Strawberry Cobbler
It’s strawberry season! Hooray! And it’s a particularly good one guys. Just look at these gorgeous berries we couldn’t get enough of at a recent berry-picking excursion! So you know what that means?!! Its time to make all things strawberry and we’re starting with this easy and wonderful Strawberry Cobbler. Just in time for the weekend!!
Cobblers are so wonderfully satisfying and homey—I mean how can you go wrong with a layer of slightly sweetened fruit topped with golden, fluffy biscuits?!!
They make your house smell heavenly! And they’re quick and can serve a crowd!
You start by tossing the berries with a little sugar, cornstarch, salt and lemon juice.
Then it’s time to make the biscuit topping. Once the flour mixture is whisked together, you simply cut in the butter and then stir in the heavy cream till a sticky wet dough forms. Next, you dollop little blobs of the dough all across the berry mixture.
Brush those blobs with a bit more heavy cream to help them bake up golden brown—
And sprinkle on some crunchy Demerara sugar.
All that’s left to do is pop the whole thing in the oven…and wait!
But that agony of waiting will be so, so worth it when you pull this baby out of the oven and see the bubbly berry filling topped with flaky golden biscuits!
And it’ll be even more so when you taste it!
It’s amazing on its own and heavenly topped with a scoop of vanilla that will instantly start to melt in the most perfect way!

Strawberry Cobbler
Makes 8-10 servings
Prep Time: 20 minutes; Bake Time: About 1 hour
Ingredients
For the filling
2 pounds of strawberries, hulled and cut in half or quarters if very large
1 cup sugar
Generous ⅓ cup cornstarch
1 teaspoon kosher salt
2 tablespoons fresh lemon juice
For the topping
1 ¾ cups unbleached, all-purpose flour
¼ cup sugar
1 ¾ teaspoons baking powder
¾ teaspoon kosher salt
6 tablespoons unsalted butter, cubed and chilled
1 cup heavy cream, plus a little extra for brushing on biscuits
Demerara sugar
The Recipe
To make the filling: Preheat oven to 375 F.
In a 9x13” baking pan, toss the berries with the sugar, cornstarch, salt and lemon juice and set aside.
To make the topping: place the flour, sugar, baking powder and salt into a medium bowl and whisk together. Add the cubed butter and use a pastry blender or your fingers to cut the butter into the mixture until it’s the size of small peas. Make a well in the middle and pour in the heavy cream. Use a fork to stir the mixture just until a sticky dough forms and no floury mix can be seen. You don’t want to over mix.
Scoop out large spoonfuls of the batter and scatter them all across the top of the berry mixture. I got about a dozen dollops. Brush the dough blobs with a little heavy cream and sprinkle with the Demerara sugar.
Place the dish on a larger rimmed baking sheet (to catch any drips) and place in the oven. Bake for about 1 hour, turning the whole thing back to front at the halfway point, until the filling is bubbling and the biscuits are golden brown.
Let cool a few minutes and serve as is or topped with vanilla ice cream or whipped cream.
You could definitely make this earlier in the day and reheat before serving.

One of our Christmas morning traditions is to prepare a big brunch. We open presents really late – tortuous for the kids, but it teaches they a little self-control. Another tradition is to have each of the kids choose a Bible verse and read it aloud to everyone. After we take some family pictures, everyone rips into their presents. We’ve been doing this since our kids were young, and even now that they’re much older, my boys and their cousins still squeeze onto the same sofa in our living room and read their Bible versus. Some Ideas for Mother's Day 2019
Hiya! How’s your weekend going so far? Kind of hard to believe that it’s been a year since last Mother’s day but the calendar says it’s coming up next Sunday, so who am I to argue?!!
Now, I’ve found that the celebrating of moms falls into 2 pretty district camps:  Brunch and Dinner. We are definitely of the brunch sort, the at home kind—I know some people go out but we’re just too many to do it pleasantly and besides we’re too picky, so brunch at home it is (though we have been known to throw the occasional dinner bbq).
After years and years of either hosting or going to my mom’s or to one of my sisters' houses, I’ve come up with a few guidelines that are mostly for me, but I thought might help you too. Take or leave ‘em, except for the dessert clause, because duh!!!
*First off and most important:  No pancakes or waffles or other last minute goodies if you are serving more than 6 people or if you’ve got small kids—not even if others (such as husbands or partners) offer to “help”—it’s’ just too much stress no matter what and you want happiness and warm, fuzzy feelings, not some crazy lady who’s ready to tear out her hair as well as everyone else’s!!  Save those for lazy Sunday mornings.
*Which brings us to those lifesaver dishes that you can make ahead and generally make in one pan or vessel. Get to know them. Stuff like quiches, bread puddings, frittatas, overnight French toast, etc, They are your friends! (I’ve indicated them in the lists below. I would also include any quick breads or muffins you can either bake the day before or at least make the batter the day before and then just bake up the morning of. Also don’t forget about what a treat homemade granola with yogurt can be—easy and totally make ahead.)
*Don’t make the mistake I always do which is to feel like I have to hit all the bases and make everyone’s favorites.. This is brunch, not an all day food-fest. Pick a couple of dishes and stick with them. Like you can make a bread pudding or a quiche and serve bagels too but you don’t need to bake muffins and bread too. I always go overboard.
*That said, this is a celebration, so even though it’s brunch, I highly recommend some sort of dessert. As a mom, I can tell you that no get-together for kids is ever really complete without something sweet and since the day is about moms that presumes the existence of kids and well...you get the picture.

So it's the start of for what most of us is a busy holiday weekend and I'm sure that by now if you're hosting or bringing something to someone's house you've got your menu all nailed down and the last thing you need right now is another new Passover or Easter dish to tempt you to deviate from your plan (if you don't know what the heck you're making yet or are feeling overwhelmed, take a deep breath and try not to panic--shoot me an email and we can last minute menu plan together)  But as I was scrolling through my Recipe Index searching for the recipes I needed for the Seder I'm hosting, I realized that there are a whole lot of really terrific Springy recipes that I've sort of forgotten about. And if I'm forgetting about them and I'm the one that cooked them, generally multiple times, photographed, wrote and posted about them, how can I expect you to remember them?!! And that isn't even taking into account those of you who are new to the site. So instead of a Famous Fridays, I thought I'd send you off into the weekend with a bunch of lighter, tried and true recipes for the new season, because it's actually been a week around here without any snow!!! One of our Christmas morning traditions is to prepare a big brunch. We open presents really late – tortuous for the kids, but it teaches they a little self-control. Another tradition is to have each of the kids choose a Bible verse and read it aloud to everyone. After we take some family pictures, everyone rips into their presents. We’ve been doing this since our kids were young, and even now that they’re much older, my boys and their cousins still squeeze onto the same sofa in our living room and read their Bible versus. It’s so cute. I know this won’t last much longer, so I savor every moment.
Hearty brunches are perfect for entertaining family over the holidays. Everyone gets to sleep in a little more and the host and hostess can get away with making one meal instead of two.
