like shortening in snickerdoodles, like fry oil with doughnuts, like butter in scones, like liquid oil in banana bread. While this is by no means a complete list of desserts where coconut oil comes in handy, these recipes go a long way in demonstrating the scope of its utility.
Oil's a common ingredient in quick breads, but switching from liquid oils such as canola to solid coconut oil gives my banana bread a lingering richness that's hard to beat. To use coconut oil as a replacement for liquid oil in other quick breads, all you have to do is melt it down. As the coconut oil cools, you may notice the batter is thicker than usual, but this won't cause any ill effects (in fact, it will encourage the quick bread to crown in the oven, a rather beautiful touch).

Because refined coconut oil is odorless, flavorless, and solid at room temperature, with a shelf-life of more than a year, it's the perfect foundation for homemade brownie mix. Keep a jar on the shelf, and when you're ready to bake simply add eggs, water, and vanilla. The results are as chewy as any store bought brownie, and just as glossy, but with the deep, complex flavor of top notch Dutch cocoa and dark chocolate.

Thanks to its neutral flavor, refined coconut oil makes a fantastic replacement for butter in recipes, as in this recipe for lemon blueberry scones. By taming down the toasty, brown butter flavor scones usually develop as they bake, coconut oil puts the spotlight on the the bright flavor of fresh fruit while producing a scone that's even more rich and tender.
Coconut oil has a slightly lower melting point than butter, so when using it as a replacement in your favorite recipes, it may help to refrigerate the dough after shaping it into a wheel. Once it firms up, slice and bake as directed.

As in fresh fruit scones, coconut oil limits browning in rolled sugar cookies. Not only does this keep the cookies pale—snowflakes stay snowy white—but coconut oil enriches the cookies and extends their shelf life beyond those made from butter alone.
Of course, sugar cookies should taste like butter, so I use a roughly 50/50 blend for the best of both worlds. Trading a bit of butter for coconut oil is a great way to help your favorite cookies last a little longer, which is especially useful for shipping holiday care packages.

Refined coconut oil is an essential ingredient in these homemade Wheat Thins, where its neutral flavor lets the taste of whole grains and barley malt really shine—these distinctive little crackers brown too deeply when made with butter, giving them a dark and nutty sort of character.

If you never make doughnuts because you're turned off by that notorious fried food smell, frying with refined coconut oil's gonna rock your world. Compared to most liquid fry oils, refined coconut oil contains fewer volatile organic compounds, giving it a cleaner aroma and flavor. When I fried up these DIY Donettes in our tiny office last year, no one even realized I was in the kitchen.
Aside from giving you the ability to stealth-fry at home, refined coconut oil returns to its solid state at room temperature, which gives fried foods a lighter, crisper texture once they cool, so fried foods taste less greasy, whether you're making fish and chips or cannoli. While the same could be said of any solid fat, alternatives like lard and palm oil can be difficult to source in bulk for many folks, whereas refined coconut oil can be purchased by the gallon from warehouse clubs like Costco and Sam's, or online (by the gallon, Nutiva coconut oil is just 14 cents per ounce).

Due to its size and density, pound cake takes ages to bake, so adding a bit of refined coconut oil can help keep it from drying out after a long stint in the oven; better yet, the added fat from coconut oil improves the shelf life of the finished product as well. Coconut oil's a key player in my own sour cream pound cake, but it's a trick you can make use of in your own favorite recipes. Next time you make a pound cake, try replacing 25% of the butter with coconut oil for an extra dose of richness.

Copycat recipes are a great place to make use of refined coconut oil, where its richness and neutral flavor help baked goods better mimic their store bought counterparts. Beyond that, refined coconut oil is a great tool for developing vegan variations of your favorite commercial snacks, such as chocolate digestive biscuits. Even my Homemade Oreos can be veganized on the fly with an equal weight of coconut oil in place of butter.

I love refined coconut oil for its neutrality for the most part, but the flavor and aroma of virgin coconut oil can be used to strategic effect. My coconut layer cake and creamy coconut frosting are based on my vanilla butter cake and Swiss buttercream, with virgin coconut oil standing in for a portion of the butter (among other tweaks). Aside from lending its signature flavor, coconut oil improves the shelf life of the frosted cake with its added richness.

As in my lemon blueberry scones, coconut oil's neutral flavor keeps the lemon flavor of my ginger lemon creme filling bright and fresh. Since coconut oil is solid at room temperature and free from water, it also keeps the powdered sugar filling thick and sturdy so it doesn't go squishing out with every bite. If you'd like to take advantage of that fact with your own favorite sandwich cookies, try using refined coconut oil instead of butter in the filling (or virgin coconut oil if you'd like to add a hint of flavor).

Since refined coconut oil melts at a relatively low temperature, about 75°F, it's the perfect foundation for making creamy, spreadable speculoos cookie butter at home. Blended with a thick paste made from dissolved cookie crumbs, it makes a fun alternative to peanut butter in no-bake applications.

Refined coconut oil is the key to our shelf-stable pancake mix, which can sit on the shelf for months on end. Because the oil is added up front, the mix itself couldn't be easier; when you're ready for breakfast, the batter is ready to go as soon as you stir in a splash of milk and an egg.

In this recipe, coconut oil stands in for 50% of the butter in what amounts to a basic sugar cookie dough. That cuts back on the toasty brown butter notes that cookies develop as they bake, giving the finished product a clean vanilla flavor that contrasts beautifully with the bold, bitter flavor of crumbled Oreos (whether store bought or homemade) for a cookies and cream-themed cookie.

Like butter, coconut oil can be creamed with sugar until fluffy and light, so it's my go-to choice for vegan-izing chocolate chip cookies. To make up for refined coconut oil's lack of flavor, I spike the dough with dry malt extract to evoke the same nutty, toasted notes that butter develops as it browns in a traditional dough. So while these chocolate chip cookies may be vegan, they sure don't taste like it.

On its own, pure chocolate seems waxy when frozen because eating ice cream or gelato will chill our tongues down, making it difficult for the chocolate to warm and melt. As a result, long after the ice cream has melted away, the chocolate itself will linger in our mouths as a cold, unmelting lump. These problems disappear with a spoonful of refined coconut oil, a flavorless, odorless addition that lowers the chocolate's melting point, for stracciatella gelato with crisp and snappy chips that melt-in-your-mouth.

As with the chocolate shards in stracciatella, refined coconut oil gives the outer shell of homemade Klondike Bars a satisfying snap. To keep that coating whisper thin and delicate, the ratio of coconut oil is bumped all the way to 50% of the chocolate by weight. That proportion creates a chocolate coating that's runny and thin while warm, making the ice cream bars easy to dip, and beautifully glossy once set.

To help the freeze-dried strawberry and crispy rice coating stick, these berries 'n cream ice cream bars are dipped in white chocolate cut with refined coconut oil. As with our homemade Klondike bars, coconut oil serves to keep the white chocolate shell snappy and thin, so as not to detract from the crispy, colorful, and fruity outer layer of an old-fashioned strawberry shortcake bar.

A little coconut oil helps enrich our banana granola while keeping it crisp and dry. Use refined coconut oil for a neutral flavor, or let the flavor and aroma of virgin coconut oil elevate banana's tropical vibe.
