Decadent Biscuit Crumb Kadayıf Parfait with Coffee Cream and Cherry Sauce
Yields: 4-6 parfaits Prep Time: 30 minutes (plus chilling time) Cook Time: 20-25 minutes
Ingredients
Biscuit Crumb Layer
1 cup biscuit crumbs (digestives, graham crackers, or your favorite kind)
3 tablespoons melted butter
Coffee Pastry Cream
2 cups milk (whole or 2% for richness)
1/2 cup granulated sugar
4 large egg yolks
1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons unsalted butter
1 teaspoon vanilla extract
2 tablespoons strong brewed coffee (or 1 tablespoon instant espresso powder)
Kadayıf
4 oz package kadayıf (shredded phyllo)
1/4 cup melted butter
1 tablespoon granulated sugar
Cherry Sauce
1 cup pitted cherries (fresh or frozen)
1/4 cup sugar
2 tablespoons water
1 teaspoon lemon juice
Assembly
Vanilla Ice Cream
Instructions
1. Biscuit Crumbs
Preheat oven to 350°F (175°C).
Combine biscuit crumbs and melted butter. Press into the bottom of your parfait glasses or serving dishes.
2. Coffee Pastry Cream
In a saucepan, whisk together milk, sugar, egg yolks, cornstarch, and salt.
Heat over medium, whisking constantly, until thickened and bubbly (about 5-8 minutes).
Remove from heat, stir in butter, vanilla, and brewed coffee/espresso powder.
Pour over biscuit crumb layer in glasses. Chill until set (at least 2 hours).
3. Kadayıf
While pastry cream chills, toss kadayıf with melted butter and sugar.
Spread in a single layer on a baking sheet.
Bake until golden brown and crispy (15-20 minutes). Cool completely.
4. Cherry Sauce
Combine cherries, sugar, and water in a saucepan.
Bring to a simmer, mashing cherries slightly. Cook for 5 minutes, or until sauce thickens.
Stir in lemon juice. Let cool.
5. Assembly
Top chilled coffee pastry cream with crumbled kadayıf.
Add a scoop of vanilla ice cream.
Drizzle with the cherry sauce. Enjoy immediately!
Tips
Make it ahead: Prepare the components up to a day in advance. Assemble just before serving.
Substitutions: Swap biscuits for shortbread or other cookies. Use your favorite ice cream flavor.
Garnish: Add fresh cherries, a sprinkle of cocoa, or a mint sprig!

For easter, we're planning homemade high tea for lunch! A family member is vegan, so everything I made was vegan.
4 types of sandwiches (all on Italian sourdough made by the local bread maker in town):
Roasted eggplant, tomato, arugula, a drizzle of balsamic vinegar and extra virgin olive oil
Coronation chickpea (mostly-mashed chickpeas left with a few chunks, vegan mayo, curry powder, Sri Lankan mango chutney, a bit of cayenne, and a bit of salt)
Butter, cucumber, and the following spread loosely based on this : mashed peas food processed with chopped mint, olive oil, a bit of salt, white pepper and freshly ground black pepper, vegan parmesan, a spoonful of vegan mayo (just to make it a bit creamy but not overpower the flavor, since the original recipe calls for yogurt)
Samosa filling, tamarind chutney, and mint chutney (note: I highly recommend fresh chutneys instead of bottled if you can get them, especially the mint, the bottled ones tend to be extremely vinegary)
Rose, orange scones - based on this recipe (doubled) for the base scone recipe but modified the flavorings: replaced the vanilla extract with rose water (used 3tsp instead of 2tsp), replaced the lemon zest with orange zest from 1 large orange, and cut out the blueberries. Ended up being really sticky so I had to add more flour to get the right consistency. But the result was wonderful!
Mini fruit tarts - premade mini phyllo dough cups (bought frozen from Wegmans and baked for 5 min), ginger coconut custard from this recipe, and blueberries, raspberries, garnished with a mint leaf

If anyone knows me well enough, they know that I switch things up often with food and drink orders, BUT... recently I've been doing a double chicken bowl with white rice, pinto beans, fajita vegetables, fresh tomato salsa, cheese, and guac.

Delicious.
28.  Last meal on earth?
This is assuming I get a choice, right? 😅 Um... probably something comforting and indulgent. Medium-rare filet mignon, side of grilled shrimp on a bed of rice pilaf, side of mashed potatoes and gravy. Lemonade to drink. Warm peach cobbler with vanilla ice cream for dessert and finishing off with a whiskey sour.
(This is a death row-level last meal, I know.)

THINGS YOUR MOTHER SHOULD HAVE TOLD YOU
 1. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.
2. Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold!
3. Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.
4. Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.
5. To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up.
6. For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set for a wonderful minty frosting.
7. Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic
8. Leftover snickers bars from Halloween make a delicious dessert. Simply chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream. Yummm!
9. Reheat Pizza Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works.
10. Easy Deviled Eggs Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.
11. Expanding Frosting When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving. 
12. Reheating refrigerated bread To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.
13. Newspaper weeds away  Start putting in your plants, work the nutrients in your soil. Wet newspapers, put layers around the plants overlapping as you go. Cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will not get through wet newspapers. 
14. Broken Glass  Use a wet cotton ball or Q-tip to pick up the small shards of glass you can't see easily. (NOTE - That’s what Wonder Bread is great for!)
15. No More Mosquitoes Place a dryer sheet in your pocket. It will keep the mosquitoes away. 
16. Squirrel Away!
To keep squirrels from eating your plants, sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it.
17. Flexible vacuum To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings. 
18. Reducing Static Cling Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Same thing works with slacks that cling when wearing panty hose. Place pin in seam of slacks and ... guess what! ... static is gone.
19. Measuring Cups Before you pour sticky substances into a measuring cup, fill with hot water. Dump out the hot water, but don't dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out. (Or spray the measuring cup or spoon with Pam before using) 
20. Foggy Windshield? Hate foggy windshields? Buy a chalkboard eraser and keep it in the glove box of your car When the windows fog, rub with the eraser! Works better than a cloth!
21. Re-opening envelopesIf you seal an envelope and then realize you forgot to include something inside, just place your sealed envelope in the freezer for an hour or two. Viola! It unseals easily.
22. Conditioner Use your hair conditioner to shave your legs. It's cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair.
23. Goodbye Fruit Flies  To get rid of pesky fruit flies, take a small glass, fill it 1/2' with Apple Cider Vinegar and 2 drops of dish washing liquid; mix well. You will find those flies drawn to the cup and gone forever! 
24. Get Rid of Ants  Put small piles of cornmeal where you see ants. They eat it, take it 'home,' can't digest it so it kills them. It may take a week or so, especially if it rains, but it works and you don't have the worry about pets or small children being harmed!
25. Dryer Filter Even if you are very diligent about cleaning the lint filter in your dryer it still may be causing you a problem. If you use dryer sheets a waxy build up could be accumulating on the filter causing your dryer to over heat. The solution to this is to clean your filter with with a toothbrush and hot soapy water every 6 months.☆

5. Natalya: Russian Roulette Raspberry, a bold and zesty raspberry sorbet, complete with chocolate chunks and decorative edible flowers.
6. Silhouette: Secret Surprise, a dark chocolate flavor with hints of blackberry, undercut with a sharp bitter hint of salt and lime.
7. Majestic: Brain Freeze Brownie, a decadent chocolate ice cream with chunks of fudgy brownies, reminiscent of a brain freeze from slurping down an icy probe.

Thoughts and desserts
1.0 Baked Alaska: Its got a mish mash of flavors coming at you, got the pistachio, cherry, and vanilla ice cream on top of the pound cake and thats not to mention meringue that smells of champagne that they just lit the damn thing on fire briefly for. And while its not everyone’s cup of tea it certain was an experience.

A Realm Reborn, a platter of small chocolate cakes: Its a basic dessert, its just trying to find something different than the on fire baked alaska. Its narratives are small and contained but after a while you are still eating small chocolate cake after small chocolate cake. It feels good but there’s this samey-ness that makes you wish it was something more. Some people are alright eating these mini chocolate cakes over and over and over and over and over again. But many others probably want either a single slice of a larger cake or just to skip dessert all together. But you tell them the chocolate cake is a necessary course to enjoy future desserts.

Heavensward, Ganache Chocolate Cake: Its more chocolate cake but its got a quality about it. Its made of richer ingredients, the slices are evenly distributed. It knows what it is, its more of yesterday’s dessert today. But its been refined to the best it can be. The ganache adding a bittersweet flavor to the narrative course. Many take a slice and are happy with what they’ve walked away with.

Stormblood, Mint Chocolate Chip Ice Cream: A divisive choice. You either love it or hate it. Relating the flavor profile to either a nice well rounded mint complimented by the bitter sweet chips or you think it tastes like tooth paste. Its not for everyone and many will want to pass on it. But its still good at what it does.

Shadowbringers, Chocolate Chip Cookies: Universally beloved. It brings together a simple and focused taste that has been experienced by damn near everyone at some point in their lives. It brings back the good memories, the bad memories, and the memories in between. You cannot go wrong with it but you understand if some people do not appreciate it. Its chocolate chip cookies, its the crowd pleaser and the simple choice and arguably the best one because unlike the chocolate cake platter? You’re always ready to grab another chocolate chip cookie and experience the taste all over again.

Endwalker, Caramel Apple Pie: A filling dessert. It is the crown at the end of a meal. The simple flaky crust somehow holding the buttery caramel and crisp apple flavor all inside. Some may say they’ll take either caramel or the apple for dessert as it may be doing too much at once. The caramel and apple providing a rich flavor that one cannot always appreciate with a second slice. But at the end of the day its meant to be eaten and then lay down after a long days work.  A comfort dessert. Knowing that it will be there to be warmed up for breakfast the following morning and reminisce over the memories of previous night.
