In all seriousness, though, I think the both of them didn't know each other until they met; and when they locked eyes, they learned everything about each other. To make sure they both keep quiet about their secret, they've become pals over the years, me thinks; but they only talk or do anything together in private. They've found it to be kinda fun using their eldrich abilities to do things in secret.

All of the dragon cookies being called by they/them, or whatever other pronoun they'd prefer, makes sense! They're all likely fully hermaphroditic or intersex!
Here are some things about their respective fruits:
Pitaya plants contain male and female parts and are self-fertile/pollinating.
Pineapple plants contain male and female parts and are self-fertile/pollinating.
Lotus flowers have both male and female parts and are self-fertile/pollinating.
There are three distinct flower types for lychees, two male types and one female, which are all borne on the same panicle. The usual sequence of flower opening, which occurs over a 2 to 6 week period, is male flower, female hermaphrodite flowers which set fruit, and male hermaphrodite flowers that do not set fruit. The male flowers in the first and third stages release pollen to fertilise the female flowers. Thus, there needs to be an overlap of the male stages with the female stage. Most of the pollen used for fertilisation is usually supplied by the third stage male hermaphrodite flowers. (In short, the plant is a hermaphrodite, but in a multisex hivemind)
The flowers of Longans are small and yellowish white and can be staminate (male), pistillate (female), or bisexual. (They are like lychees in that they are hermaphrodites in a hivemind sense)
So, Pitaya being able to have babies sprout from the seeds in their hair makes sense! They're self pollinating and can create babies by themself; same thing with Ananas having theoretically made the pineapple rays from their scales.
Lychee and Longan being surrounded constantly by more creatures made of their same fruits makes sense, too! Their plants reproduce by themselves, but with branches that have flowers of different sexes.
Another fun fact about Lychees!!:
Rambutans are considered to be the sister fruits to Lychees and vice-versa, which I think is neat, considering Rambutan and Lychee's strange relationship they have with one another.
