Although I eat as plant-based as possible, today *wasn’t* that day. I ran 13.1 miles really terribly, and needed to celebrate my #suckitude. Denise Sauriol the marathon whisperer says to embrace the suck. I’m doing that. Plus I have meat in the freezer I intend to use up and not throw away, so there’s that. It was so cold this morning, I only got a slow and miserable 5K in. Lunch needed to be a light soup. Instant Pot to the rescue (as usual!). Tossed in red lentils, barley, onions, garlic, carrot, celery, greens, fire roasted diced tomatoes, vegetable broth, balsamic vinegar, and curry powder. 20 minutes high pressure, 10 minutes natural release, then QR. Topped it off with some leftover spicy peri-peri sauce from last night’s dinner. Tamago Gohan for breakfast! About 10 years ago, a former coworker (who had taught English in Japan) showed me how to make this simple Japanese breakfast. It freaked me out at first, but it’s one of my favorite comfort foods now. It’s so simple - a steaming hot heaping cup of rice (sushi rice if you’ve got it - I didn’t today. This is brown rice we had leftover in the fridge). Crack egg over it, and stir quickly to combine - the hot rice will cook the egg. Some drips of tamari and toasted sesame seeds. I also like mine with crumbled nori on top. Breakfast is better late than never! All my burners were covered with yarn pans until now. Tried @gobbleinc @gobblegrams this week for the first time with a voucher from @groupon . Not bad. This was the brown sugar crusted salmon. Problem was, they forgot the brown sugar spice mix. 😱😱😱 I made my own and hoped for the best! I think I did a good job of figuring it out. Brown sugar, some chili lime spice from @traderjoes , and hot Hungarian paprika. Had to toss a couple weird parts of the cucumber as it had frozen in the box, and a couple tomatoes for the same reason. Other than that, fish was firm and fresh, and everything wasn’t overly salty. Had to make this today or the avocado would have been ruined. It’s #TacoTuesday in the Nelson household! Far be it for me to be normal. I wanted something vegetarian, but no meat substitutes, and it had to be decadent but also healthy enough. Tall order. Enter BBQ Broccoli Tempura Tacos with Garlic-Lime Tahini Sauce. Yassssss. I battered and Panko breaded broccoli and baked it, and whipped some tahini with lime juice, smoked paprika, salt, garlic powder, and water. I reduced some BBQ sauce with more garlic and lime, and brushed it onto the broccoli when it was done. Corn tortillas. Cilantro. These flavors shouldn’t work together, but they do! No heavy sides - the tacos do all the work .
