Because it is so widely celebrated in the United States, many Americans mistakenly believe that Cinco de Mayo commemorates Mexico’s independence from Spain. In fact, the date marks the anniversary of the country’s unlikely victory at the Battle of Puebla in 1862, when outnumbered Mexican troops prevailed over a powerful invading French force. Fueled by some clever marketing by beer and tequila companies back in the 1980s, Cinco de Mayo exploded into a more popular holiday here in the U.S. than it is in Mexico. These days, Cinco de Mayo has evolved beyond its original significance to become a huge celebration of Mexican-American heritage, culture and cuisine. Tacos Perhaps nothing is more quintessentially Mexican-American than the small but mighty taco. The taco was first introduced to the United States in 1905 by Mexican migrants who came to this country to work in mines and on the railroads and brought their delicious working-class cuisine with them. Given their portability and affordability, tacos were mostly a street food at that time sold from Mexican food carts. These authentic tacos were originally soft, flat corn tortillas stuffed with fish or cooked organ meat lightly seasoned with spices. By the 1940s, the taco had become fully Americanized. Organ meat was replaced with ground beef or chicken and other fillings considered more acceptable to the American palate. Toppings such as shredded cheddar cheese, iceberg lettuce and tomato became standard, while the soft, foldable tortilla was replaced with a hard, pre-fried, u-shaped shell. Nowadays, tacos are a staple of American cuisine with Taco Tuesdays having become a popular household name and fast-food outlets like Taco Bell and Chipotle producing billions of tacos annually. When it comes to serving tacos on Cinco de Mayo, there's nothing quite like making them at home from scratch. Instead of sprinkling shredded lettuce on top, try adding a colorful vegetable slaw that will elevate your taco from boring to brilliant. Whether your taco is fish, bean or meat filled, preparing a crunchy slaw made with fresh farmers market ingredients will add plenty of modern flair, taste and visual appeal. Here are a couple of recipe ideas to get you started each with their own unique twist: Easy Taco Slaw The key to this Easy Taco Slaw recipe is salting the shredded cabbage which yields a crunchier slaw that will last longer when refrigerated: Ingredients (Serves 4-6) •  4 cups shredded red cabbage (from 1/2 small head) •  1/2 teaspoon kosher salt •  1 tablespoon freshly squeezed lime juice •  2 tablespoons mayonnaise •  2 medium scallions, thinly sliced •  1 small carrot, grated •  1/4 cup chopped fresh cilantro •  1 small jalapeño pepper, seeded and minced •  1 clove garlic, minced •  Freshly ground black pepper Directions 1. Place the shredded cabbage in a colander set over a bowl and sprinkle with salt. Massage and squeeze cabbage with your hands to help it release its liquid. Set aside to drain for 15 minutes. 2. Place mayonnaise and lime juice in a large bowl and whisk to combine. Transfer drained and squeezed cabbage into bowl of dressing. Add grated carrot, scallions, cilantro, jalapeño, garlic and toss to combine. Season with salt and pepper to taste. Shredded Cabbage & Radish Slaw For those who prefer a non-spicy slaw, this recipe is a delicious combo of tangy, sweet and savory: Ingredients (Serves 6) •  1/2 small head white cabbage, cored and thinly shredded (3 cups) •  3 large radishes, sliced into thin strips (1/2 cup) •  2 scallions, tops trimmed and thinly sliced (1/4 cup) •  1/2 cup red wine vinegar: Arlotta Food Studio •  1 1/2 tablespoons olive oil: Arlotta Food Studio •  2 tablespoons fresh cilantro leaves, chopped, plus 1 sprig for garnish •  1 teaspoon salt •  1 teaspoon sugar •  Black pepper Directions 1. Combine cabbage, radishes, scallions, vinegar, salt, and sugar in sealable plastic bag and mix well. Expel as much air as possible and seal bag. Allow vegetables to marinate for 30 minutes, and up to overnight. 2. Transfer vegetables from marinating liquid into colander to allow excess liquid to drain off then place into mixing bowl. 3. Add olive oil, cilantro, and black pepper and toss well.
