My favorite vegetarian recipe

I don’t know about you guys, but I love to prepare food that’s easy and can be saved and enjoyed over a period of time. This is my favorite vegetarian recipe. It’s great a great hearty vegetarian chili recipe that I hope you guys love just as much as I do! 
Ingrediants: 
3 Tbsp olive oil
1 large onion, peeled and diced
1 large carrot, peeled and diced
2 stalks celery, diced
1 large green pepper, diced
1 jalapeno, seeded and diced
4 clove garlic, minced
salt and pepper, to taste
2 Tbsp chili powder
1 tsp paprika
2 tsp cumin
2 tsp dried oregano
1 28-oz can tomatoes with juices
5 cup vegetable stock
1 28-oz can red kidney beans, drained and rinsed
1 cup frozen or fresh corn
splash maple syrup
Steps:
1. Heat oil in pot over medium heat. Add onions, carrots, celery, green pepper, jalapeno and garlic. Season with salt and pepper and cook until vegetables are soft.
2. Add dried spices and cook for two minutes stirring constantly.
3. Add canned tomatoes and stock. Bring to a boil and reduce heat to medium low and cook for 45 minutes, stirring occasionally.
4. Add kidney beans and corn, continue cooking for 15 minutes longer.
5. Take off heat, add maple syrup and adjust seasonings with salt and pepper.
6. To serve, ladle into bowls and garnish with fresh cilantro, cheddar cheese, sour cream, etc.

I know you guys are thinking that a vegetarian diet isn’t perfect, which is true, but there are simple solutions and explanations to the downfalls of vegetarianism. 
A common counterargument to vegetarianism is the fact that it could lead to a vitamin B-12 deficiency. A vitamin B-12 deficiency could lead to stroke, dementia, and poor bone health. Since vegetarians consume milk and eggs, this aids in preventing deficiency. Also, a simple vitamin supplement can solve this problem in the case of vegans and vegetarians alike. 
Another possibility is anemia, iron deficiency. Since meat provides a good source of iron and protein, its important for vegetarians to consume beans, nuts, seeds, and whole grains. These foods are more than adequate in supplying iron and protein. People seem to think that protein only comes from meat, but this is wrong. Vegetarian diets that are well balanced provide people with exceptional health on the inside and out.

Hey guys, so this the third of three posts focusing on the health benefits of vegetarianism. If you guys are unfamiliar with the typical diet and proportions of the diet, the food pyramid above can clear that up. There was a point in my life when I found out that I was pre-diabetic. I was consuming too much sugar and simple carbohydrates like bread, chips, and pasta. After I found this out, I did more research and found out that vegetarianism can help reduce the risk of diabetes. 
According to the International Diabetes Federation, 371 million people worldwide have diabetes, and 187 million of these people don’t even know that they have diabetes. These numbers opened my eyes to the severity of diabetes in our world. A 2009 study showed that since plants are high in fiber and low in glycemic index, incidence of diabetes are reduced by 40%. 2.6% more meat eaters have diabetes than vegetarians. 
In the progression of my vegetarian diet, I went back to the doctor for more blood work. The results came back and I found out that I was no longer pre-diabetic. I attribute a large part this accomplishment to my vegetarian diet. Just goes to show how vegetarianism can help regular people in their regular life!

Hey guys, I know most of the readers of this blog are young adults but that is no reason not to get educated about cardiovascular disease. It seems like having a heart attack would never happen but its actually more common than you think. cardiovascular disease is the number one leading cause of death each year worldwide. That’s why its great to consider a diet change in order to better protect from getting cardiovascular disease. 
Some types of heart disease that vegetarianism can help prevent are blood pressure, serum lipid profile, blood glucose, inflammation, and cholesterol. An EPIC-Oxford study in 2003 revealed that vegetarians had a 32% lower risk of being hospitalized or dying from heart disease. 
The reasons a vegetarian diet helps so much in preventing cardiovascular disease are the contents that typically make up the diet. A veggie diet consists highly of vegetables, fruits, grains, legumes, and nuts. These foods are made up of things that naturally aid the body in preventing heart disease. 
It’s incredible how a no-meat diet can positively affect someone’s health in the long run!

Hey guys, this is going to be one of three posts that relate to the health benefits of vegetarianism. When I was first starting out as vegetarian, I knew that there were health benefits related to the diet and that’s what attracted me to it, but I when I finally did in depth research pertaining to health benefits, it opened my eyes so much! I can’t wait to share some of that knowledge with everyone. 
So in this post I’m going to talk about obesity in relation to a vegetarian diet. Obesity is an epidemic that spans worldwide. Of the 7.6 billion worldwide, 1 billion of those people are overweight with 300 million of those people considered obese. A study published in 2015 by Paul Appleby and colleagues concluded that vegetarians have a body mass index 1-2 kg/m^2 less that of those of eat meat regularly. this is a huge amount of weight considering it’s only the weight loss from not eating meat, excluding exercise and other habits. In another study, findings showed that body mass index increased proportionately to consumption of meat. 
The topic of weight loss and vegetarianism hits home for me because before I became vegetarian, I was on a diet. I was seeing only slow progress. Later on I adopted a vegetarian diet and immediately saw a healthy amount of weight loss! I was way less stringent with what I was eating and not exercising as much as when i was on the diet, but I still saw progress in my weight. I attribute a good portion of my weight loss to not eating meat. I feel healthy and comfortable and with a vegetarian diet, you can too!

History of Vegetarianism

Hey guys, when considering becoming vegetarian or not it is important to consider where it originated and the history behind it. Being educated is the best way to make the decision that’s right for you!
Anthropologists believed that people who roamed the earth way before you and I really preferred a plant based diet, being more gatherers than hunters. Before the term vegetarian was even created, Pythagoras (a Greek mathematician) popularized the diet. These vegetarians at the time were called Pythagoreans. 
In the mid 1800′s, the British Vegetarian Society coined the term vegetarian. even though the word kind of sounds like vegetable, the Latin root word “vegetus” actually means whole, fresh and lively (which accurately represents every vegetarian I’ve ever met haha).

My name is Emily and I’m 18 years old. I have been vegetarian for about two and half years now. I am extremely passionate about the vegetarian diet and all it has to offer. I was one of those people who just jumped into being vegetarian without really knowing anything about it. I knew it was healthier and better for the environment but that was about the extent of my knowledge at the time. This purpose of this blog is to delve more into the world of vegetarianism.
