Finnish Youtube has been running these coffee commercials that like. Tell about Finnish coffee culture, one of the aspects is being hospitable, and hospitability shows through how much coffee and coffee bread (= an umbrella term for cookies, cakes, pulla, basically anything that you eat with the coffee) you provide to your guests. Idk I just thought that was interesting in the light of Swedengate.

i have serious doubts about the "swedes don't feed their guests" thing, and a big part of that is that the same map showed finland as a place where guests don't get food, and that is most certainly wrong.
my parents always offer pulla or cookies to anyone who visits us. my grandmother, who is from the east, makes us pie and cinnamon rolls every time we visit. the wife of my grandpa (other side of the family), who is from the west, likes to make a full course meal and then apologize for "not having more/better food". i visited one of my teachers once – she's from the north – and she brewed me tea even though we both know i don't even like it.
i don't remember ever visiting someone and not being offered at least coffee. coffee is almost always offered (i don't like coffee and it gets awkward haha). i suspect the same goes for sweden, considering they have their whole own verb for drinking coffee (fika) and that the various teachers and schoolbooks i've had for the language have considered it an important word to learn.

FINLAND WHERE:  2019 Finnish Christmas Bazaar (River Road Unitarian Universalist Church in Bethesda, Maryland) This past weekend I went to the Finnish Christmas Bazaar at River Road Unitarian Universalist Church in Bethesda, Maryland. I was kind of amazed at the size of it. I was expecting a small little church gathering, but I saw people coming from as far away as New York for the festival and the place was just jam packed with people. There was a lot of shopping of Finnish imports, a silent raffle where some of the items being bid on were vacations to Finland, live music, arts and crafts, ect. And then there was the reason I was there: THE FOOD! :D The menu was split between sweet and salty food. Traditionally, they really only had salt as a spice so most of their cuisine is pretty salty. My main course was the herring sandwich with egg. Over in Finland, I hear they typically use surströmming (or fermented herring), but that's quite an acquired taste, so this herring was the more basic kind. I think it was raw though. It tasted a lot like sushi and egg on toast. Next I tried the karelian pastry which was also on the salty menu. I thought it was supposed to be a dessert pastry-- which is entirely not what it was. It's made of rye flour and filled with potatoes and rice, and tastes almost like a Polish perogi. It's also one of the National Dishes of Finland. Then it was onto dessert! I got the ginger snaps (which were basically just ginger snap cookies that most people know of already, but in Finland they are crisper and thinner and cut into shapes-- like tasty little thin crackers). I also got the pulla bread which is a bread made with cardamom.   I also got some glögi, which was warm, spiced mulled wine that reminded me of the apple cider I make during the winter at home, just a little more spicy. It was like a warm, alcoholic hug. I imagine I could get so drunk on that in the snow under the Northern Lights if I ever got the chance to visit Finland. At the end of the event, I had a great conversation with this guy who was trying to get me to sign up for Finnish language lessons. I told him I was no good with languages, but he tried to convince me by telling me that it wasn't that hard since every letter only has one sound, so it's very phonetic and pretty easy. I am still not convinced, but eh, you never know, maybe I'll find my way to Finland some day and need those Finnish lessons!

Mikä on lempiruokasi jouluna?
Jouluna syömme kalaa, enimmäkseen lohta. Tykkään myös kakuista, mitä joita äiti leipoo, lempini suosikkini ovat kastanjaatäytteisiäet keksejäit. Unkarissa meillä on eri makuisia joulukarkkeja erilaisilla mauilla, mitä joita laitamme myös joulukuutseen. Tykkään myös piparkakuista, ja tänä jouluna yritän leipoa suomalaista pullaa.
We eat fish at Christmas, mostly salmon. I also like the cakes my mum bakes, my favourite is chestnut-filled cookies. In Hungary we have Christmas candies in various flavours, which we also put on the Christmas tree. I also like gingerbread cookies, and this Christmas I’ll try to make Finnish “pulla”.

A Recipe For Success
I love to bake. Breads, cookies, dessert bars, pies and this time of year I start to think ahead to my holiday baking.  I usually try to bake something new but there are few recipes that have become holiday standards for me to give to friends and family. One of these favored gift recipes is a Finnish sweet yeast bread called Pulla.  
Pulla is a very versatile bread that can be shaped into many different forms. I usually braid it into loaves or sometimes I will roll it into small individual pieces. It can be formed into different shapes, rings, loaves, knots.... It can also be used to make cinnamon rolls, sticky buns or monkey bread.  You can spread or dip the dough into butter, maple syrup, honey.  You can add cinnamon sugar, brown sugar, crushed nuts, coconut, cocoa powder, chocolate chips.  
As you can see the dough can be used/shaped to create a myriad of delicious delectable treats yet they are all Pulla.  It is like our training.  The kata models give us a principle that if you train and understand it scientifically then there are limitless ways to use the principle to recreate the katas out come.
Kata models are like recipes. Shinobi science is how you bake.

i reorganized the kitchen, and now all the baking stuff is in a better spot (although most of it is taking up counter space now but that’s okay) and since i am on vacation next week im gonna do some baking again... finally. i need to try some cutout cookies i can decorate, a chocolate torte, and maybe pulla if i can find vanilla sugar anywhere. 
they hired a new girl at work finally. they also hired someone else to close... but i saw she was crossed off the schedule... i dont know what that’s about. anyway the new girl asked me if im married and then asked me if i have a wife or a husband. what a world.
